Black Bean and Couscous Salad image

This is a great salad for a buffet, with interesting textures and southwest flavors combined in one delicious salad. Leftovers store well refrigerated for several days.

1 cup uncooked couscous
1 ¼ cups chicken broth
3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon red wine vinegar
½ teaspoon ground cumin
8 green onions, chopped
1 red bell pepper, seeded and chopped
¼ cup chopped fresh cilantro
1 cup frozen corn kernels, thawed
2 (15 ounce) cans black beans, drained
salt and pepper to taste

Steps:

  • Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
  • In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat.
  • Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

  • Stir in bell pepper, chili sauce, tomatoes, cumin, marjoram, garlic powder and salt; reduce heat to medium-low. Cover and simmer about 10 minutes or until lamb is light pink in center.

ISRAELI COUSCOUS, BEAN AND TOMATO SALAD



Israeli Couscous, Bean and Tomato Salad image

Finely chopped tomatoes seasoned with garlic, balsamic vinegar and basil serve as both dressing and vegetable in this main dish salad. I've been making tomato concassée all summer and using it as a sauce for pasta and fish. I decided to use it as a stand-in for salad dressing in this hearty salad, a simple combination of cooked Israeli couscous and beans. I used canned pinto beans, and they were just fine. Chickpeas would also work. Use lots of basil in the mix. The red onion contributes some crunch. You can add a little celery if you want more texture. Make sure to use sweet, ripe, juicy tomatoes. I love the finishing touch of the feta, but it is optional.

3/4 pound ripe, sweet tomatoes, finely chopped (about 1 1/3 cups chopped)
1 plump garlic clove, puréepureed with a little salt or put through a press
Salt to taste
2 teaspoons balsamic vinegar (more to taste)
3 tablespoons extra- virgin olive oil
2 cups cooked pinto beans (or other beans of your choice) (if using canned beans, drain and rinse)
2 cups cooked Israeli couscous
1/2 to 2/3 cup chopped red onion
1/3 cup chopped fresh basil
3 tablespoons chopped chives
Freshly ground pepper
Romaine lettuce leaves for serving
Feta cheese for topping (about 1/2 cup, optional)

Steps:

  • In a large bowl, combine finely chopped tomatoes, garlic, salt, balsamic vinegar, and olive oil. Add beans and Israeli couscous and toss together. Let sit for 10 to 15 minutes (or longer).
  • Meanwhile, place chopped onion in a small bowl and cover with cold water. Soak 5 minutes, drain and rinse. Drain on paper towels and add to couscous and bean mixture. Add basil, chives, and pepper, and toss together.
  • Line plates or a platter with lettuce leaves. Top with salad. Sprinkle feta over the top and serve.

1/4 tsp cumin powder (.75 grams)
1/4 tsp cinnamon powder (.65 grams)
1 tbsp dried cilantro (1.83 grams)
1 cup vegetable broth (250 ml)
1 cup couscous (150 grams)
2 tbsp extra virgin olive oil (45 ml)
1 zucchini
1 onion
3 cloves garlic
1 large tomato
1/2 tsp cumin powder (1.25 grams)
1/2 tsp ginger powder (.88 grams)
1/4 tsp cinnamon powder (.65 grams)
1/2 tsp dried cilantro (.30 grams)
1/4 tsp hot smoked Spanish paprika (.57 grams)
1/4 tsp saffron threads (.17 grams)
1/8 tsp ground cloves (.27 grams)
sea salt & black pepper
2 tbsp cashews (fried & salted) (19 grams)
2 tbsp raisins (20 grams)

Steps:

  • Cut one zucchini into rounds that are a little over 1/2 inch (1.27 cm) thick, then cut each round into 9 evenly sized pieces to end up with cubes of zucchini, thinly slice 1 onion, thinly slice 3 cloves of garlic and finely grate 1 large tomato
  • Add 1/2 tsp cumin powder into a bowl, along with 1/2 tsp ginger powder, 1/4 tsp cinnamon powder, 1/2 tsp dried cilantro, 1/4 tsp hot smoked paprika, 1/4 tsp saffron threads and 1/8 tsp ground cloves, mix together until well combined
  • Heat a sauce pan with a medium to medium-high heat, add in 1 tbsp extra virgin olive oil, a generous 1/4 tsp cumin powder, 1/4 tsp cinnamon powder and 1 tbsp dried cilantro, mix together, after 1 minute add in a generous cup of vegetable broth, once it comes to a boil add in 1 cup of couscous, give it a quick mix, place a lid on the pan and turn off the heat
  • Meanwhile, heat a fry pan with a medium heat and add in 2 tbsp extra virgin olive oil, after 2 minutes add in the sliced onion, chopped zucchini and sliced garlic, mix with the olive oil, after 6 minutes and the onion & zucchini are translucent, add in the spice blend, mix together until well combined, then add in the grated tomato and season with sea salt & black pepper, mix together and let it simmer on a medium heat for about 5 minutes
  • About 10 minutes after turning off the heat on the couscous remove the lid, add in 2 tbsp cashews and 2 tbsp raisins, using a fork fluff up the couscous
  • Grab the vegetables that have been simmering and transfer into serving dishes, top off with the couscous and sprinkle with freshly chopped parsley, enjoy!

