1 1/2 pints strawberries, rinsed and hulled
1/2 cup confectioners' sugar

Steps:

  • Pulse strawberries with sugar and 1/3 cup water in food processor until pureed, with some chunks of berries remaining. Pour half of mixture into a bowl.
  • Pulse remainder until smooth. Stir puree into mixture in bowl. Pour into 3-ounce molds or plastic cups, insert sticks or wooden spoons, and freeze until solid, at least 8 hours.

Ripe avocado can be frozen in halves, chunks, mashed or pureed. Here Ree blends them with strawberries and yogurt to create these adorable freezer pops, perfect for a hot day.

2 cups frozen strawberries
1 cup vanilla yogurt
1/4 cup honey
1 large avocado, chopped
1 cup finely chopped fresh strawberries

Steps:

  • Combine the frozen strawberries, yogurt, honey and avocado in the bowl of a food processor and puree until smooth. Transfer to a bowl.
  • Spoon about a tablespoon of the chopped fresh strawberries into each of 12 small paper cups. Fold the remaining chopped strawberries into the yogurt mixture. Spoon the yogurt mixture on top of the strawberries in each paper cup. Carefully insert an ice-pop stick into each pop. Freeze until solid, about an hour. Peel the paper cups off to serve.

Adapted from "The Once a Week Cooking Plan" by J. Hilton. You can make these with purchased popsicle molds or 8oz plastic cups and wooden sticks inserted into them. Cook time is freezing time

2 cups fresh strawberries (or frozen)
1/4 cup sugar
1/2 cup water
1 (3 1/2 ounce) package instant vanilla pudding (or cheesecake, or white chocolate)
1 3/4 cups milk

Steps:

  • Puree strawberries with sugar and water.
  • Prepare pudding, using 1 3/4 cups of cold milk, and beat until mixture begins to get thick.
  • Fold in berry mixture.
  • Pour into molds or cups and freeze.

Number Of Ingredients 3

1 pint strawberry, stemmed
1 (5 ounce) can fat-free evaporated milk
3 tablespoons cranberry juice concentrate or 3 tablespoons pineapple juice concentrate

Steps:

  • In blender, blend all ingredients about 1 minute until smooth.
  • Pour into eight 3-ounce, wax-coated paper cups. (Like Dixie Cups).
  • Place in shallow pan and insert a wooden popsicle stick or plastic spoon into the center of each.
  • Freeze until firm, about 4 hours.
  • After pops are frozen, they can be transferred to a reclosable plastic bag for freezer storage.
  • To release pops from cups, dip briefly into hot water up to rim of cup.

  • Puree all ingredients in a blender until smooth.
  • Strain mixture through a fine meshed sieve, into a glass measuring cup.
  • Discard solids.
  • Pour mixture into eight 3 ounce pop molds.
  • Insert sticks, then freeze till firm.

Fresh strawberries are pureed and stirred into homemade horchata to give this classic Mexican drink a summery twist!

Number Of Ingredients 9

1/4 cup long grain white rice
1 3/4 cups water
1 small cinnamon stick
1/2 lb fresh strawberries
1/4 cup whole milk
1 1/2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1/3 cup granulated sugar
1/2 cup freeze dried strawberries

Steps:

  • In a blender, combine the rice, water and cinnamon stick. Blend on high for 10 minutes, and pour into a large pitcher. Cover with plastic wrap and let rest at room temperature for at least 3 hours.
  • Blend the strawberries until completely smooth and pour into the pitcher with the rice water mixture. Give it a stir and then pour into a large measuring cup through a fine mesh sieve to remove the rice bits and strawberry seeds.
  • Stir the milk, cinnamon and sugar into the horchata and then divide between the popsicle molds. Insert popsicle sticks and freeze until firm, about 6 hours or overnight.
  • Place the freeze dried strawberries in a food processor and process a few times until coarse crumbs and pour out onto a shallow plate.
  • Dip each popsicle, at an angle, into the strawberry crumbs right before serving.
