SPAM® Fries with Spicy Garlic Sriracha Dipping Sauce image

SPAM® is an oft-maligned meat product in a can that you either love or hate! If you're not vegan with a gluten allergy who runs marathons but doesn't own a TV, this little appetizer will surely please!

Provided by The Gruntled Gourmand

Categories     Side Dish     Fries Recipes

Time 55m

Yield 8

Number Of Ingredients 8

1 clove garlic, minced
½ teaspoon paprika
1 pinch salt
1 cup mayonnaise
1 tablespoon sriracha sauce
1 tablespoon ketchup
1 quart vegetable oil for frying
2 (12 ounce) cans fully cooked luncheon meat (such as SPAM®), sliced into fries

Steps:

  • Process garlic, paprika, and salt in a food processor until smooth. Add mayonnaise, sriracha sauce, and ketchup; process until sauce is well-combined. Transfer sauce to a bowl, cover the bowl with plastic wrap, and refrigerate until chilled.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Rinse luncheon meat 'fries' with cool water and pat dry.
  • Working in batches, cook 'fries' in preheated oil until browned and crispy on the outside and still moist on the inside, 4 to 6 minutes. Remove to a paper towel-lined plate. Transfer 'fries' to a plate and serve with chilled dipping sauce.

SPAM MUSUBI

Spam Musubi image

Spam Musubi is a popular snack in Hawaii. It is a type of sushi that has marinated cooked spam in sushi. I got this recipe from a local Hawaiian friend when I was living there.

Provided by Rashad Maiden

Categories     Appetizers and Snacks     Meat and Poultry     Pork

Time 5h25m

Yield 10

Number Of Ingredients 9

2 cups uncooked short-grain white rice
2 cups water
6 tablespoons rice vinegar
¼ cup soy sauce
¼ cup oyster sauce
½ cup white sugar
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam)
5 sheets sushi nori (dry seaweed)
2 tablespoons vegetable oil

Steps:

  • Soak uncooked rice for 4 hours; drain and rinse.
  • In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Stir in rice vinegar, and set aside to cool.
  • In a separate bowl, stir together soy sauce, oyster sauce, and sugar until sugar is completely dissolved. Slice luncheon meat lengthwise into 10 slices, or to desired thickness, and marinate in sauce for 5 minutes.
  • In a large skillet, heat oil over medium high heat. Cook slices for 2 minutes per side, or until lightly browned. Cut nori sheets in half and lay on a flat work surface. Place a rice press in the center of the sheet, and press rice tightly inside. Top with a slice of luncheon meat, and remove press. Wrap nori around rice mold, sealing edges with a small amount of water. (Rice may also be formed by hand in the shape of the meat slices, 1 inch thick.) Musubi may be served warm or chilled.

  • For the spicy peanut sauce, first shake well your can of coconut milk. Then add all the ingredients, except water, to a pot and cook over medium heat. Stir as you cook until the sugar is dissolved and everything is heated through.
  • For the sweet and spicy sauce, first mince the garlic and finely chop the fresh chili if using. Remove some seeds if you prefer a less spicy sauce. In a saucepan, combine the vinegar, 1/2 cup water, sugar, garlic, soy sauce, and chopped chili or pepper flakes.
  • For the Yum sauce, simply combine all the ingredients except water in a small mixing bowl. Stir together. Taste and add more salt or seasoning you prefer.
