12 ounces spaghetti
Coarse salt and freshly ground pepper
10 ounces tuna packed in olive oil (from 1 to 2 tins)
3 cloves garlic, thinly sliced
2 tablespoons capers, preferably salt-packed, rinsed and drained
Pinch of red-pepper flakes, plus more for serving
1 teaspoon grated lemon zest, plus 1 tablespoon juice (from 1 lemon)
2 tablespoons extra-virgin olive oil
1/4 cup coarsely chopped fresh flat-leaf parsley leaves

Steps:

  • Cook pasta in a large pot of generously salted water until al dente. Reserve 1 1/2 cups pasta water; drain.
  • Heat a large skillet over medium heat. Add tuna with its oil and garlic and cook, stirring a few times, until garlic is golden in spots, about 5 minutes. Stir in capers and pepper flakes and cook, 30 seconds. Add 1 cup reserved pasta water; bring to a simmer. Add cooked pasta and simmer, tossing a few times, until liquid is reduced to a sauce that coats pasta.
  • Remove from heat and toss in lemon zest and juice, oil, and parsley; season with pepper. Add more pasta water, a few tablespoons at a time, until pasta is evenly coated. Serve, sprinkled with more pepper flakes.

1 tablespoon extra-virgin olive oil
1 small red onion, thinly sliced
1 (5 ounce) can tuna packed in olive oil, undrained
1 tablespoon capers, drained
¼ teaspoon crushed red pepper flakes
½ pound spaghetti
½ tablespoon chopped fresh parsley

Steps:

  • Heat olive oil in a large pan over medium heat. Add onion and cook until beginning to caramelize, about 10 minutes. Add tuna with oil, capers, and crushed red pepper flakes; heat through.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water for 1 minute less than the package instructs, about 10 minutes. Stir occasionally to prevent sticking. Drain, reserving 1/2 cup of the starchy pasta water.
  • Add the cooked pasta to the pan and mix to combine. Add some of the pasta water and toss lightly until the pasta is tender yet firm to the bite, 1 to 2 more minutes. Sprinkle with chopped parsley and serve immediately.

1/4 packet of spaghetti
1/2 cup cherry tomatoes
3 cloves of garlic
1 tbsp capers
3 anchovy fillets
2 tbsp fresh lemon juice
1 tsp dried Italian herbs
1 tbsp freshly chopped parsely
1 tsp olive oil
1 tin of tuna

Steps:

  • Cook the pasta according to the packet instructions.
  • Heat up the oil in a pan, then chop the garlic and achovy fillets and add them to the pan.
  • Cook the garlic and anchovy for about 30 seconds, the anchovy will completely melt away.
  • Chop the cherry tomatoes, and add them to the pan together with the capers. Leave to cook until the tomatoes will become mushy, that should not take longer than 4-5 minutes.
  • Toss in the pasta, lemon juice, flaked tuna, Italian herbs and parsley, give it a good stir, and remove from the heat.
  • Serve hot!

2 tbsp olive oil
1 red onion , finely chopped
500g cherry tomatoes , halved
400g dried pasta (we used rigatoni)
1l hot vegetable stock
2 x 110g cans tuna in olive oil, drained
3 tbsp mascarpone
30g parmesan , grated
2 heaped tbsp capers
½ lemon , zested
small bunch parsley , finely chopped

Steps:

  • Heat the oil in a saucepan over a medium-low heat. Add the onion and a pinch of salt and fry gently for 7 mins or until softened and turning translucent. Add 350g of the tomatoes, the pasta and veg stock to the pan and bring to the boil, then reduce to a simmer and cook for 15 mins, uncovered, stirring occasionally. The tomatoes should have broken down and the pasta will be just cooked.
  • Add the remaining tomatoes and bubble uncovered on a medium-high heat for 5 mins or until the liquid has reduced. Gently fold through large flakes of tuna, the mascarpone, parmesan, capers, lemon zest and parsley as well as salt and a generous grind of black pepper. Place a lid on the pan and leave to sit for 5 mins before serving in deep bowls.

There are about a gazillion ways to cook pasta using other pantry staples - things like garlic, bread crumbs, pecorino, capers, olives and especially, canned fish. This recipe, pasta with tuna, anchovies and capers, showered with lots of green herbs and scallions, is one of my family's household favorites. I like it with a long, thin, twirlable pasta - spaghetti, linguine or bucatini - but you can use whatever pasta you have on hand. Even macaroni works just fine and might even persuade your finicky kid to eat this dish (though, so far, mine abstains).

