- Set oven to 325F and lightly grease a 9×5-inch loaf pan, or 3 mini loaf pans.
- In a large bowl, combine the bananas, oil, eggs, and vanilla extract and mix with a whisk until well combined. If you have a food scale, you can skip the mashing! Weigh your bananas, then combine with the wet ingredients in a blender and puree until smooth.
- Add the flour, baking soda, baking powder, salt, cinnamon, and any mix-ins; stir just until combined. Pour batter into your prepared loaf pan(s).
- Bake for 60 to 75 minutes for a large loaf (35-40 minutes for mini loaves) or until a toothpick inserted into the center comes out completely clean. Allow the bread cool in the pan for 10 minutes, then transfer it to a wire rack and let it cool another 15-20 minutes before slicing.

- Preheat the oven to 350 degrees F. Lightly spray an 8x4 loaf pan and set aside.
- Drain the dates and place them in a food processor along with the bananas, apple sauce, coconut oil, and vanilla extract. Blend until smooth, scraping down the sides as needed.
- In a separate bowl whisk together dry ingredients. With a wooden spoon, mix the date/banana mixture into the flour mixture until the flour is fully hydrated. Be careful not to overmix. Once your batter is uniform, stir in walnuts.
- Pour the batter into the prepared loaf pan and spread even the top.
- Bake for 45-60 minutes until a knife inserted in the middle comes out clean. Allow loaf 20 minutes to cool in pan before transferring to a cooling rack to cool.
- Serve immediately or store in an airtight container or freezer.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x3 inch loaf pans. Whisk together the flour, baking powder, and baking soda; set aside.

- Preheat oven to 350°F.
- Grease 9 x 5 inch loaf pan.
- Sift flour,baking powder, baking soda, salt, ginger, allspice and nutmeg together in bowl.
- Add lemon zest and almonds.
- Stir until combined.

- Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
- Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. - 1. FOR MINI LOAVES: Makes 8 mini loaves, bake approx. 30-40 minutes.
- 2. Place bananas in mixing bowl and mix to break them down. Add white and brown sugar, butter, oil, vanilla, salt and baking soda, cinnamon, ginger and nutmeg. Mix till well combined, add eggs and mix till incorporated. Add flour 1 c at a time and mix in. Scrap bowl after adding all of flour. Once all is well combined add in nuts and mix thoroughly.
- 3. Preheat oven to 350°. Grease two 9 x 5 loaf pans. Pour half of batter into each. Bake for approx 50-60 min or until knife inserted in center comes out clean. Allow to cool for a few minutes and remove from pan and cool on wire rack. If using a bundt pan allow an additional 15-20 min baking time.
