This jello may be the hit of your next party or buffet. It may take a little time and patience to make -but believe me it is well worth it! I am ask for this recipe whenever I bring this to family gatherings or church dinners.

Provided by Pat Duran

Categories     Fruit Desserts

Time 30m

Number Of Ingredients 5

4 box (3 oz. each) jello in 4 different colors- like cherry- orange-lime-and blueberry
14 oz can sweetened condensed milk not evaporated milk
3 pkg knox unflavored gelatin
5 1/2 c boiling water
1/2 c cold water

Steps:

  • 1. Using 4 jello colors of your choice or those listed here. Dissolve each jello flavor or color in 4 different bowls and add 1 cup of boiling water to each bowl. Mix and stir each until dissolved.
  • 2. Pour jello into 4 different 8-inch square pans and chill at least 3 hours, until firm. (I chill overnight)
  • 3. After chilling and firm, cut each flavor into small squares and scatter pieces in a lightly oiled Bundt pan with canola oil and then wipe out 99% of it. Set aside.
  • 4. In a separate bowl, sprinkle the 3 unflavored gelatin packets(Knox) into 1/2 cup of the cold water. After the gelatin puffs up(blooms), add the 1 1/2 remaining boiling water and stir until the unflavored gelatin(Knox) dissolves.
  • 5. Add the can of condensed milk to the unflavored gelatin mixture. Stir and cool(not set). Pour cooled milk mixture over the jello in the Bundt pan and chill overnight. Unmold by dipping the pan very briefly in warm water then invert onto a serving plate. Beautiful!!

SPARKLING BERRY JELLO SALAD

Sparkling Berry Jello Salad image

I make this Jello often in the spring/summer. It looks really nice in a mold and sets up great. The fresh berries in the center of the mold makes a beautiful presentation.

Categories     Gelatin

Time 4h15m

  • Stir in 2 cups of the berries.
  • Spoon into 5-cup mold.
  • Refrigerate about 4 hours or until firm.
  • Unmold and top with remaining 1 cup of berries in center.

CHAMPAGNE JELLY FLUTES

Champagne Jelly Flutes image

The secret to keeping the floating bubbles in these champagne jellies is making sure your liquids are very cold, and cooling the mixture quickly so that the gelatin sets before the bubbles dissolve. Inserting the raspberry creates more bubbles, as the trapped gasses move around before the jellies are fully set. The result is a dramatic and festive sparkling treat best scooped with a spoon.

Provided by Food Network Kitchen

Categories     dessert

Time 3h10m

Yield 8 servings

Number Of Ingredients 6

Three 1/4-ounce packets unflavored powdered gelatin
1/2 cup sugar
1 bottle dry sparkling wine, such as Champagne or Prosecco, chilled
2 cups sparkling pale white grape juice, chilled
8 raspberries
1 tablespoon half-and-half

Steps:

  • Prepare an ice bath in a large bowl and set an 8-cup glass spouted measuring cup inside of it. Put eight 8-ounce Champagne flutes in the refrigerator to chill.
  • Sprinkle the gelatin evenly over 2 cups cold water in a medium saucepan. Let sit until the gelatin softens (it will become translucent), about 5 minutes. Add the sugar then cook over medium-low heat, stirring gently, until the sugar and gelatin dissolve completely, about 5 minutes (don't let the liquid come to a boil). Pour the gelatin mixture into the prepared measuring cup over the ice bath, stirring the mixture a few times until it feels lukewarm. Stir in the sparkling wine and grape juice. Pour 1/2 cup of the sparkling wine mixture into a small bowl then neatly pour the remaining mixture into the 8 flutes.
  • Refrigerate the flutes and the reserved mixture in the bowl for 30 minutes (the jelly will be lightly thickened). Gently push a raspberry down into the center of each flute with a skewer, letting some gelatin cover it, until the raspberry is held in place.
  • Add the half-and-half to the reserved gelatin mixture in the bowl and whisk vigorously until the mixture looks like foam. Spoon the foam on top of each flute of jelly. Return the flutes to the refrigerator and chill until the gelatin sets completely, about 2 hours.

  • Meanwhile, pour water into a large heatproof bowl. Sprinkle gelatin over the water; let stand for 3 minutes. Add the juice and stir to completely dissolve the gelatin, 2 to 3 minutes. Add sugar and stir for 1 minute to dissolve. Whisk in sparkling white grape (or apple) juice.
  • Refrigerate until the mixture is the consistency of thin pudding and is just starting to set around the edges, 1 to 1 3/4 hours. The time will vary depending on the size of your bowl and how cold your refrigerator is. After 1 hour, start checking every 5 to 10 minutes because it thickens quickly after that.
  • Gently but thoroughly whisk the mixture until it's uniform. Stir in raspberries. Pour into a 9-by-13-inch pan. Cover the pan with plastic wrap, without touching the jello.

  • Prepare the raspberry mousse first. Using a large fork or masher, crush the raspberries into a sauce. If using frozen berries, let them thaw first. Add the raspberry liqueur (if making non-alcoholic, omit), sparkling wine extract, and sweetened condensed milk. You can also add a few drops of red food coloring to intensify the color. Melt the white chocolate chips in the microwave until smooth and add to the mixture. Use a whisk to blend all of the ingredients together; set aside.
  • Next, pour the heavy cream into a mixing bowl and add the white granulated sugar. Whisk on medium speed until soft peaks form. Add softened cream cheese or mascarpone (either one will work great!) and whisk on high speed until the mixture is light and fluffy. Combine the whipped cream with the raspberry sauce by gently folding the two together.
  • Prepare the gelatin mixture. Sprinkle the unflavored gelatin over the water; stir, then heat in the microwave for about 30 seconds or until gelatin is dissolved. Allow the mixture to cool slightly, then pour into the raspberry mousse and fold it in with a spatula.
  • Transfer the mousse into a large pastry bag (takes me two rounds) and pipe into glasses or clear plastic cups (perfect to bring to a party!). You can also spoon the mixture into small dessert bowls. Garnish the top with a few fresh raspberries, then transfer the glasses into the refrigerator for 1 HOUR, allowing the mousse layer to set on the top.
