On a cool fall day, enjoy a mug of warm apple cider. Cinnamon stick stirrers add spice and extra flavor to our favorite seasonal beverage.

Yield Makes about 16 cups

Number Of Ingredients 6

32 whole allspice berries
24 cinnamon sticks
24 cardamom pods
12 whole cloves
12 strips (2 inches wide) orange zest (from about 3 oranges)
1 gallon apple cider

Steps:

  • Combine all ingredients in a pot. Bring to a simmer over medium heat, and cook until fragrant, about 5 minutes. Cider can be kept warm over very low heat. Strain before serving, reserving cinnamon sticks for garnish if desired.

1 cup heavy whipping cream, chilled
2 tablespoons brown sugar (packed)
2 tablespoons dark rum
freshly grated nutmeg
12 cups apple cider
40 whole cloves
10 cinnamon sticks
8 slices orange peel, 2-inch-long
4 slices lemon peel, 2-inch-long
2 teaspoons whole allspice
1/2 cup vanilla citrus liqueur (Tuaca)
1/4 cup dark rum

Steps:

  • cream.
  • Stir all ingredients in medium bowl. Chill until ready to use, up to 1 day.

  • Bring first 6 ingredients to boil in heavy large pot, stirring occasionally. Reduce heat to medium and simmer until mixture is reduced to 6 cups, 35 to 40 minutes. Strain cider into medium saucepan. DO AHEAD Can be made 1 day ahead. Cool, cover, and chill.
  • Return cider to simmer. Remove from heat. Mix in 1/2 cup Tuaca and 1/4 cup dark rum. Divide cider among 8 mugs.
  • Beat cream until peaks form. Spoon whipped cream atop cider and serve.

6 cups apple cider or juice
8 cinnamon sticks (3 inches)
2 lemon zest strips
1/8 teaspoon ground nutmeg
8 whole cloves
4 slices red apple, cored and cut in half

Steps:

  • In a large saucepan, combine the apple cider, cinnamon sticks, lemon zest and nutmeg. Insert a clove into each apple slice; add to cider., Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 1 minute. Discard lemon zest strip. Ladle into mugs.
