Fresh Raspberry Jello Dessert is an easy, no-bake recipe that has been in my family for decades! It's a summer favorite made with layers of crushed Nilla Wafer crumbs, creamy filling, a sweet and tart raspberry jello layer with fresh raspberries, and freshly whipped cream on top!

6 ounces raspberry jello mix (or two 3-ounce packages)
4 cups cold water (divided)
1 box finely crushed Nilla Wafers (about 2 1/2 cups, divided)
1 3/4 cups powdered sugar (divided)
1 Tablespoon salted butter (melted)
1 3/4 cups heavy cream (divided)
18 ounces fresh raspberries (divided)
2 teaspoons vanilla extract

Steps:

  • Prepare the jello by heating 2 cups of water in the microwave for 4-5 minutes until boiling. Stir in the powdered gelatin until dissolved, then add the remaining 2 cups of cold water and stir. Place in the fridge for 30-60 minutes until thickened and syrupy.
  • Crush the Nilla Wafers into fine crumbs using a food processor, blender, or by hand with a rolling pin and heavy duty ziploc bag. Set aside 1/2 cup of the crumbs and pat the remaining crumbs into the bottom of a 9x13-inch pan.
  • Whisk 1 and 1/2 cups of the powdered sugar, melted butter, and 1/4 cup of the cream in a medium bowl until thick but drizzly. If the mixture is too thick to drizzle add a little additional cream, one tablespoon at a time. Drizzle this over the Nilla Wafer crumbs. It's okay for some of the crumbs to peek through and there is no need to spread the creamy layer to the edges.
  • Sprinkle the raspberries evenly over the creamy layer, reserving your best looking raspberries for decorating the top of the dessert when it's done.
  • Pour the syrupy, cooled jello over the raspberries, then place in the fridge for 2-3 hours until completely set.
  • Make the whipped cream by combining the remaining 1 and 1/2 cups of heavy cream with the remaining 1/4 cup of powdered sugar and vanilla extract in a large bowl. Use a stand mixer fitted with a whisk attachment or a hand mixer to beat the cream until stiff peaks form, taking care not to overbeat it. Spread in an even layer on top of the set jello.
  • Sprinkle the reserved Nilla Wafer crumbs over the whipped cream, then decorate with the reserved raspberries. Slice into squares and serve.

1 (9 inch) angel food cake
2 (3 ounce) packages raspberry-flavored gelatin mix (such as Jell-O®)
1 ¼ cups boiling water
1 (15 ounce) package frozen raspberries in syrup, thawed and undrained
1 pint heavy whipping cream

Steps:

  • Butter a 9-inch tube pan. Break angel food cake into chunks; set aside.
  • Stir raspberry gelatin and boiling water together in a bowl until gelatin is dissolved; place gelatin in the refrigerator to cool slightly, about 10 minutes. Stir raspberries with syrup into gelatin.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form; fold whipped cream into raspberry mixture.
  • Pour about 1/4 cup of raspberry mixture into prepared pan. Place 1/3 of cake chunks into pan; pour 1/3 of remaining raspberry mixture over cake. Repeat layering with remaining ingredients, ending with the raspberry mixture. Chill in refrigerator until firm, about 2 hours.
  • To remove from pan, center a serving plate over tube pan; invert.

16 pink marshmallows
fresh berries (to garnish)

Steps:

  • Dissolve jelly crystals in boiling water, set aside.
  • Place marshmallows in microwave safe container.
  • Heat in microwave till melted - time depends on your microwave.
  • Whisk marshmallows into jelly mixture.
  • Pour into 2 large glasses.
  • Refrigerate 3 hours till set.
  • Garnish with berries.

