CABBAGE ROLL CASSEROLE
I use to make regular cabbage rolls until I found this recipe. Now, instead, I make this and it is as good as the regular cabbage rolls and alot easier.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
- In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

- In a skillet, saute onion in butter until tender; set aside. In a bowl, combine cottage cheese, egg and onion salt. In another bowl, combine potatoes, 2/3 cup cheddar cheese, salt and pepper. Place 3 noodles in a greased 13x9-in. baking dish. Top with cottage cheese mixture and 3 more noodles. Top with potato mixture, remaining noodles and sauteed onion. Top with remaining 1/3 cup cheese. Cover and bake at 350° until heated through, 25-30 minutes. Let stand 10 minutes before serving.

CRAZY GOOD CASSEROLE
This is a creamy, cheesy, yummy casserole that your whole family will enjoy! I always use more cheese than the recipe calls for, because I am a cheese lover.

Steps:
- Cook and crumble bacon.
- While bacon is cooking, cut chicken into bite sized chunks.
- Set cooked bacon aside for later use.
- In the same pan, cook chicken in bacon drippings.
- Add garlic powder and salt and pepper to taste.
- While chicken is cooking, prepare pasta according to directions.
- Spray a 9 x 13 pan with non-stick cooking spray.
- Preheat oven to 400°F.
- Drain pasta, return to pot.
- Add chicken, both cans of cream of chicken soup, 1 cup of Monterrey Jack cheese.
- Stir to mix well.
- Pour into prepared baking pan.
- Top with crumbled bacon and remaining Monterrey Jack cheese.
- Bake at 400°F for about 20 minutes, just until cheese is melted and beginning to brown on top.
CRAZY PIGGY CASSEROLE
This was adapted from the popular online Recipe of Crazy good Casserole that has Chicken and bacon. GREAT way to use up leftover Easter ham. I had several vacuum sealed sections of leftover ham in the freezer and decided I needed a tasty creamy casserole to make with it. I hope you too will enjoy this. I think the next time I make this I might try adding some broccoli or some sweet peas to it.

Steps:
- Cook pasta according to package directions, drain well once cooked. Meanwhile start the bacon while pasta is cooking.
- Line a cookie sheet with foil and spray with non stick spray. lay bacon on sheet and bake at 350 degrees for about 25-30 minutes until just done but not crispy. lay on paper towels to drain. leave oven on.
- in large bowl combine all the ingredients and mix well. put in Sprayed casserole dish. COVER Bake at 350 for 30- 45 minutes until heated through.

LAZY PEROGY CASSEROLE
A great recipe from the "Barnwell Cookbook." I make this often, and it can be made ahead, and then just put in the fridge until you are ready to cook it. I often make it the night before, and let it sit in the fridge. A real keeper, and Canadian Favourite!

Steps:
- Cook noodles as directed on package.
- Line the bottom of a 9x13-inch pan with the noodles.
- In medium sized bowl mix cottage cheese, egg and 1/2 tsp of onion salt together.
- Spread of noodles.
- cover with another layer of noodles.
- Now mix cheddar cheese with potato, salt, 1/2 tsp of onion salt and pepper.
- Spread this over noodles.
- Cover with yet another layer of noodles.
- Melt butter in frying pan and sauté onion slowly until clear and soft.
- Pour over noodles and cover.
- Bake 30 minutes in 350° oven.
- Let stand 10 minutes before cutting.
- Serve with sour cream and grated cheddar.
- Yummy.
LENTIL VEGETABLE SOUP
Goodness of lentils using leftover Easter ham. This is but a base for whatever vegetables or spices you would like to use. It is tasty good for the cold spring weather we are having.

- In large soup pot heat up oil; add onions, shallot, carrots and celery.Cook about 5 minutes; add garlic and mushrooms; cook 5 more minutes.
- Stir in tomato paste and cook 1 minute.

- Combine water, celery, carrots and cumin to pot and bring to a boil, add cubed/minced ham and boil until vegetables are tender.
- Pour in tomatoes (and juice) and drained and rinsed beans.

- Preheat the oven to 350 degrees. Spread the cabbage across the bottom of a 9x13 dish (two smaller pans will work as well). In a large skillet, over medium heat, cook the ground beef along with the onion.
