- Melt butter in skillet over medium heat; add chicken and cook 10 minutes.
- Turn chicken; add shallots and mushrooms, sprinkle with salt and pepper.
- Cook 10 minutes or until cooked through; chicken should be browned on both sides.
- Remove and sprinkle with cheese.

- In a large bowl, combine the sour cream, soup and poppy seeds. stir in chicken. Pour into a greased 11x7-in. baking dish. Combine the cracker crumbs and butter; sprinkle over top. , Bake, uncovered, at 350° for 25-30 minutes or until heated through.

This a recipe that I used to make for showers, small weddings and special occasions when I worked at a small Country Club back in the early 70's . It was often asked for when we had ladies golf event. I would make smaller version of this recipe for those events

Steps:
- Filling:.
- Saute' minced mushrooms in butter until cooked
- Add flour cook 4 minutes stirring often.
- Stir in cream cook until thick.
- Add cheeses , stir until melted.
- Remove from heat turn into sheet pan.
- Chill for 1 hour.
- Pound breast flat, season with salt and pepper.
- Lay 1 slice of ham on breast.
- Cut chilled mushroom filling into 6 pieces.
- Place one piece filling on top of ham on each breast.
- Roll breast, folding all edges in to seal.
- Place in casserole dish, sprayed with buttered flavored pan coating.
- Bake for 1/2 hour at 375°F, covered.
- Sauce : Mix cream of chicken soup, mushroom and white wine together.
- Pour over chicken.
- Continue to bake for 40 minutes longer uncovered.
