Spice Mix for Pork or Chicken image

Sprinkle, mix with breadcrumbs, or oil and brush it on, this has lots of possibillities and flavor. Try rubbing it on pork or chicken, wrap it up and leave in the fridge overnight. If you prefer leave the salt out and add that when you use the mix, that way you are in control over the amount of salt you use.

3 teaspoons white pepper
1 teaspoon black pepper
2 teaspoons garlic powder
3 teaspoons onion powder
3 teaspoons smoked paprika (mild or hot)
3 teaspoons paprika
2 -3 teaspoons cayenne powder
3 teaspoons dried thyme
2 teaspoons dried oregano
1 teaspoon dried basil

Steps:

  • Mix all ingredients together and store in a jar.
  • If you cannot find smoked paprika, substitute with regular.

Southern Style Dry Rub for Pork or Chicken image

A classic pork or chicken dry rub that is very popular in Southern Georgia. This is enough to coat about 5 to 7 pounds of ribs or 10 pounds of pork roast or chicken. You can add more cayenne pepper by the teaspoon depending on how hot you like it.

  • Whisk brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper together in a bowl. Store in an airtight container.

Number Of Ingredients 12

2 cups all-purpose flour
1 tablespoon salt
1 teaspoon celery salt
1 tablespoon black pepper
2 tablespoons dry mustard
4 teaspoons paprika
1 tablespoon garlic powder
5 teaspoons dried thyme
1 teaspoon dried savory
1 teaspoon ground ginger
½ teaspoon dried basil
½ teaspoon dried oregano

Steps:

  • In a medium bowl, stir together the flour, salt, celery salt, pepper, dry mustard, paprika, garlic powder, thyme, savory, ginger, basil and oregano. Keep mixture in an airtight container.
  • To use: Steam chicken until tender, dip pieces in beaten egg then roll in the spice mixture. Deep fry for 3 minutes on each side.
