BRAZILIAN BANANA BREAD
In Brazil we call this Banana Cake, but when I baked this for the first time here everyone started calling it Banana Bread. You can add nuts in the dough or on the top if you wish.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In a large bowl, mix together margarine and sugar until smooth. Mix in yolks. Stir in flour and baking powder alternately with the milk.
- In another bowl, beat egg whites until doubled in volume. Fold beaten whites into the dough. Spread into a greased 9 x 12 inch pan. Slice bananas over the top of the dough. In a small bowl, mix together the 2 tablespoons sugar and the cinnamon; sprinkle over bananas.
- Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.

- Preheat the oven to 400 degrees F (200 degrees C). Butter a 9x13 inch baking dish.
- Place the bananas into the baking dish. Combine the orange juice, lemon juice, sugar and salt in a pitcher or bowl; pour over the bananas. Dot with butter.
- Bake for 15 minutes in the preheated oven. Sprinkle with coconut before serving.

BANANA BREAD

- Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
- Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
- In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
- Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
- Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
- Spread slices with honey or serve with ice cream.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

- Heat oven to 180C/160C fan/gas 4. Grease a 900g loaf tin, then line the base and ends with a long strip of baking parchment. Stir together 2 tbsp each of the sugar, flour, nuts and coconut. Add the butter and rub together to sticky crumbs. Set aside.
- Mash the bananas well, then stir in the sunflower oil, egg and milk. In a separate large bowl, mix half of the remaining sugar, followed by the remaining flour, nuts and coconut, then the baking powder and cinnamon.
- Whisk the egg white to stiff peaks, add the final bit of sugar and whisk again until stiff and shiny. Stir the banana mixture into the dry ingredients, then lightly fold in the egg white mixture. Gently scrape into the tin and scatter over the crumb mixture.
- Bake for 40 mins until a skewer poked in comes out clean, covering with foil if the bread starts to go too brown. Cool in the tin, then remove and thickly slice, eating with butter, if you like.

- In a shallow microwavable glass baking dish or pie plate, mix butter, brown sugar and lemon juice. Microwave, uncovered, on HIGH for 1 minute. Stir well.
- Peel bananas and cut them in half crosswise. Slice each lengthwise. Arrange 8 pieces in a single layer in the sugar mixture, turning them over once to coat. Put cinnamon sticks and lime peel around the banana pieces.'.
- Microwave on HIGH, uncovered for 2 minutes. Baste the bananas with the sauce. Microwave on HIGH for 1 or 2 more minutes, or until the bananas are soft.
- Let stand for 3 minutes.
- Garnish with coconut and serve warm with the sauce.

- Spread the nuts on a baking tray and toast them for about 7 minutes or until fragrant (keep an eye so they don't burn). In the meantime, mix the flour with the spices and the baking powder.
- Whip the butter with sugar in a mixer until fluffy. Add the eggs one at a time, scraping the sides of your bowl. Add the dry mixture, mixing until just combined. Add the mashed bananas and also mix until just combined. Fold the roasted nuts and the chocolate chips into the batter and transfer it to the prepared tin.
- Bake in the middle of the oven for about 1h-1h15 minutes or until a skewer inserted in the middle of the loaf comes out clean. If the load is browning too quickly, cover the tin with aluminum foil and remove once it's done. Let the loaf cool for a few minutes before removing it from the mold and let it cool completely in a cooling rack.
