Spicy Rum Chicken Wings image

Food Network Star-winner Eddie Jackson knows how to gear up for a big football game whether he's on the field or off. He played in the NFL for four seasons (he's a former Patriots cornerback), and now he owns a food truck, so he has plenty of experience cooking in parking lots. His tailgate go-to: chicken wings made with rum, soy sauce and one of his favorite ingredients, habanero chile peppers.

Number Of Ingredients 11

3/4 cup dark rum
3 tablespoons fresh lime juice, plus wedges for serving
3 tablespoons soy sauce
3 tablespoons packed brown sugar
5 large cloves garlic, minced
3 scallions, finely chopped, plus more for topping
1 to 2 habanero chile peppers, seeded and minced
2 tablespoons minced fresh ginger
1 1/2 teaspoons ground allspice
Kosher salt and freshly ground pepper
12 jumbo chicken wings, split at the joints, tips removed

Steps:

  • Make the marinade: Combine the rum, lime juice, soy sauce, brown sugar, garlic, scallions, habaneros, ginger, allspice, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl.
  • Place the wings in a resealable plastic bag and add the marinade. Press the air out of the bag and seal tightly, then turn the bag over to completely coat the wings. Refrigerate at least 4 hours or overnight, turning the bag once or twice.
  • Drain the wings, reserving the marinade. Bring the marinade to a boil in a small saucepan over medium-high heat. Cook until reduced by about half, about 5 minutes.
  • Meanwhile, prepare a charcoal grill by placing coals on half of the grill. Light the charcoal and wait for the embers to become white. (Add your favorite wood or wood chips at this point.) Replace the grate and put the wings on the cooler side of the grill.
  • Cover with the lid and cook until the juices run clear, 30 to 45 minutes.
  • Remove the wings from the grill and toss with the reduced marinade. Place the wings on the grill over direct heat and cook, turning frequently, until the sauce has caramelized, 3 to 4 minutes. Top with chopped scallions and serve with lime wedges.

12 whole chicken wings
2 tablespoons garlic salt
2 tablespoons black pepper
2 tablespoons cayenne pepper
2 tablespoons fresh Greek oregano leaves
2 cups Blue Cheese Dressing, recipe follows
1/4 pound blue cheese
1 cup mayonnaise
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2/3 cup evaporated milk
1/4 teaspoon garlic salt
1/4 teaspoon celery seed

Steps:

  • Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. Place the wings in a large bowl and sprinkle with the garlic salt, pepper, cayenne, and oregano. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours.
  • Preheat a grill to medium-high.
  • Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Blue Cheese Dressing.
  • Blend all ingredients together in a food processor. Transfer to a bowl, cover, and refrigerate until ready to serve.

The wings may be oven baked instead of grilling, this also works well using small chicken drumsticks instead of the wings although cooking time will need to be increased --- adjust the cayenne pepper to suit heat level, and the recipe may be doubled, this is easy and *ver* good!

2 1/2 lbs chicken wings (separated at joints and tips discarded)
seasoning salt
1/2 cup butter
1 cup louisiana hot sauce (or use hot sauce of choice)
1/8-1/2 teaspoon cayenne pepper (adjust amount to suit taste)
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper

Steps:

  • Set grill to high heat.
  • Season the wings lightly with seasoned salt.
  • Cook the wings 8-10 minutes on each side (cooking time will take slightly longer for larger pieces).
  • Melt the butter in a saucepan and mix in hot sauce, cayenne pepper, garlic powder and black pepper.
  • Place the wings in a large plastic container with a lid.
  • Pour the sauce over the cooked wings and toss using hands fitted with rubber gloves or seal and shake the container to coat the wings with the sauce.
  • Delicious!

18 chicken wings
1 medium onion
2 garlic cloves
3 scallions
1/2 cup soy sauce
2 teaspoons whole allspice, crushed in a mortar
2 teaspoons crushed hot red pepper flakes, or to taste
1/4 teaspoon freshly grated nutmeg
1 tablespoon sesame oil
1 teaspoon brown sugar

Steps:

  • Separate the chicken wings at the joints. Reserve the wing tips for another use, like making stock. Place the remaining 36 pieces in a glass or ceramic bowl.
  • Chop the onion, garlic and scallions. Place in a blender or food processor with the remaining ingredients and process to make a thick sauce. Pour this sauce over the chicken wings, cover and allow to marinate in the refrigerator at least four hours or overnight.
  • Preheat a broiler. Drain the chicken wings and place them on a broiling pan. Pour any remaining marinade into a saucepan and bring it to a simmer.
  • Broil the chicken wings until they are well glazed and cooked through, about 20 minutes. Turn them once during broiling and baste them with the reheated marinade. Serve hot or warm.

1/2 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1/2 teaspoon chili powder
1/2 teaspoon red pepper flakes
4 -6 slices smoked bacon, cooked, drained and crumbled into bits
1 tablespoon ground flax seeds
1/3 cup mayonnaise
1 tablespoon olive oil
1 lb chicken wings

Steps:

  • Pre-heat oven to 350 degrees.
  • Grease a baking sheet with non-stick spray.
  • In a small bowl, mix spices with bacon bits, and set aside.
  • In a medium bowl, stir together mayonnaise and olive. Add chicken wings to the bowl and coat with mixture.
  • Place coated chicken wings into a plastic bag. Then, pour spices over them. Close bag and shake until well combined.
  • Remove wings from bag and place on baking sheet, skin side down.
  • Bake for 50 minutes, turning over wings after 25 minutes. After baking, turn wings over again and broil on low for 2 to 5 minutes.
