You can use any fruit (or combination) to make this biscuit-topped cobbler. Just be sure to adjust the amount of sugar depending on whether your fruit is more sweet or tart. For example, blueberries, peaches, sweet cherries and pears tend to need less sugar than more acidic raspberries, sour cherries, plums and cranberries. Start with a few tablespoons and go up from there, tasting as you go. For the most tender biscuits, be sure to let the dough chill before baking.

1 3/4 cups/220 grams all-purpose flour
1/4 cup/50 grams granulated sugar
1 tablespoon/12 grams baking powder
1/2 teaspoon baking soda
1/8 teaspoon kosher salt
6 tablespoons/85 grams cold unsalted butter, cubed
1/2 cup/118 milliliters buttermilk
1/4 cup plus 1 tablespoon/75 milliliters heavy cream
10 cups mixed fruit, such as peaches, blueberries or blackberries
3 tablespoons to 2/3 cup/38 to 133 grams granulated sugar, to taste
3 tablespoons/36 grams minute tapioca
1 tablespoon/15 grams turbinado or raw sugar

Steps:

  • Place a piece of parchment paper on a small rimmed baking sheet or large plate.
  • In a food processor, pulse together flour, granulated sugar, baking powder, baking soda and salt. Pulse in butter just until mixture looks like small pebbles. Drizzle in buttermilk and cream, and pulse just to combine.
  • Transfer to a lightly floured surface and pat dough together, incorporating any stray or dry pieces. Using a spoon, scoop off 2-inch pieces of dough and roll into balls (you should end up with about 10). Transfer dough to baking sheet or plate and flatten balls to 3/4-inch thick; wrap with plastic and chill for at least 20 minutes, and up to 8 hours.
  • Meanwhile, heat oven to 350 degrees. In a large bowl, toss together fruit, sugar to taste, and tapioca. Let sit for 20 minutes to hydrate tapioca, then scrape into a 2 1/2-quart gratin dish or 9-by-13-inch baking pan.
  • Top with biscuits, then brush biscuit tops with remaining 1 tablespoon cream. Sprinkle with turbinado sugar, and bake until dark golden on top and fruit is bubbling in the middle, about 1 hour, rotating halfway through. Let cool for at least 30 minutes before serving.

1 cup brown sugar
3 tbsp lemon juice
3 tbsp cornstarch
2 tsp cinnamon
2 cups all-purpose flour

Steps:

  • The first step to make a cobbler with frozen fruit is to preheat microwave oven at 350˚F, and keep a rack in the center of it.
  • Now it's time to get the frozen fruit out of the freezer. Put it in a bowl and let it defrost for at least 15 minutes. If the fruit you have selected is juicy, then you will need to mix some cornstarch to make it set firmly. You may also wish to mix some spices as per your taste buds.
  • Transfer the prepared fruit to a baking dish. Fill this dish halfway with fruit, leaving around one inch space on the top to accommodate the topping you would add later.
  • Mix sugar, salt and flour in a bowl to make a topping for the cobbler.
  • Pour melted butter in this sugar and flour mixture. The butter can be warm, but it should not be piping hot. If it is, wait for a few minutes so that it can cool down a bit and become appropriate for mixing.
  • Mix this mixture to make a rough dough. The topping that you make should not be extremely smooth, but should be a little crumbly and sandy. But make sure that it holds together if you pinch it a little. If it breaks apart, you can make it stick by adding some more flour.
  • Make thick palm size disks with this dough. Each disk should be around ½ inch thick.
  • Lay these disks on the fruit filling. They may overlap to give a cobblestone like appearance. If extra topping is left, you may crumble and sprinkle it all over the cobbler's surface.
  • Place this cobbler on a baking sheet or keep an aluminum foil under it to catch any drips in the oven. Bake for 45-50 minutes until the fruit filling starts bubbling and the topping becomes golden near the edges.
  • Let the cobbler cool and serve when it comes to room temperature.

6-7 cups peaches (peeled, pitted and sliced) ((fresh or frozen))
1 cup granulated sugar ((adjust as needed))
1 large lemon ((juice))
1/2 cup instant tapioca
4 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Homemade or store-bought pie crust

Steps:

  • If making homemade pie crust; make the pie crust and get it really well chilled.
  • In a large bowl use a large spoon to combine the peaches, sugar, tapioca, cinnamon, nutmeg and lemon juice.
  • Butter or spray with cooking spray a 9×13-inch baking dish.
  • Add the peach mixture. Scrape all the sugar and tapioca out of the bowl with a rubber spatula.
  • Cut the butter into pieces and distribute evenly over the peach mixture.
  • Cut pie dough into wide strips. (about 2-inches wide)
  • Lay pie crust strips across one length of the baking dish.
  • Pull back every other pie strip. Add a pie crust strip going the opposite direction.
  • Repeat this process until the entire baking dish is covered.
  • Use a pastry brush top of pie crust with an egg wash. Sprinkle with granulated or turbinado sugar.
  • Bake in a preheated 400 degrees F oven for about 60-65 minutes. Or until the filling is bubbling up nicely and the pie crust is golden browned.
  • Remove the baking pan from the oven and let cool for 30 minutes prior to serving, which will help the filling set properly.
  • Serve with a scoop of vanilla ice cream if desired.
