1/2 English cucumber, cut lengthwise, sliced into thin half-moons
1 pinch sea salt
1 teaspoon raw sugar
1 teaspoon gluten-free soy sauce
1 tablespoon rice wine vinegar
2 teaspoons sesame seeds

Steps:

  • In a large bowl, combine cucumber and salt; mix well.
  • Add sugar, soy sauce, and vinegar; mix well.
  • Sprinkle with sesame seeds and mix.
  • Let marinate 10 minutes.
  • Drain and serve.
  • Enjoy!

2 cups thinly sliced Japanese cucumbers
1 teaspoon salt
1 tablespoon sugar
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
2 teaspoons sesame seeds

Steps:

  • If Japanese cucumbers are not available, English cucumbers can be substituted. The English cucumbers need to be peeled, cut lengthwise, seeded and sliced into thin half moons. In a large bowl, combine cucumbers and salt and mix well. Add sugar, soy sauce, rice wine vinegar and sesame oil and mix well. Sprinkle with sesame seeds and mix. Let marinate for 20 minutes before serving. Adjust seasonings before serving.

2 garlic cloves, finely chopped
1/4 cup olive oil
1/4 cup mint leaf, finely chopped
3 cups natural yogurt
1/2 teaspoon black pepper
1/4 teaspoon salt
5 cucumbers, seeded and sliced
1 yellow lemon, cut in slices
4 mint leaves, for decoration

Steps:

  • Cut cucumbers lengthwise, remove seeds, cut accross in slices.
  • In a bowl, mix yogurt, olive oil, garlic, sliced mint.
  • Season with black pepper and salt.
  • Refrigerate until ready to serve.
  • Serve in individual bowls.
  • Decorate with lemon slices and mint leaves.

with an asian flair, this is wonderful as a first course or a side dish to tame the heat of spicier dishes.

Number Of Ingredients 8

1 1/2 teaspoons dry wasabi powder (or to taste)
2 cucumbers or 1 English cucumber
2 tablespoons rice wine vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon salt & freshly ground black pepper
2 scallions, thinly sliced
1 tablespoon toasted sesame seeds (or use black sesame seeds)

Steps:

  • Mix the wasabi with 1/2 teaspoon warm water in the bottom of a mixing bowl and let it stand for 5 minutes.
  • Peel the cucumbers, cut each one in half lengthwise, and use a melon baller or spoon to scoop out the seeds. slice thinly widthwise.( if using english hothouse just cut in half lengthwise and slice thinly).
  • Add the vinegar and sugar to the wasabi and whisk until smooth.
  • Whisk in the sesame oil, salt and pepper. Just before serving, add the cucumbers, green onion, and sesame seeds to the dressing and mix well.
