SPANISH-STYLE MEATLOAF

Steps:
- Preheat oven to 350 degrees. In a medium skillet, heat oil over medium-high. Add onion, garlic, potatoes, and bell pepper and cook, stirring occasionally, until onion is soft and vegetables begin to brown, 5 minutes. Add paprika and thyme, season with salt and pepper, and cook, stirring, 1 minute.
- In a large bowl, combine pork, cheese, bread, and egg. Add vegetable mixture and season with 2 teaspoons salt and 1/2 teaspoon pepper. Using your hands, mix until ingredients are combined. Transfer to a parchment-lined rimmed baking sheet; form into a 4-by-10-inch loaf. Bake until meatloaf is cooked through, 40 minutes, rotating sheet halfway through. Let rest 15 minutes before slicing.

Steps:
- Heat oven to 350 degrees.
- Grease 8-inch baking pan.
- Combine ground beef, oats, 1/2 cup spaghetti sauce, onion, Parmesan cheese, egg, Worcestershire and pepper; mix well.
- Separate mixture into 2 equal parts.
- Shape each into a patty about 7 inches in diameter.
- Place stuffing choices on one patty to within 1/2 inch of edge.
- Top with remaining patty.
- Pinch sides together to enclose stuffing; smooth edges into rounded loaf.
- Place into pan.
- Bake 40 to 45 minutes or until meat is done.
- Top loaf with 1 cup spaghetti sauce and mozzarella cheese.
- Garnish with olives and serve with remaining sauce.
- Microwave Oven Directions:.
- Prepare meat loaf as directed above.
- Place loaf into greased glass pie plate.
- Cover with wax paper; microwave at HIGH 8 minutes, turning plate 1/2 turn after 4 minutes.

Steps:
- Preheat oven to 350 degrees.
- Combine in large bowl: sirloin/turkey, egg, tomato juice, salt and pepper, garlic, oregano, onion.
- Put 1/2 mixture in 9x5x3 loaf pan coated with cooking spray. (I could only find 11x5x3 sorry!).
- Layer on Cheese, Spinach, Peppers.
- Cover with remaining meat mixture.
- Bake for 1 hr, until meatloaf is done.
- cool to room temp, wrap, freeze up to 3 months.
- remove from freezer, thaw.
- bake at 350 degrees for abt 20-30 min until heated through.
- OR, slice and re heat in microwave.
- can top with a bit of spaghetti sauce if desired.
- comes with frozen italian green beans and/or ww pasta :).

Steps:
- Combine ground beef, tomato sauce, taco seasoning mix, green pepper, onion, bread crumbs and egg; mix thoroughly.
- Combine shredded cheese and sour cream.
- Place half the meat mixture in 9 1/4 x 5 1/4 x 2 3/4-inch loaf pan.
- Make deep well the length of loaf; place cheese mixture in well.
- Place remaining meat mixture on top of cheese; seal well.
- Bake in moderate oven (375 degrees F.) 1 1/2 to 1 3/4 hours.
- Pour off drippings.
- Top meatloaf with overlapping cheese triangles.

SPINACH - STUFFED MEATLOAF
This is a great tasting meatloaf that adds that important iron to your diet. This recipe was originally from the cookbook 1,000 Low Fat recipes by Terry Golson The preparation time does not include the resting time in the fridge. I like to get it ready the day before and then just pop it in the oven an hour before dinner.

Steps:
- Mix together the beef, egg whites, breadcrumbs salt& pepper, shallots garlic, worcestershire sauce& oregano.
- Use your hands to really combine the mixture.
- After you have squeezed as much moisture as you can from the spinach combine it with the cheese, nutmeg& season with salt& pepper.
- On a piece of plastic wrap or wax paper spread out the meat mixture in a rectangle apprx 12 x 8".
- Spread the spinach mixture on top leaving apprx 1/2" clear all around the meat edges.
- Using the paper (plastic) to help roll up the loaf starting from the 8" side.
- Press gently as you go to make sure you have a firmly rolled loaf.
- Press the outside edges together.
- Tightly wrap the meatloaf in plastic wrap (or wax paper) and refrigerate for at leat an hour (I make the loaf the day before and leave it rolled in the fridge over night to be baked the next day).
- Place the meatloaf on a roasting rack in a roasting pan and bake in a 350F oven for 1 hour.
- If you are using the ketchup spread it on top of the loaf before putting it in the oven.
