As children, we always requested this dish for our birthday dinners. Our mother got the recipe from her grandmother. Now I pass on our tasty tradition. -Ruth Keogh, North St. Paul, Minnesota

8 ounces uncooked spaghetti
1/2 pound bacon strips, chopped
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente., In a large skillet, cook bacon and onion over medium heat until bacon is crisp, stirring occasionally; drain. Stir in tomatoes and tomato sauce; bring to a boil., Drain spaghetti; transfer to a greased 11x7-in. baking dish. Spread sauce over top. Bake, covered, 40-45 minutes or until bubbly. If desired, sprinkle with parsley.

I make this version of spaghetti sauce more often than the regular ground beef/marinara version. It is a nice spicy smoky alternative to the usual sauce. Very easy to make.

1/2 lb bacon, diced
1 medium onion, diced
1 (26 ounce) jar plain spaghetti sauce
1 clove garlic, minced
1/8 teaspoon cayenne pepper

Steps:

  • In a skillet, cook bacon on low heat until done.
  • Remove bacon from skillet to a paper-towel covered plate to drain.
  • Cook onion in skillet with bacon grease until onion is soft.
  • Drain onion.
  • Combine bacon, onion, spaghetti sauce, garlic, and cayenne pepper in skillet.
  • Simmer for 15 minutes.
  • Serve over spaghetti.

Cowboy Spaghetti is a hearty pasta recipe loaded with bacon, ground beef, Rotel diced tomatoes and green chilies, tomato sauce, bbq sauce, shredded cheese and chopped green onions.

12 oz spaghetti noodles
8 slices bacon
1 lb lean ground beef
1 cup diced yellow onions
1 tbsp garlic puree
15 oz tomato sauce
1/2 cup bbq sauce
1/2 tsp salt
1/2 tsp pepper
10 oz Rotel diced tomatoes and green chilies, drained
1 1/2 cups shredded mozzarella and cheddar cheese blend
1/4 cup chopped green onions

Steps:

  • Cook the spaghetti according to the directions on the package.
  • Drain and set aside.
  • While the spaghetti is cooking chop up the bacon.
  • Place the chopped bacon in a large oven safe skillet over medium-high heat.
  • Cook the bacon until it is crispy.
  • Use a slotted spoon to transfer the cooked bacon pieces to a paper towel lined plate.
  • Add the ground beef to the skillet with the bacon grease.
  • Crumble the ground beef well as it cooks.
  • Cook the ground beef until no pink remains.
  • Drain all of the grease from the pan.
  • Reduce the heat to medium-low.
  • Add the diced onions and garlic puree to the pan with the ground beef.
  • Stir well and allow the onions to cook for a few minutes.
  • Add the tomato sauce and bbq sauce to the pan.
  • Stir well.
  • Add the salt and pepper.
  • Stir well again.
  • Add the Rotel to the pan.
  • Add half of the cooked bacon pieces to the pan.
  • Stir well.
  • Add the cooked spaghetti to the pan.
  • Stir until all of the spaghetti is coated in the sauce mixture.
  • Sprinkle the shredded cheese on top of the spaghetti.
  • Sprinkle the remaining cooked bacon pieces on top of the cheese.
  • Place the skillet under the broiler for a few minutes to melt the cheese.
  • Once the cheese is melted remove the skillet from the oven.
  • Sprinkle the chopped green onions on top.
  • Serve and enjoy.

This is my dad's famous spaghetti recipe that uses bacon instead of ground beef. It has a sweet flavor to it and is very different from the usual spaghetti sauce. You have to try it!

1 chopped sweet onion (Vidalia)
1 lb uncooked bacon
1 (14 1/2 ounce) can stewed tomatoes (drained)
1 (10 ounce) jar ragu spaghetti sauce (use whatever flavor suites you)
1 (3 7/8 ounce) can mushrooms (drained)
1/2 cup brown sugar
1 tablespoon garlic powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Chop bacon strips into about 1 inch (or smaller) pieces.
  • Using a large skillet, heat the bacon on med/high until cooked but do NOT let it get crispy! (about 7 min.).
  • Add the chopped onions, mushrooms and stewed tomatoes and let sauté for about 5 minutes.
  • Turn heat down to low.
  • Add the Ragu, brown sugar, and seasonings.
  • Let simmer for 20 minutes.
  • Stir occasionally.

1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

1 (16 ounce) package spaghetti
¼ cup olive oil
8 slices bacon, cut into 1/4 inch pieces
4 cloves garlic, minced
½ cup chopped fresh flat-leaf parsley

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the bacon, and cook until the bacon has begun to shrink, about 3 minutes. Add the garlic, and continue cooking and stirring until the garlic has softened, and the bacon is crisp, about 5 minutes. Toss the drained pasta with the bacon, oil, and parsley to serve.

1/2 pound ground beef
1/2 pound ground pork
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium carrots, chopped
1 medium onion, chopped
6 thick-sliced bacon strips, chopped
8 garlic cloves, minced
1 cup dry white wine
1 can (28 ounces) whole tomatoes, crushed slightly
1-1/2 cups chicken stock or reduced-sodium chicken broth
1 package (16 ounces) spaghetti
3 tablespoons butter, cubed
1 cup grated Parmesan cheese

Steps:

  • In a 6-qt. stockpot, cook beef and pork over medium heat, 5-7 minutes, until no longer pink, breaking both into crumbles. Stir in salt and pepper. Remove from pot with a slotted spoon; pour off drippings., Add carrots, onion and bacon to same pot; cook and stir over medium heat 6-8 minutes or until vegetables are softened. Add garlic; cook 1 minute longer. Return meat to pot; add wine. Bring to a boil, stirring to loosen browned bits from pan; cook until liquid is almost evaporated., Add tomatoes and stock; return to a boil. Reduce heat; simmer, covered, 3-4 hours to allow flavors to blend, stirring occasionally., To serve, cook spaghetti according to package directions for al dente; drain. Stir butter into meat sauce; add spaghetti and toss to combine. Serve with cheese.
