2 tablespoons butter
8 ounces green beans, trimmed
1 tablespoon soy sauce

Steps:

  • Heat a cast-iron skillet over medium-high heat. Add the butter and when melted, add the beans. Let the beans sit and blister for about 90 seconds, then toss and allow to blister some more. Add the soy sauce, toss to coat the beans and serve.

Green Bean Casserole With Crispy Pancetta and Buttermilk Fried Onions | Lodge Cast Iron image

Dress up that traditional green bean casserole this year with pancetta and homemade buttermilk fried onions.

Number Of Ingredients 19

2 of pounds green beans, stems removed
6 tablespoons of unsalted butter, divided
2 of large shallots, thinly sliced
6 of cloves garlic, minced
½ of pound cremini mushrooms, sliced
1 teaspoon of thyme
4 tablespoons of all-purpose flour
½ teaspoon of paprika
1 cup of chicken stock
1 cup of cold heavy cream
2¾ teaspoon of kosher salt, divided
½ teaspoon of pepper
1 of medium onion, thinly sliced (with the grain)
1 cup of buttermilk
1 cup of all-purpose flour
½ teaspoon of salt
½ teaspoon of pepper
1½ cups of vegetable oil (for frying)
8 ounces of diced pancetta

Steps:

  • Soak onions in buttermilk, 5 minutes.
  • In a separate bowl, combine flour, salt and pepper. Remove onions from buttermilk and allow excess to drip off. Toss with seasoned flour and set aside.
  • Heat a 12 inch skillet over medium heat with vegetable oil. When the oil starts to shimmer, working in batches, add onions and fry for 3 minutes or until golden brown.
  • After frying the onions, add diced pancetta to the hot oil. Fry until crispy, 2 minutes. Drain on the paper towel with the onions.
  • Remove oil from the skillet and wipe out the skillet.
  • Preheat oven to 400 degrees F.
  • Bring a large pot of water to a rolling boil. Add 2 tablespoons of salt and add the green beans. Boil for 7 minutes. Drain and add to a large bowl of ice water to stop cooking. Drain from ice water and set aside.
  • In a 12 inch skillet, melt 2 tablespoons of butter over medium-high heat. Add shallots and cook until softened, 3 minutes. Add the garlic and continue to cook for 2 minutes. Add the sliced mushrooms, thyme, and 2 tablespoons of butter. Sauté, stirring occasionally, for 5-7 minutes.
  • Remove the sautéed mushrooms from the skillet. Lower heat to medium. Melt 2 tablespoons of butter and add the flour and stock, whisking until smooth. Slowly add the heavy cream, continuing to whisk until smooth.
  • Stir in the mushrooms and bring to a boil. Remove from heat and season with salt and pepper.
  • Assemble the casserole, by spreading green beans in the bottom of the Casserole pan. Spread the mushroom sauce over the green beans and toss lightly. Bake for 25 minutes.
  • Remove from the oven and top with crispy onions and pancetta mixture.

1 tablespoon balsamic vinegar
2 teaspoons olive oil
1/2 teaspoon dried rosemary leaves, finely crushed
1/2 teaspoon dried thyme leaves
1/4 teaspoon sea salt, freshly ground
1/8 teaspoon ground black pepper

Steps:

  • Add beans to medium saucepan with water to cover and bring to a boil.
  • Reduce heat to low; simmer 4 to 6 minutes or until crisp-tender. Drain. Return beans to pan.
  • Add vinegar, oil, and spices to pan, tossing with beans.
  • Cook and stir over medium heat 1 to 2 minutes or until heated through.

1 stick (1/2 cup) unsalted butter, softened to room temperature
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh parsley
1 teaspoon finely grated lemon zest
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
One 1-pound rib-eye steak (about 1 inch thick)
Kosher salt and freshly ground black pepper
One 3-inch sprig fresh rosemary, needles stripped from the stem and chopped
1 tablespoon safflower oil or other flavorless oil
8 ounces thin French green beans, trimmed

Steps:

  • For the herbed butter: Add the butter, chives, oregano, parsley, lemon zest, garlic and some salt and pepper to a bowl and mix together well.
  • Put the butter in the center of a piece of plastic wrap and, using the plastic wrap, form it into a sausage shape. Seal it and pop it in the fridge for 1 hour.
  • For the steak: Allow the steak to rest at room temperature for about 15 minutes. Fill a saucepan with some water, add a generous pinch of salt and bring to a boil. This is for cooking the string beans so it's all ready at the same time.
  • Season both sides of the steak well with the chopped rosemary and some salt and pepper.
  • Heat a cast-iron skillet over high heat until smoking. Add the oil and allow it to heat up for 1 more minute. Add the steak to the hot skillet and cook about 4 minutes per side for medium-rare. Remove to a plate, cover with a piece of aluminum foil and allow it to rest for 5 minutes.
  • For the green beans: Meanwhile, add the green beans to the salted boiling water and cook until bright green and crisp-tender, 3 to 5 minutes. Drain well.
  • When ready to serve, toss the green beans with about 2 tablespoons of the herbed butter. Slice the steak and top with a piece of the herbed butter.

6 of slices bacon
1 cup of sliced mushrooms
1 cup of chopped onions
1 of clove garlic, minced
2 tablespoons of chopped fresh parsley
1 tablespoon of dried parsley
2 tablespoons of bacon drippings
2 of cans (16 oz.) green beans, drained
½ teaspoon of salt
¼ teaspoon of rosemary
¼ teaspoon of marjoram
½ teaspoon of black pepper

Steps:

  • In skillet, fry bacon. Crumble and set aside.
  • Remove all but 2 tablespoons bacon drippings from skillet. Sauté mushrooms, onions, garlic, and parsley in bacon drippings.
  • Stir drained beans into sautéed mixture with remaining seasonings and simmer 20 minutes.
  • Top with crumbled bacon before serving.

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp, about 5 minutes. Add the beans, brown sugar and water. Stir gently; bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15 minutes. Remove to a serving bowl with a slotted spoon.

Steps:
