Spiced Apple-Upside Down Cake image

Infused with cinnamon and nutmeg, this Spiced Apple Upside-Down Cake features apples baked into every bite. It will quickly become a fall favorite!

¼ cup (56 g) unsalted butter, cut into pieces
½ cup (105 g) light brown sugar, packed
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 large tart baking apples, peeled, cored, and sliced thin
1 ½ cups (195 g) cake flour
1 teaspoon baking powder
¼ teaspoon baking soda
⅛ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅓ cup (75 g) unsalted butter, softened
½ cup (100 g) granulated sugar
¼ cup (60 ml) maple syrup, or honey
1 teaspoon vanilla extract
2 large eggs, room temperature
⅓ cup (80 ml) apple cider, or apple juice
1 cup (113 g) tart baking apples, peeled, cored, and finely diced

Steps:

  • Position the oven rack to the center and preheat the oven to 350ºF. Spray a 9-inch round cake pan with non-stick spray. Line the inside bottom with a piece of parchment paper cut to fit. Spray the parchment paper lightly with non-stick spray.
  • In a medium-sized pot over medium-low heat, stir together butter, brown sugar, cinnamon, and nutmeg. Cook the mixture for 3 to 4 minutes, until it becomes creamy and bubbles lightly. Remove the pan from the heat.
  • Pour the glaze into the bottom of the cake pan. Gently tilt the pan to help the glaze spread evenly over the bottom.
  • Arrange the apple slices in the pan by placing them side by side around the outer edge of the pan. (The slices should be touching each other with the tips pointing toward the center of the pan) Arrange more slices in the middle, slightly overlapping the apples that are already in place. Gently press the apples down into the glaze so that they touch the bottom of the pan.
  • In a small bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a large mixing bowl, cream together the butter and sugar. Add the eggs, one at a time, mixing well after each one. Beat in the maple syrup and vanilla.
  • Add half the flour mixture, mixing just until almost fully combined. Mix in the apple cider. Add the remaining flour mixture, mix until just combined, scraping down the sides of the bowl until well blended. Fold in the chopped apples. The batter will be thick.
  • Carefully pour the batter over the apples in the cake pan, be careful not to disturb the arrangement. Use an offset spatula to spread the batter out into a smooth layer to the edge of the pan.
  • Bake for 30 to 35 minutes, or until the cake is a rich golden brown and a wooden toothpick inserted into the center comes out clean.
  • Cool on a wire rack for 5 minutes. Place a serving platter over the top of the cake pan and flip them both over to invert the cake out onto the platter. Replace any apples that may have moved or stuck to the pan.
  • Cool to room temperature before slicing and serving.

1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

1 cup packed brown sugar
Pastry for double-crust pie
1/2 cup sugar

2 tablespoons lemon juice

Steps:

  • Arrange pecans, with rounded sides facing down, on the bottom of a 9-in. deep-dish pie plate; drizzle with butter. Sprinkle with brown sugar; press lightly., Roll out dough to fit the pie plate; place over brown sugar. Press the crust firmly against brown sugar and sides of pie plate. Trim edges., In a large bowl, combine the sugar, flour, pie spice and nutmeg. Add the apples, lemon juice and vanilla; toss to coat. Fill crust. Roll out remaining dough to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in crust., Place a foil-lined baking sheet on a rack below the pie to catch any spills. Bake pie at 450° for 10 minutes. Reduce heat to 350°. Bake until top is golden brown and apples are tender, 40-45 minutes longer. Cool for 10 minutes before inverting onto a serving plate. Serve warm., PASTRY FOR DOUBLE CRUST PIE, Combine 21/2 cups all-purpose flour and 1/2 tsp salt; cut in 1 cup cold butter until crumbly. Steps:

  • Heat oven to 350°F. In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar and walnuts over butter; stir to combine. Sprinkle chopped apples in pan.
  • Mix cake as directed on box for 13x9-inch pan, using water, oil and eggs. Pour batter over apples and walnuts in pan.

4 large eggs
1 tablespoon vanilla extract
2 cups all purpose flour

1 cup grated apples (peel and core them first, measure the grated apple packed into the measuring cup. )

Steps:

  • Prepare a 13 inch x 9 inch pan by greasing the sides then pouring the melted butter into the bottom.
  • Mix together the brown sugar, cinnamon and allspice.
  • Sprinkle the brown sugar mixture evenly over the melted butter.
  • Arrange the apple slices in an even layer on top of the sugar/butter mixture.
  • Cream your butter and sugars together, then beat in the eggs, one at a time, until thoroughly incorporated and the mixture is light and fluffy. Mix in the vanilla.
  • Whisk together your dry ingredients. Beat into the wet ingredients until combined. Mix in the shredded apples until spread throughout the batter.
  • Gently spread the batter over top of the apple mixture.
  • Bake in a 350 degree oven for 40-50 minutes, until it's golden brown and a knife inserted comes out clean. Remove and let sit for 5 minutes,
  • One you can touch the pan safely, run a knife along the edges of the pan to loosen the edges, then flip onto a large platter or sheet pan.

I had some apples that needed to be used and caramel and apples are a favorite combination of mine so I came up with this quick and easy version of Apple Upsidedown Cake. Serve warm with some vanilla ice cream and you will be in heaven!! I hope you enjoy!

3 medium apples, peeled and cored
1/2 cup butter
1/2 cup packed brown sugar
1 (18 1/4 ounce) box yellow cake mix

  • Preheat oven to 350 degrees and spray bundt pan with cooking spray.

  • Preheat the oven to 350° and line the bottom of a 9-inch cake pan with parchment paper. In a large bowl, blend the butter with the brown sugar and salt. Spread the mixture evenly in the lined cake pan. Arrange the apples wedges in the pan in 2 concentric circles.
  • In the same bowl, whisk the flour with the sugar, baking powder and salt. In a small bowl, mix the eggs with the milk and vanilla. Add the mixture to the dry ingredients along with the melted butter and whisk until smooth. Scrape the batter over the apples and spread evenly. Bake the cake in the lower third of the oven until golden and springy and a toothpick inserted in the center comes out clean, about 55 minutes.
  • Transfer the pan to a rack and let cool for 30 minutes. Run the tip of a knife around the inside rim of the pan. Center a serving plate over the cake; carefully invert the the cake and plate. Remove the pan and peel off the parchment paper. Let the cake cool completely.
  • In a small bowl, stir the confectioners' sugar with the milk and drizzle it over the cake. Cut into wedges and serve.