12 ounces long, thin pasta, such as bucatini, spaghetti or linguine
3 tablespoons extra-virgin olive oil
3 garlic cloves, thinly sliced
3 scallions, thinly sliced, white and green parts separated
6 to 10 anchovies, chopped
3 tablespoons drained capers
1 cup torn fresh herbs, such as parsley and dill, or celery leaves, plus more for serving (optional)
1 (5- or 6-ounce) can tuna, drained
Red-pepper flakes, for serving
Lemon wedges, for serving

Steps:

  • In a well-salted pot of boiling water, cook pasta according to package directions until al dente. Drain, saving 1 cup pasta water.
  • In a large skillet, heat the oil over medium. Add garlic and scallion whites, and cook until fragrant, about 1 minute. Add anchovies and capers and cook until anchovies melt and capers and garlic turn golden, 2 to 3 minutes longer. Add 1/2 cup pasta water, let it reduce until there is just a little left in the pan, then add pasta and herbs and toss well to coat. Add tuna and toss well.
  • Serve with red-pepper flakes on top, more herbs, scallion greens, and a drizzle of olive oil. Serve with lemon wedges on the side for squeezing.

My girlfriend's father gave us some cans of this wonderful, imported Italian tuna. This recipe is my attempt at re-creating HIS recipe for pasta with tuna and red sauce. Lauren's dad would often make this for me when I came to dinner because it had contained no meat. The Italian tuna packed in oil gives this sauce a wonderully "meaty" flavor that I absolutely love. My granny's mother would also make a dish similar to this on on the Fridays of Lent when they could not have meat.

1 tablespoon olive oil
1/2 cup onion, chopped
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 anchovy fillet, finely chopped (optional)
1 (28 ounce) can crushed tomatoes

2 (6 ounce) cans tuna in olive oil, imported Italian
1 lb spaghetti
chopped fresh parsley or basil (to garnish)

Steps:

  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onion and anchovy fillet, and saute until soft, about 5 minutes.
  • Add crushed red pepper and garlic and saute for another minute.
  • Add tomato sauce and reduce heat to low.
  • Next, add capers and the cans of tuna.
  • I like to drain the oil from one of the cans and leave the oil from the second.
  • Break up the large pieces of tuna with a fork or wooden spoon.
  • Cook pasta in boiling salted water for about 7 minutes or until al dente.
  • Drain, and toss with tuna red sauce in a serving bowl.
  • Sprinkle with basil or parsley and serve.

2 x packs ready-cooked pasta (we used Dolmio Express), or 440g leftover cooked penne (about 200g dried)
100g can tuna in oil
400g can cannellini bean , (borlotti or butterbeans are also good)
1⁄2 red onion , finely chopped
zest and juice 1 lemon
large handful parsley

Steps:

  • Microwave the cooked penne according to pack instructions. Tip into a bowl. Mix through the remaining ingredients (the warm pasta will really soak up the flavours). If using chilled leftover pasta, simply mix everything together - it will still taste great. Can be kept in the fridge for up to 3 days.

This recipe from the Aeolian Islands is a no-cook recipe, meaning you only cook the pasta. The combination of tuna, capers and mint mixed in lemon juice and olive oil gives this dressing a lot of flavour and the result is so fresh and summery.

400 g spaghetti
240 g tuna (canned or in a jar)
1 lemon
1/2 cup capers (salted)
6-8 mint (fresh leaves)
salt (for pasta water)
black pepper (ground, to taste)
3 tbsp olive oil (extra virgin)

Steps:

  • Put the water onto boil for the pasta, add salt once the water starts boiling.
  • Rinse the capers under cold running water to remove the salt.
  • Then put the capers, the mint and drained tuna into a food processor or blender ( I used a hand held mixer)
  • Add the olive oil, the juice from the lemon, plus some grated lemon rind and season with freshly ground pepper.
  • Cook the pasta al dente in the boiling salted water according to the instructions on the packet.
  • When the pasta is almost cooked remove a cup of the cooking water. Add half of this water to the ingredients for the dressing and pulse a few times until you have a rough sauce. (you don't want it to be too smooth)
  • Once the pasta is done cooking, drain it and return it to the pan with the dressing.
  • Add the rest of the saved pasta cooking water and mix everything together until the sauce starts to look creamy.
  • Serve immediately with a few whole capers and a bit of mint sprinkled on top.Buon Appetito!

