SPAM® AND POTATO SOUP
A hearty, comforting soup is spiced up with a hit of SPAM® Classic or other variety and topped with Cheddar cheese.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour. When potatoes are cool enough to handle, scoop potato flesh out into a bowl and mash lightly with a fork.
- Cook and stir SPAM® Classic in a skillet over medium heat until browned (optional).
- Melt butter in a large pot over medium-low heat; stir in flour to form a smooth roux. Cook and stir roux until well combined and bubbling; stir in milk. Season with salt and pepper.
- Cook milk mixture, stirring continuously, until it thickens, about 5 minutes; stir in potatoes and SPAM® Classic and cook until heated through.
- Serve in bowls and garnish each with about 1/4 cup of Cheddar cheese.

POTATO SOUP

- Preheat oven to 400 degrees Fahrenheit.
- In a heavy 1 1/2-gallon stock pot, heat the chicken stock. Add thyme, salt, and pepper.
- In a food processor, puree raw potatoes and onions. Add to stock. Simmer slowly for 1 1/2 to 2 hours. Add whipping cream and diced baked potatoes. (If soup becomes too thick, thin with water).
- To serve, ladle 8 ounces of hot soup into an oven proof serving bowl or slow cooker. Top with 2 to 3 ounces of shredded cheddar cheese. Place under the broiler for 4 to 6 minutes or until cheese is melted.
- Place on plate. Top with 1 tablespoon sour cream, 1 tablespoon diced scallions, and 1-tablespoon bacon, and serve.
CHEDDAR, POTATO & SPAM® SOUP

Steps:
- Place the potatoes, carrots, onion and chicken stock into a large pan, bring to the boil, cover and simmer. Simmer for 15 minutes or until the potatoes are tender.
- Meanwhile in another pan melt the butter and add the flour, stir until smooth. Now gradually add the milk, bring to the boil and stir for a further 2 minutes or until thickened.
- Add to the potato mixture, stir in the cheese until melted. Now add the SPAM® and sweetcorn, heat through and season to taste.
- Serve with crusty bread.
SPAM & POTATO CASSEROLE
This is my son J.J.'s favortie meal. If I use red potatoes I use about 9 since they are small. This is so rich and creamy. It's like Au Gratin potatoes.

Steps:
- Slice potatoes into round slices, very thin.
- Chop onion and spam into small chunks and combine with potatoes. Salt and pepper these.
- Place potatoes & onions in a casserole dish.
- Mix Cheze-Whiz, soup, milk and Season All or Season Salt, in sauce pan and heat until chez-whiz is melted.
- Pour over the potatoes and spam.
- Bake for 1 hour at 375 degrees, maybe longer until potatoes are tender.
SPICY POTATO SOUP

- Warm the oil and butter together in a saucepan and add the chopped onion. Cover with a lid and cook over a medium heat for a few mins before adding the curry powder. Add the potato and continue to cook for a further 5-10 mins.
- Pour the milk and 500ml water over the potatoes, then sprinkle in the vegetable stock cube. Bring to a simmer and cook for 15-20 mins until the potatoes are completely tender. Season with a pinch of salt and blitz in a blender until smooth. For a slightly sweet touch, add the mango chutney, a teaspoon at a time to suit your taste, liquidising until smooth. Divide the soup into bowls, finishing with the coriander leaves if you have them.
POTATO & SPAM SKILLET (WIMPY FRIES)
Wimpy fries. If you like fried potatoes and cheese (who doesn't?) you are going to love this. Absolute family favorite and easy to make. The jalapeno sauce, which is optional, is very mild and adds a lot of flavor, not heat. Also, sometimes I like a couple of egg's over easy on the side with mine, just a personal preference. Enjoy.

- Add oil, spam, green pepper, onion, potatoes and spices to a large skillet over medium heat. If you like a little spice add a couple of good shakes of jalapeno sauce, it's very mild. Mix with an egg flipper then cover tightly with aluminum foil and set timer for 5 minutes.
- After 5 minutes flip mixture over and repeat like this for 30 minutes (5 minutes cover, flip, etc) if it starts to stick to the pan add 3 or 4 tbs water, this helps to make steam which will cook the potatoes.
- When you see the potatoes breaking down around the edges stick a fork in one, if it goes in you will know it is done.
- This make 6 servings so when you plate it take 2 cheese slices per plate and pull them into stripes and lay on top of fries (an extra slice of cheese at this point never hurts either), nuke for 45 seconds on high and serve.
- Optional: Some people like a couple of shakes of jalapeno sauce on top, some do not. It adds a lot of flavor, not a lot of heat.
- DO NOT USE REGULAR HOT SAUCE IN PLACE OF THE JALAPENO, JUST LEAVE IT OUT.
- Also, when you cut up your potatoes don't make them all exactly the same size, you will get a better texture in the finished product this way.
