- In a small bowl, mix the first 10 ingredients. Rub fillets with seasoning mixture; drizzle with oil., Place salmon on a lightly oiled rack, skin side up. Grill, covered, over high heat or broil 3-4 in. from heat 5 minutes. Turn; grill 4-6 minutes longer or until fish just begins to flake easily with a fork.

SPICY GARLIC SALMON
This is an unbelievably delicious and quick salmon recipe. You can play around with the ingredients: add fresh basil leaves instead of the chili or balsamic instead of the lemon juice. The wholegrain mustard is essential. You are guaranteed to love this one! Serve with a green salad, and enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Line a medium baking dish with aluminum foil. Lightly grease foil.
- With a mortar and pestle, grind together the garlic, chile pepper, and olive oil. Mix into a thick paste with the mustard, lime juice, salt, and pepper. Place the salmon fillets in the prepared baking dish, and coat with the paste mixture.
- Bake salmon 12 to 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

SPICED SALMON WITH SAUTEED GARLIC SPINACH

Steps:
- Heat the butter in a large saucepan. Once melted, add the garlic, then the spinach, stirring well.
- Mix in the lemon juice, season with the nutmeg, salt and freshly ground pepper. Cover the pan and turn off the heat.
- Set aside for 5 minutes until the spinach is slightly wilted.
- Meanwhile, preheat the broiler. Season the salmon fillets with the mace, black pepper and sea-salt.
- Place the salmon on the hot broiler and broil for 2 minutes, without moving.
- Turn the salmon fillets over and cook for a further 2 minutes, until a white residue appears around the edge of the salmon. Once this appears, remove the salmon and rest for 1 minute.
- Squeeze the lemon juice over the salmon just before serving. Serve the salmon with the spinach.

- To prepare salmon, combine first 6 ingredients; rub spice mixture evenly over fish. Place onion in an 11 x 7-inch baking dish coated with cooking spray. Place fish on top of onion; bake at 400° for 20 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
- To prepare spinach, heat oil in a large nonstick skillet over medium heat. Add garlic to pan; cook 1 minute. Add half of spinach; cook for 1 minute, stirring frequently. Add remaining spinach; cook 4 minutes or until wilted, stirring frequently. Sprinkle spinach mixture with rind and 1/4 teaspoon salt. Stir in juice; remove from heat.

- Heat oven to 200C (180C fan-forced). Heat a large frying pan over medium heat and add the butter. Fry the garlic and onion until it is fragrant and lightly browned. Increase the heat of the pan to high, add the mushrooms and stir well.
- The mushrooms will absorb the butter. Continue to fry the mushrooms for about 10 minutes, stirring occasionally, until they are brown and release the absorbed butter back into the pan. Add the spinach and toss until wilted. Move the spinach and mushrooms to one side of the pan and pour the white wine directly onto the other side. When the wine boils, mix everything together. Season well with salt and pepper.
- Place the salmon fillets skin-down on a sheet of baking paper on a baking sheet. Season well with salt and pepper and roast the salmon for eight minutes. Remove the entire baking paper to a serving plate and pour over the mushroom and spinach mixture. Squeeze over the lemon juice and serve.
