SPARKLING LIMEADE WITH MINT AND SIMPLE SYRUP
This sparkling limeade with simple syrup and a mint garnish is a classic crowd-pleaser you'll be proud to make from scratch.

Steps:
- To make simple syrup, combine sugar and water in a small saucepan. Stir over medium-heat until the sugar dissolves and the mixture boils, then lower heat to medium and simmer for 2-3 minutes. Remove pan from the heat and cool to room temperature. Pour syrup into a sealed glass container and store in the fridge until ready to use.
- To make limeade, combine lime juice, sparkling water, and about ¾ cup simple syrup in a large pitcher. Stir to combine. Taste, and add more simple syrup if you desire a sweeter drink.
- Add ice, lime slices or wedges, and mint leaves for garnish, as desired. Serve cold!

- Muddle 2 lime wedges and some mint leaves in each glass and add ice. Mix 2 cups simple syrup, 2 cups water, 1 1/2cups fresh lime juice and 1/2 cup fresh lemon juice in a pitcher; pour into the glasses.
- Simple Syrup: To make 2 cups simple syrup, bring 1 1/2cups each sugar and water to a boil, stirring until dissolved. Let cool.

- Combine the sugar with 1 cup water in a medium saucepan and bring to a simmer over medium-high heat, stirring until the sugar has dissolved. Turn off the heat and add the mint leaves. Muddle with a muddler or the back of a spoon. Allow to cool completely, about 20 minutes. Strain and discard the mint leaves.
- Add the lime juice and 4 cups water to a large pitcher. Pour the simple syrup into the limeade. Stir to combine.
- To serve, pour the limeade into glasses filled with ice. Top with some sparkling water. Garnish each with a lime round and mint sprig.

- To make the rich simple syrup for the mint limeade fizz, dissolve 1 cup of sugar into ½ cup of water in a small pot over the stove by stirring.
- Once it boils, remove the pot from the heat and allow to cool.
- To make the limeade fizz, add your desired amount of rich simple syrup to a pitcher.
- Stir in lime juice.
- Stir in carbonated water.
- To make the sugar and zest mixture to line the rim of each glass, combine the zest of 1 lime with ¼ cup sugar in a plate.
- Rub 1 lime wedge around the rim of each glass to slightly wet the rim. Dip the rim of each glass in the zest and sugar mixture to coat.
- Add a couple thin lime wedges and a pinch of sliced mint leaves to each glass. Muddle them with the back of a wooden spatula to release the flavors in each glass.
- Add crushed ice to the top of each glass. Add the limeade fizz and enjoy!

- To make mint limeade with concentrate add mint leaves and ice to a large pitcher. Mash a little with a wooden spoon to muddle the mint. Add limeade concentrate and water according to package directions. Stir and serve garnished with lime and mint.
- To make mint limeade with fresh lime juice, crush mint leaves with ice in a pitcher, using a wooden spoon to muddle the mint. Pour in lime juice, sugar and water. Stir until sugar is dissolved. Pour through a strainer into ice-filled glasses. Serve garnished with lime and mint.
- Swap sparkling water for still water for a sparkling drink.

- Make the mint syrup: Stir together sugar and water and bring to a boil in a small saucepan. Boil for about a minute, then remove from heat and toss in mint sprigs. Let mint steep for about 10-15 minutes to develop mint flavor. Press on mint leaves to extract the last of the flavor, and discard.