Kosher salt ((I use Diamond Crystal) )
1 ½ cups frozen peas
Extra virgin olive oil
1 red bell pepper, (cored and cut into thin strips)
6 garlic cloves, (minced)
2 5- oz cans solid albicore tuna, (drained)
Zest of 1 lemon
Juice of ½ lemon, (more to your liking)
Handful chopped fresh parsley ((about 1 ounce) )
1 tsp dried oregano
Black pepper, (to your liking)
6 to 8 pitted kalmata olives (sliced)
1 jalapeno pepper (optional), ( sliced)
Grated Parmesan cheese (to your liking)

Steps:

  • Bring 3 quarts of water to a rolling boil and add 1 tbsp of kosher salt. Cook the pasta in the boiling water to al dante according to package (most spaghetti will cook in 9 to 11 minutes or so). After the pasta has been cooking for 5 minutes, add the frozen peas to cook with the pasta for the remainder of the time. When the pasta is ready, take ¾ cup of the cooking water and set it aside. Drain the pasta and peas in a colander.
  • In a large, deep cooking pan, heat 2 tbsp extra virgin olive oil over medium-high till shimmering but not smoking. Add the red bell peppers and cook for 3 to 4 minutes, tossing regularly. Add the garlic and cook, tossing frequently, for 30 seconds or so until fragrant.
  • Now, add the cooked pasta and peas to the pan and toss to combine. Add the tuna, lemon zest, lemon juice, parsley, oregano, black pepper, kalamata olives, jalapeno if using, and a big sprinkle of Parmesan cheese. Drizzle a bit of extra virgin olive oil and some of the pasta cooking water as needed. Give everything a toss. Taste and adjust seasoning to your liking.
  • Transfer the tuna pasta to serving bowls. Enjoy!

500 g ripe mixed-colour cherry tomatoes
1 tablespoon dried oregano, ideally the flowering kind

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Meanwhile, place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil. Add the capers, fry until super-crispy, then scoop out and put aside, leaving the fragrant oil behind.
  • Halve and add the tomatoes, then sprinkle in most of the oregano.
  • Drain and flake in the tuna, add 2 ladlefuls of pasta cooking water, and simmer until the pasta is done.

500 g of good quality spaghetti (#5 or #7 is a good size)
1 (185 g) can tuna in olive oil
1 (440 g) can of peeled roma tomatoes (egg shape)
1 small white onion, diced
sea salt
crushed black peppercorns
capers
grated parmesan cheese

Steps:

  • Drain oil from tuna and place in a heavy based frypan.
  • Add diced onion and saute until soft and clear.
  • Meanwhile, in a large pot, boil salted water and cook spaghetti.
  • Dice tomatoes and add to pan.

2 tablespoons fresh lemon juice

1/2 teaspoon salt, or to taste

2 tablespoons capers, drained
1/4 cup fresh flat-leaf parsley, chopped
freshly grated Parmesan cheese

Steps:

  • Place tuna in pasta serving bowl and break it into large bite-size pieces. Add garlic, lemon zest, lemon juice, olive oil, salt, pepper, and capers and stir gently to combine. Set aside to warm to room temperature, or preferably, place the bowl (be sure it's heatproof) over the pasta pot to warm the ingredients while heating the water. Once the water comes to a boil, remove bowl and set aside.
  • Cook pasta in large pot of boiling salted water until al dente. Drain pasta well and immediately add to sauce in bowl. Sprinkle with parsley and toss. Serve at once with Parmesan cheese. Pass the pepper mill.
  • Recommended pasta: 8 ounces penne rigate, medium shells (conchiglie rigate), rigatoni, or linguine.

150g spaghetti or linguine
1 tbsp olive oil
1 garlic clove, sliced
1 red chilli, deseeded and finely chopped, plus extra to serve (optional)
1 tbsp drained capers
small bunch of parsley, finely chopped (stalks included)
145g tuna in spring water, drained
90g rocket or baby spinach leaves
½ lemon, juiced

Steps:

  • Cook the spaghetti for 9-11 mins in a large pan of well-salted water until al dente.
  • Heat the oil in a wide frying pan over a very low heat, and gently cook the garlic and chilli to infuse the oil. Remove from the heat if the garlic is turning past light golden, as this will make it bitter.
  • Drain the pasta, keeping a cupful of the cooking water, and tip the spaghetti into the frying pan. Toss the pasta in the oil over a low heat, adding a little of the pasta water to emulsify into a sauce that coats the pasta, then fold in the capers, parsley, tuna and some seasoning. Don't stir too vigorously - you want to keep larger chunks of tuna. Toss the rocket and lemon juice through the spaghetti, and serve with extra chilli scattered over, if you like.
