Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cauliflower florets, olive oil, hoisin sauce, Sriracha sauce, salt, and pepper in a large bowl; toss to combine. Spread out in a single layer on a baking sheet.
  • Bake in the preheated oven until cauliflower is soft and cooked through, about 30 minutes, turning once after 20 minutes.

I grew up with cauliflower boiled and served with buttered crumbs. Although I love melted butter, the two never melded for me, and cauliflower remained my least favorite vegetable until I discovered this recipe from Indian friends. I omitted the chile and prepared it for my brother who cannot tolerate any hot spice, and he raved about it. It's flavorful, and the microwave finish leaves the cauliflower slightly crisp, which we prefer.

2 teaspoons oil
½ teaspoon black mustard seeds
¼ cup chopped onion
1 clove garlic, minced
½ teaspoon slivered fresh ginger
½ teaspoon ground turmeric
½ teaspoon chile powder
salt to taste
2 cups cauliflower florets
½ teaspoon lemon juice

Steps:

  • Heat oil in a small skillet over medium-high heat; add mustard seeds and cover skillet. Cook until seeds stop popping, 2 to 3 minutes. Add onion to the skillet; cook and stir over low heat until translucent, about 10 minutes.
  • Mix garlic, ginger, turmeric, chile powder, and salt into onion mixture; cook and stir for 30 seconds. Add cauliflower; cook and stir for 1 minute. Transfer cauliflower to a microwave-safe bowl and cover bowl.
  • Cook cauliflower in microwave until tender, about 3 minutes. Drizzle lemon juice over cauliflower.

Boiled cauliflower was a staple in my house as a kid. If you've only ever had cauliflower cooked like that, then try it baked or fried - it'll blow your mind.

• 2 tsp salt
• ¼ tsp smoked paprika
• ¼ tsp curry powder
• ½ tsp chilli powder
• 1 litre canola oil, for frying
• 1 head cauliflower, cut into florets
• 2 tsp finely shredded curly parsley
• black pepper, to serve
• lemon wedges, to serve

Steps:

  • Combine the salt, paprika, curry powder and chilli powder and stir to combine. Heat the oil in a wok or large pan to about 180°C. Add half the cauliflower florets and fry until lightly browned, about 3 minutes. Drain and repeat for the remaining florets. While the cauliflower is still hot, sprinkle generously with the salt-and-spice mix, reserving any unused mix for a future batch. Scatter with parsley, grind over some black pepper and serve with lemon wedges. Try Adam Liaw's lamb and labne trenchers.

1 head cauliflower
3 tablespoons butter
1 teaspoon sugar
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper

1/4 teaspoon turmeric

Steps:

  • Gather ingredients.
  • Position a rack in the center of the oven and heat to 450 F. Trim and core the cauliflower, separating the florets into bite-sized pieces and chopping the core into small cubes or batons.
  • In a large pot over medium heat, melt the butter .
  • Remove the pot from the heat and mix in the sugar, salt, pepper, hot paprika, sweet paprika, cayenne (if using), turmeric, and cinnamon. Stir until the sugar dissolves completely.
  • Add the cut-up cauliflower into the pot. Toss to coat with the spicy butter as evenly as possible.
  • Lay the cauliflower pieces in a single layer on a roasting pan or baking sheet . Cook in the oven until browned, sizzling, and tender but with crispy bits forming on the edges, approximately 25 minutes. Stir at the halfway point to cook evenly. Serve with your favorite main dishes and enjoy.

2 tsp chilli flakes
2 tbsp cumin seed
2 tsp turmeric
1¼ kg (after trimming and removing leaves) cauliflower, broken into pieces
small bunch coriander, chopped

Steps:

  • Heat the oil in a big pan or wok with a lid, then add the ginger and spices. Swirl everything around for a few secs until the spices are aromatic. 1 cauliflower (stem removed)
2 chopped onions
2 chopped tomatoes
1/2 cup plain yogurt
3 tablespoons oil
4 cloves minced garlic
1 tablespoon crushed ginger
1 teaspoon crushed green chili
1/2 teaspoon turmeric powder
1 1/2 teaspoons coriander powder
1/2 teaspoon cumin powder
1 1/2 teaspoons salt
1/2 teaspoon paprika
1/2 teaspoon red chili powder
1 tablespoon crushed poppy seed
2 tablespoons crushed cashews
2 tablespoons chopped green coriander

