Chicken Breasts with Lime Sauce image

Thin, breaded chicken breasts topped with a flavorful lime-butter sauce. Pounding the breasts doesn't take long and the resulting tender chicken is worth it.

4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 egg, beaten
⅔ cup dry bread crumbs
2 tablespoons olive oil
1 lime, juiced
6 tablespoons butter
1 teaspoon minced fresh chives
½ teaspoon dried dill weed

Steps:

  • Coat chicken breasts with egg, and dip in bread crumbs. Place on a wire rack, and allow to dry for about 10 minutes.
  • Heat olive oil in a large skillet over medium heat. Place chicken into the skillet, and fry for 3 to 5 minutes on each side. Remove to a platter, and keep warm.
  • Drain grease from the skillet, and squeeze in lime juice. Cook over low heat until it boils. Add butter, and stir until melted. Season with chives and dill. Spoon sauce over chicken, and serve immediately.

This recipe was given to me by a friend at work years ago. I love not only the flavors but the simplicity of the recipe and the fact that it is low in fat and calories doesn't hurt either.

1 tablespoon ground coriander
1 tablespoon ground cumin
1/2 tablespoon fresh ground black pepper
1 teaspoon salt
1 lb boneless skinless chicken breast
2 teaspoons canola oil or 2 teaspoons vegetable oil
4 navel oranges
1 small red onion, finely chopped
1/4 cup lime juice
1/4 cup chopped fresh cilantro
1 -2 jalapeno pepper, seeded & finely chopped
1 garlic clove, finely chopped
salt & fresh ground pepper

Steps:

  • ----Salsa------.
  • With a sharp knife remove skin and white pith from oranges and discard.
  • Working over a medium-sized bowl to catch the juice, cut the orange segments from their surrounding membrane, letting the segments fall into the bowl.
  • Add remaining ingredients.
  • Makes 2 cups, serves 4.
  • -----Chicken------.
  • In a small dry skillet over medium heat, toast coriander, cumin & pepper, stirring for 45 seconds or until aromatic.
  • Transfer to a small bowl, add salt and set aside.
  • Preheat broiler.
  • Lightly oil a broiler rack or coat with non-stick cooking spray.
  • Place chicken breasts between 2 pieces of plastic wrap; flatten the meat lightly with a rolling pin.
  • Discard the plastic wrap.
  • Brush both sides of chicken with oil, then coat with the spice mixture and place on the prepared rack.
  • Broil until the chicken is no longer pink in the center, 4-5 minutes per side.

  • Cook rice according to package directions. 150ml pot natural yogurt
1 tbsp vegetable oil
1 tsp medium curry powder or paste
pinch chilli powder
juice 1 lime
1 garlic clove , crushed
4 skinless boneless chicken breasts
1 red or green pepper , deseeded and cut into large chunks
1 onion , halved and cut into large chunks
steamed rice and ready-made raita, to serve

Steps:

  • In a large bowl, mix together the first 6 ingredients and season to taste. Slash the chicken breasts 5-6 times, without cutting all the way through. Add the chicken breasts and vegetables to the yogurt mix and stir to coat everything completely. Cover and leave the flavours to mingle for 10 mins.
  • Place a griddle over a high heat and cook the chicken and vegetables for 4 mins each side until the chicken is cooked through and the grill lines are golden. Leave to rest for 2 mins before serving with steamed rice and raita.
