HEARTY MEATBALL STEW

Steps:
- For the meatballs: Place the bread and 3 tablespoons water into a medium bowl. Mash to a paste with a spatula. Add the beef, sausage, egg, parsley, salt and pepper. Blend the mixture thoroughly with your hands or a flexible spatula. Form the mixture into 10 to 16 meatballs. Arrange the meatballs on a parchment paper-lined baking sheet until ready to use.
- For the hearty meatball stew: Sprinkle the meatballs with the flour and turn to coat with any flour still on the foil. Heat a large heavy nonstick skillet over medium heat for 1 minute. Add 2 tablespoons of the olive oil. Drop the meatballs into the skillet, spaced apart. Cook until the bottoms are set and brown, about 2 minutes. Using a flexible thin spatula, turn each meatball onto an uncooked side and cook until the bottoms are set and brown, about 2 minutes longer. Turn and cook a third side, until set and brown, about another 2 minutes, so the meatballs are browned and set all over. Transfer the meatballs to a large plate.
- Heat the remaining 2 tablespoons oil in the same skillet over medium-high heat. Add the onions, peppers, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until soft, 4 minutes. Add the mushrooms and the remaining salt and pepper. Cook, stirring occasionally, until the mushrooms have softened, about 5 minutes. Add the potatoes, beans, tomatoes, red pepper flakes and broth. Bring the mixture to a boil. Reduce the heat to a simmer, cover the pan and cook until the potatoes are tender and the meatballs are cooked through, about 20 minutes.
STEPH'S ZESTY SWEET AND SOUR MEATBALLS
These meatballs are great! I came up with them on a whim one night while searching through my pantry trying to answer the age old question, 'What's for dinner?' My family LOVES these! I have also taken them to several BBQ's and they are ALWAYS a big hit! For dinner, I like to serve them with a side of steamed minute rice to go along with the meatballs. I hope you enjoy!

- Heat a slow cooker to Medium-High; stir the reserved liquid from the pineapple chunks, soy sauce, vinegar, and brown sugar together in the slow cooker. Whisk the cornstarch into the mixture until dissolved.
- Mix the ground beef, egg, Worcestershire sauce, milk, bread crumbs, onion, salt, and pepper together in a bowl; form into 1-inch balls.
- Heat a large skillet over medium heat; cook the meatballs in the hot skillet until browned on all sides, about 5 minutes. Place the meatballs into the slow cooker. Add the reserved pineapple chunks and green bell pepper.
- Cover and cook until the meatballs are no longer pink in the center, about 1 hour.

SPEEDY MEATBALL STEW

Steps:
- Boil the potatoes for 10 mins until tender. Meanwhile, heat the oil in a large saucepan. Season the meatballs, then brown them all over for about 5 mins. Remove from the pan, drain off any excess fat, then add the onion, garlic and rosemary. Fry gently for 5 mins.
- Add passata to the pan, bring to a simmer, then add the meatballs. Simmer for 5 mins or until everything is cooked through. Add the potatoes and peas, then simmer for 1 min. Pack into a flask or reheat at work, add Parmesan, if using, and eat with good crusty bread.

SPEEDY SWEDISH MEATBALLS
This recipe is from a Sandra Dee cookbook---with a few of my own "tweeks". It is really fast and easy, using store bought frozen meatballs.

Steps:
- Heat oil in heavy large skillet over medium high heat.
- Add meatballs and cook until brown, about 8 minute.
- Transfer meatballs to a bowl.
- Add flour to skillet and cook 1 min, scraping up the browned bits from bottom of the skillet.
- Stir in broth and mil.
- Return meatballs to skillet.
- Simmer until liquid thickens enough to coat meatballs, about 5 minute.
- Remove skillet form heat.
- Stir in sour cream.
- Meanwhile, cook noodles according to package instructions.
- Drain noodles and transfer to a large bowl.
- Spoon meatballs and sauce over noodles.
- Serve immediately.
SPEEDY MEATBALLS SCANDIA
This is an old recipe I copied out of somethings years ago... It is quick and tastes alot like the old swedish meatball recipes, just faster. I use LIpton Onion-Mushroom soup mix in the box.

- Combine 1 envelope of soup mix with ground beef, bread crumbs, milk and egg in a large bowl.
- Mix Well.
- Shap into 24 meatballs.
- Brown meatballs in a large skillet. Pour off fat from skillet. Return all meatballs into skillet.
- Blend remaining envelope soup mix with water & spices. Add meatballs.
- Simmer, scovered 20 minutes or until meatballs are cooked thru.
- Blend sour cream with flour; stire into skillet and heat through, do not allow the sauce to boil.
- Server over buttered parleyed egg noodles.

- Shape beef mix into 12 meatballs. Place flour in a large resealable plastic bag; add the meatballs, a few at a time. SWEDISH MEATBALLS I
This is one of my husband's favorites. I created it using several other Swedish meatball recipes that didn't quite make the grade.

Steps:
- Preheat oven to 350ºF (175ºC).
- In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
- Bake at 350ºF (175ºC) for about 20 minutes.
- Drain meatballs on paper towels, if needed. Then place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.
- Bake uncovered at 350ºF (175ºC) for another 40 minutes. Sprinkle with parsley with parsley before serving.

SCANDI MEATBALLS
Put mushroom soup to clever use in this Scandinavian-style beef meatball dish with dill sauce

- Heat the oil in a large lidded pan. Cook the meatballs for 3-4 mins over a medium heat, turning often so that they brown all over. Remove from the pan with a slotted spoon and drain away any excess oil, reserving about 1 tbsp.
- Add the onion and garlic to the pan and cook for 4-5 mins, stirring to soften. Stir in the soup with half a can of water. Return the meatballs to the pan and bring to the boil. Turn down the heat, cover and simmer for a further 10-15 mins until the meatballs are cooked through. Stir in the dill, mustard and some seasoning. Serve with mashed potato and cabbage.

LIVERWURST SALAD
This is an unusual but delicious salad given to me by a great little old Swedish lady whom I adore. If you're still eating organ meat (we do once in a great while), you'll find this surprisingly tasty.

CHEESY SWEDISH MEATBALL BAKE

- Preheat oven to 375.
- In a large bowl, combine ground meats, panko, eggs, melted butter, and seasonings. Roll mixture into balls.
- In skillet on medium-high heat, cook meatballs in some olive oil, until browned on all sides. Transfer to a paper towel lined tray and set aside.
- In the same skillet, melt butter and whisk in the flour, until lightly browned. Slowly pour in the beef broth, while whisking continuously. Keep whisking and cooking until slightly thickened. Stir in the heavy cream and season with salt and pepper.
- Place meatballs in the gravy and simmer for about 3-4 minutes.
- Cook egg noodles to al dente and drain. In a baking dish, mix together with meatballs and gravy. Sprinkle with desired amount of shredded Gruyere cheese. Bake at 375° F until slightly golden and bubbling. Garnish with chopped chives or parsley.