Steps:

  • Soak cauliflower in about 4 cups salted water for ½ hour.
  • Drain and put several half cuts on the stem side of the cauliflower.
  • Steam it until tender.
  • (You may microwave at high, covered, for about 8 minutes.) Heat the oil in a wide skillet on medium to high heat.
  • Stir fry garlic and onions until translucent.
  • Add crushed ginger, green chilies, coriander, cumin, turmeric, and salt.
  • Stir until the onions are golden brown.
  • Add the remaining spices (except poppy seeds and cashews).
  • Keep on stirring.
  • Add tomatoes and ¼ cup water to cook them.
  • Blend in the yogurt gradually and keep on stirring until the oil is separated.
  • Add crushed cashews and poppy seeds and ¼ cup water.
  • Now add the cauliflower, head down, and coat with masala to let everything cook together for 5 to 10 minutes.
  • Place the cauliflower, stump down, in a casserole dish.
  • Coat with all the masala.
  • (Put more cuts in the cauliflower to ensure that all sides are covered with the masala.) Before serving, bake for 15 minutes at 350°F.
  • Garnish with green coriander.
  • You may also decorate with cooked green peas and pan fried potato slices.

1/2 cup butter
2 teaspoons hot sauce ((I used Frank's))
1/2 teaspoon chipotle powder
1/2 cup plain bread crumbs
1/2 cup cojita cheese (crumbled (or grated Parmesan))
1 ounce ranch dressing mix ((1 packet))

Steps:

  • Preheat the oven to 400 degrees F, and line a baking sheet with parchment paper
  • In a medium bowl, melt butter. Then add hot sauce and chipotle powder to butter and whisk together until well combined.
  • Place cauliflower in a large mixing bowl. Toss cauliflower in spicy butter until well coated. Pour the cauliflower onto the prepared baking sheet. Try to keep the pieces together but not on top of each other, don't space them out.
  • In a second medium bowl, combine bread crumbs, cheese, and ranch mix. Stir together until evenly mixed. (Try to avoid eating this mixture by the spoonful. It's delicious on just about everything!!)
  • Sprinkle the cheese mixture over the cauliflower. Make sure to sprinkle evenly to get everything covered really well.
  • Bake for 15 minutes or until lightly golden in some areas.
  • Remove from the oven and allow to rest for 5 minutes before serving.

1 Tbsp cornstarch
1/2 tsp each garlic powder, onion powder, white pepper, sweet paprika, cajun seasoning.
1 tsp yeast
1 c milk
1/2 c favorite hot sauce
1 Tbsp dijon mustard
oil for deep frying

Steps:

  • 1. In a shallow dish place the flour, cornstarch, salt, white pepper, onion powder, garlic powder paprika, cajun seasoning and yeast. Mix well
  • 2. In another shallow dish mix the milk, hot sauce, and Dijon mustard.

  • Note: Although this recipe doesn’t involve a canning process, cleanliness of ingredients, tools and hands at every stage is extremely important for making pickles that are safe to eat.
  • Toast the cumin, coriander and mustard seeds in a small skillet until fragrant, then set aside to cool.
  • Wash and dry the head of cauliflower. Discard the stem. Break the head into large florets and slice them very thinly, with a knife or mandoline (safety note: always use the guard when cutting on a mandoline). Add the cauliflower and any small pieces that have broken away to a large clean bowl.
  • Add the chili, carrot, scallions, lime juice, turmeric, ginger and the toasted spices to the cauliflower. Toss well to combine. Add 1 teaspoon of salt, toss well to combine. Work the mixture with clean hands for a few minutes, massaging and squeezing. Taste, add more salt if needed, and massage more, and repeat until the cauliflower tastes salty, but not too salty. The saltiness won’t diminish much in the final pickle, so do not salt to the point that you wouldn’t want to eat it.
