Spaghetti with Mussels and Tomatoes image

This simple pasta dish uses canned mussels that are marinated in a smoked paprika and fennel tomato sauce, making the sauce for this pasta nearly finished! Add salt to some halved cherry tomatoes to let them juice out slightly and combine it with the canned mussels and sauce, and a bit of pasta cooking water to complete the dish. It's as simple as that!

1/2 cup halved cherry tomatoes
Kosher salt
1 3.5-ounce tin mussels, preferably packed in a smoked paprika and fennel tomato sauce
2 tablespoons chopped fresh parsley
2 tablespoons chopped scallions
1 tablespoon fresh lemon juice, plus a lemon wedge, for serving
1 tablespoon olive oil
4 ounces spaghetti, cooked

Steps:

  • Season the tomatoes with salt in a large bowl; let sit 15 minutes. Stir in the mussels, parsley, scallions, lemon juice and olive oil.
  • While the tomatoes sit, cook the pasta in a pot of boiling, salted water according to the label. Drain, then toss with the tomato-mussels mixture, adding a splash of pasta cooking water to loosen, if needed. Serve with a lemon wedge.

1 package (16 ounces) spaghetti
2 pounds fresh tomatoes, seeded and chopped
12 ounces part-skim mozzarella cheese, cut into 1/4-inch cubes
1-1/4 cups julienned fresh basil
1 can (2-1/4 ounces) sliced ripe olives, drained
4 teaspoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
3 garlic cloves, minced
2 tablespoons olive oil

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large serving bowl, combine the tomatoes, cheese, basil, olives, vinegar, salt and pepper. Drain spaghetti; add to tomato mixture and toss to combine. , In a small nonstick skillet over medium heat, cook garlic in oil until tender. Pour over spaghetti mixture; toss to coat.

2 tablespoons olive oil
4 teaspoons minced garlic
2 tablespoons fresh thyme leaves
2 cups finely chopped onions
2 lbs fresh mussels, scrubbed and debearded (discard any that are open)
1 1/2 cups white wine
1/2 cup heavy cream
8 roma tomatoes, roughly chopped
1/2 teaspoon chili flakes
2 tablespoons chopped fresh flat leaf parsley
1/4 cup parmesan cheese
salt & pepper

Steps:

  • Bring large pot of water to boil.
  • Heat 1/2 olive oil in large pot. Add 1/2 garlic & onion as well as the thyme.
  • Add mussels and mix well.
  • Add wine and cream. Cover with lid and steam 4-5 minutes. Discard any that do not open.
  • In another pot add rest of oil, garlic and onion. Saute lightly. Do not brown.
  • Add tomatoes and chili flakes. Saute till tomatoes release their juices. (about 2 min).
  • Pour liquid from mussels over tomatoes and simmer about 3 minutes.
  • Cook spaghetti in water until al dente about 3 minutes.
  • Drain pasta and mix with tomatoes and mussels. season to taste with salt & pepper.
  • Sprinkle with parsley and cheese.

Stir to separate the strands and cook until just under al dente, tender but firm to the bite, stirring occasionally with a wooden spoon. Drain the pasta in a colander, reserving 1/2 cup (120 milliliters) of the pasta cooking water.
  • Meanwhile, in a large sauté pan over medium heat, combine 4 tablespoons (60 milliliters) of olive oil, 1 clove garlic, pepper flakes, and the parsley sprig and simmer until the garlic turns lightly golden and begins to softens. Raise the heat slightly and add the mussels to the pan. Cover the pan and sauté until the shells open, about 2 to 4 minutes, shaking the pan occasionally. Remove the pan from the heat.
  • Using a fine-mesh sieve, strain the mussels over a bowl to get rid of any sand and grit, reserving the juices. Discard the unopened shells, garlic, and the parsley sprig. In a medium bowl, set aside a few mussels in their shells to garnish the plates when serving. Remove the meat from the remaining shells and place in the bowl. Discard the shells.
  • In the same pan over moderate heat, combine the remaining olive oil and garlic and saute' until the garlic turns lightly golden and begins to soften. Add the tomatoes to the pan and stir occasionally for about 2 minutes or until the tomatoes begin to soften.
