100ml rapeseed oil
100ml natural yogurt
50ml runny honey
2 eggs
1 tsp vanilla extract
200g self-raising flour
1 tsp bicarbonate of soda
1½ tsp ground mixed spice
1 apple , grated
1 carrot , grated
50g sultanas , raisins, chopped nuts or seeds (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a muffin tin with nine cases (alternatively, use squares of baking parchment). Mix the oil, yogurt, honey, eggs and vanilla in a jug. In a bowl, combine the flour, bicarb, mixed spice and ¼ tsp salt. Pour the yogurt mixture into the flour mixture and add the apple and carrot, as well as any extra ingredients you're using. Mix with a spatula until well combined, then spoon the mixture into the muffin cases.
  • Bake for 20-22 mins, or until a skewer inserted into the middle of a muffin comes out clean. Leave to cool for at least 5 mins. Can be stored in a tin for three days or frozen for two months; defrost overnight before serving.

Steps:

  • Preheat oven to 375°F. Lightly coat twelve 2-1/2-inch muffin cups with nonstick cooking spray or line with paper bake cups and coat insides of paper cups with nonstick cooking spray; set aside. In a large bowl stir together all-purpose flour, whole wheat flour, the 1/3 cup brown sugar, the baking powder, apple pie spice, and salt. Make a well in the center of the flour mixture; set aside.
  • In a medium bowl lightly beat eggs with a fork; stir in buttermilk and oil. Add egg mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). Fold in shredded apple. Spoon batter into prepared muffin cups, filling each about three-fourths full.
  • In a small bowl combine pecans, flaxseed meal, and the 1 tablespoon brown sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Spoon pecan mixture on top of muffin batter.
  • Bake for 18 to 20 minutes or until a toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove muffins from muffin cups. Serve warm.

Steps:

2 cups peeled, shredded carrots (about 5 medium)

Steps:

  • Line 12 cups (each 2 1/2 inches wide) of a standard muffin tin with paper liners; set aside. In a large bowl, stir together flour, sugar, pumpkin-pie spice, baking powder, baking soda, and salt; set aside.
  • In a separate bowl, whisk together yogurt, butter, and egg. Make a well in the center of the dry ingredients and add yogurt mixture. Stir until just combined. Fold in carrots.

Steps:

  • Preheat the oven to 375 degrees F and center an oven rack. Line a mini-muffin tray with your favorite liners.
  • Combine the flour, baking powder, garam masala, salt and baking soda in a large bowl. Work in the brown sugar with your fingers.
  • Whisk together the carrots, yogurt, oil, raisins, coconut, ginger, zest and eggs in a separate bowl.
  • Stir the wet ingredients into the dry until just combined (don't fret if the batter has lumps).
  • Grease a small 1 1/4-inch ice-cream scoop with nonstick spray and fill the liners about 3/4 of the way to the top. Sprinkle with turbinado sugar, if using.

4 oz pitted dates (110g)
1/2 cup water (120ml)
1/2 cup whole wheat flour (65g)
1/2 cup all purpose flour (70g plain flour)
1/2 cup quick cook oats (48g (see notes for alternative))
1 tsp baking powder
1 tsp baking soda (bicarbonate of soda)
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp salt
1 egg
1/2 cup buttermilk (120ml)
1 tsp vanilla extract
1 cup apple (135g, grated, approx 1 apple)
1/2 cup carrot (55g, finely grated)

Steps:

  • Soak the dates in the water ideally for an hour or two but at least while you prepare everything else.
  • Preheat oven to 375F/190C.
  • In a large bowl, mix the dry ingredients (wholewheat and all purpose flours, oats, baking powder and baking soda, cinnamon, ginger, allspice and salt).
  • Puree/blend the dates (along with the water) to a paste then add the egg, buttermilk and vanilla and blend until they are well mixed.
  • Add the date-egg mixture to the dry ingredients then add the apple and carrots. Mix everything so they are combined but try not to overmix.
  • Spoon the mixture into lined or greased muffin tins then bake for approx 20 minutes until gently golden and a skewer put in the middle comes out clean.