This make-ahead summer dessert is bursting with intense fruity flavour - set in a classic jelly mould for a retro dinner party centrepiece

½ tsp flavourless oil for greasing, such as sunflower oil
5 gelatine leaves
140g golden caster sugar
500g raspberries , plus extra to serve
juice 1 lemon
clotted cream or ice cream, to serve

Steps:

  • Use the oil to lightly grease the inside of a 600ml jelly mould. Put the gelatine leaves in a small bowl of cold water, one at a time so they don't stick together. Leave to soak while you cook the raspberries.
  • Pour 300ml water into a large saucepan. Add the caster sugar, heat gently over a medium heat, stirring occasionally until the sugar has dissolved, then add the raspberries. Bring to the boil, then turn the heat right down so the mixture is barely simmering, and cook for 5 mins until the raspberries break down. Stir well, but don't mash them too much as the raspberries will break down in the heat.
  • Carefully pour the raspberry mixture through a sieve set over a large heatproof measuring jug. Stir in the lemon juice, then either top up with cold water or pour some away to ensure you have exactly 600ml total liquid. Drain the water from the gelatine leaves and squeeze out any excess before adding to the raspberry mix. Stir well until the gelatine has completely dissolved, then pour into your jelly mould (see tip below). Once cold, place in the fridge and leave overnight to set.
  • Turn the jelly out onto a large plate just before serving. Serve with a scoop of clotted cream or ice cream, and some raspberries.

2 Tbsp. sugar
2 cups carbonated lemon-lime soda
1-1/4 cups boiling water
2 pkg. (3 oz. each) JELL-O Raspberry Flavor Gelatin
1/4 cup cold water
36 fresh raspberries (about 1-1/3 cups)

Steps:

  • Mix unflavored gelatine and sugar in medium microwaveable bowl until blended. Stir in soda. Let stand 3 min. or until gelatine is softened. Microwave on HIGH 3 min. or until gelatine and sugar are dissolved, stirring after each minute. Pour into 8-inch square dish sprayed with cooking spray.
  • Refrigerate 25 to 30 min. or until set but not firm. Meanwhile, add boiling water to raspberry gelatin mixes in separate medium bowl; stir 2 min. until completely dissolved. Stir in cold water. Cool 15 min.
  • Pour raspberry gelatin gently over clear gelatine layer in dish. Refrigerate 1 hour or until firm. Cut into 36 squares; top with raspberries just before serving.

Four 1/4-ounce packets gelatin
1 1/4 cups sugar
2 1/2 cups prosecco
1 cup club soda
3 tablespoons black raspberry liqueur
One 6-ounce container raspberries, plus additional raspberries for serving, optional

Steps:

  • Pour 2 cups water into a small saucepan and sprinkle the gelatin over the top. Let sit until the gelatin has absorbed liquid, about 1 minute. Bring to a boil over medium heat, stirring often with a wooden spoon to fully dissolve the gelatin. Pour the mixture into a bowl and add the sugar, stirring until dissolved. Let cool until just warm to the touch. Then add the prosecco, club soda and raspberry liqueur; stir until combined. Ladle 2 cups of the liquid into a Bundt pan. Sprinkle with the raspberries and refrigerate until pretty much set, 1 hour.
  • Once the first layer is set, pour the remaining liquid over the top. Refrigerate for another 3 hours, until fully set.
  • To unmold, dip the Bundt pan in a small amount of warm water for a few seconds, then cover the pan with a plate and invert so the mold releases onto the plate.
  • Serve with more raspberries if desired.

  • Whisk the gelatin and boiling water in a medium bowl until the gelatin is dissolved, about 2 minutes.
  • Refrigerate until lukewarm, about 25 minutes.
  • Stir in the Prosecco. Cover and refrigerate until the gelatin thickens but does not set, stirring occasionally, about 1 hour.

1 package (10 ounces) frozen raspberries, thawed

1 cup heavy whipping cream, whipped
Fresh raspberries and mint

Steps:

  • In a large bowl, combine the crumbs, 3 tablespoons sugar and butter. Press onto the bottom of a 9-in. springform pan. Bake at 350° for 10 minutes. Cool. , Meanwhile, for filling, drain raspberries, reserving the juice. Set berries aside. In a small saucepan, combine the juice, cold water and gelatin. 1 cup boiling water
1 cup cold water
16 fresh raspberries
1 cup whipping cream
4 oz white chocolate baking bars or squares, finely chopped

2 teaspoons unflavored gelatin
1/2 cup milk
2 cups champagne or sparkling wine
3 tablespoons sugar
1 envelope unflavored gelatin

Steps:

  • In medium bowl, place raspberry gelatin. Pour boiling water over gelatin and stir until dissolved. Add cold water; stir until well combined. Cool slightly.