I love the flavor of this refreshing salad. A friend gave me this recipe and I pass it along to as many people as I can. Everyone that tries it loves it. Someone told me they put some of the mixture over their fish and/or chicken.

3 tablespoons couscous
2/3 cup water
1/4 cup frozen corn
3/4 cup canned black beans
1 medium tomatoes, fresh
1/2 bell pepper
1 clove garlic
1 green onion
1 tablespoon fresh parsley
1 tablespoon fresh cilantro
1/4 teaspoon black pepper
3 teaspoons fresh lime juice
1/4 teaspoon cumin

Steps:

  • Prepare couscous according to recipe, but omit the salt.
  • Bring water to a boil over high heat; remove from heat, add couscous, stir and cover.
  • Let stand for 5 minutes.
  • Fluff with fork.
  • Cook frozen corn in microwave till slightly tender, drain and chill.
  • Rinse and drain the black beans.
  • Rinse and chop tomato, pepper, garlic, green onion, cilantro and parsley, set aside.
  • In a bowl, combine chopped vegetables with beans, corn, black pepper, lime juice, cumin and couscous, toss well and refrigerate for at least 30 minutes before serving.

1 cup lentilles du Puy* (French green lentils) or brown lentils
3 tablespoons white-wine vinegar
1 1/4 cups water
1 cup couscous
1/2 teaspoons salt
1/4 cup olive oil (preferably extra-virgin)
1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/2 cup finely chopped fresh mint leaves
1 bunch arugula, stems discarded and leaves washed well, spun dry, and chopped
2 cups vine-ripened cherry tomatoes, halved
1/4 pound feta, crumbled (about 1 cup)
*available at specialty foods shops and some supermarkets

Steps:

  • In a small saucepan simmer lentils in water to cover by 2 inches until tender but not falling apart, 15 to 20 minutes, and drain well. Transfer hot lentils to a bowl and stir in 1 tablespoon vinegar and salt and pepper to taste. Cool lentils completely, stirring occasionally.
  • In a saucepan bring water to a boil and add couscous and salt. Remove pan from heat and let couscous stand, covered, 5 minutes. Fluff couscous with a fork and transfer to a large bowl. Stir in 1 tablespoon oil and cool completely, stirring occasionally.
  • In a small bowl whisk together garlic paste, remaining 2 tablespoons vinegar, remaining 3 tablespoons oil, and salt and pepper to taste. Stir lentils and dressing into couscous. Chill salad, covered, at least 3 hours and up to 24.
  • Just before serving, stir in remaining ingredients and season with salt and pepper.

This Israeli/Middle Eastern-inspired couscous salad with elements of Spanish cuisine is full of healthy ingredients and easy to make. If you can't find Israeli couscous (also known as pearl couscous) use the standard type. However, quinoa, orzo or other small pasta shapes can replace the couscous. From Good Housekeeping and slightly adapted by me. I had to stop my fingers from typing: "stir in 1/2 teaspoon orange blossom water with the prunes."

14 ounces vegetable broth (unsalted) or 14 ounces chicken broth (unsalted)
15 -19 ounces garbanzo beans, cooked and drained
2 green onions, sliced

1/2 cup prune, pitted and diced small (can substitute dried dates or dried figs if you prefer)
1/2 lb Baby Spinach, washed and spun dried
2 medium valencia oranges (original recipe specified navel oranges)
1/4 cup sliced almonds, toasted
fresh parsley, minced (my addition)
1/4 cup extra virgin olive oil
1/4 cup freshly squeezed orange juice
1/2 tablespoon agave nectar (sugar or honey can be used instead)
1/4 cup balsamic vinegar (I used 2 tablespoons white balsamic and 2 tablespoons dark aged balsamic)
1/8 teaspoon spanish smoked paprika (optional and my addition)
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons water

Steps:

  • Cook the couscous in the vegetable broth but *do not* add any salt or butter.
  • Drain. Set aside to cool.
  • Vinaigrette: Whisk the vinaigrette ingredients together. Taste and adjust seasoning if necessary.
  • In a large bowl combine the vinaigrette with the cooked and cooled couscous, garbanzo beans, green onions, red onions and prunes. Toss well to combine.
  • Line a platter or individual salad plates with the baby spinach.
  • Arrange the couscous mixture on the spinach.
  • Peel one orange,remove the pith and slice. Peel the other orange, remove the pitch and cut into small bite-size chunks.
  • Arrange the orange slices around the edges and the chunks around and on top of the couscous.
  • Garnish with the almonds and fresh parsley.
