SPANISH GREEN BEANS WITH GARLIC AND PAPRIKA
Steps:
- Rinse 1/2 lbs (250g) of fresh green beans under cold running water, shake off any of the excess water and cut off 1/2 inch from each end of each green bean, also thinly slice 5 cloves of garlic
- Heat a fry pan with a medium heat and add a 1/4 cup of cold water, once the water comes to a light boil add the green beans into the pan and place a lid on top
- Three minutes after adding the lid remove it, there should be almost no water left in the pan, drizzle in a generous tbsp of extra virgin olive oil and the thinly sliced garlics, mix everything together, continue to mix so the garlics can lightly cook, you don´t want to brown the garlics, just make them fragrant
- After 2 minutes turn off the heat, add in 1 tsp of sweet smoked paprika and season everything with sea salt & freshly cracked black pepper, mix together until well combined, very important to turn off the heat so the paprika does not get a bitter flavor
- Transfer the green beans into a serving dish, making sure to grab all the garlics in the pan and garnish with lemon wedges, enjoy!
SPANISH GREEN BEANS AND TOMATOES

Steps:
- Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
- Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

STRING BEANS WITH GARLIC
Steps:
- Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.
SPANISH GREEN BEAN SALAD
I have been making this recipe for more than 25 years. It is easy-to-make and very colourful. Serve it cold, warm or at room temperature -- I prefer at room temp. It's a great make-ahead recipe because it keeps well for several days in the fridge. Adapted from a Better Homes and Gardens cookbook.

- Cook beans in the microwave for 6-7 minutes until crisp-tender. Or you can cook in a pan with a small amount of boiling water.
- Put the next 9 ingredients (dressing) in a jar with a lid. Cover and shake well.
- Pour dressing over beans, stir well and refrigerate (I usually put this all in a container with a tight-fitting lid and shake the dickens out of it).
- Serve over shredded lettuce -- at whatever temperature you prefer. It takes at least an hour for this to come to room temperature after being in the fridge.

- In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
- In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
- Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
- Season with salt and pepper. Serve warm.

SPANISH GREEN BEANS WITH POTATOES
Translated from Karlos Arguiñano's "Atrévete a cocinar". NOTES: (1) Green beans in Spain are longer and flatter. Once I had them cooked and before I ate them I mistook them for spinach pasta. I would only suggest this recipe if you can get these type of beans, or if you know how to adapt the recipe, because I'm thinking, given their size and shape, that they are prepared and cooked a bit differently than their rounder cousins. (2) When this author refers to a tbsp it means a soup-spoonful. The water was originally described as two tumbler-glasses full.

- Boil water in saucepan.
- Clean green beans, remove tips with knife and remove threads along the sides using a vegetable peeler. If they are broad, slice them in half lengthwise. If not, leave them as they are. Then cut all beans into 4 cm pieces.
- Peel potato and cut them into stew chunks.
- Add green beans and potato to saucepan, season with salt to taste and let simmer 30 minutes.
- Peel garlic cloves, slice width-wise and fry in 4 tbsp oil in a small pan. When they are golden-brown, add them along with hot oil to green beans and let boil 2 minutes so that the flavors mix. Serve on plates.
