- Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down; microwave on high until tender, 15-20 minutes. Cool slightly. Separate strands with a fork., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. With a slotted spoon, remove bacon to paper towels; reserve drippings., In same pan, heat drippings over medium heat; stir in butter, brown sugar, salt and pepper until blended. Add squash; toss and heat through. Remove from heat; stir in cheese. Top with bacon.

- Cut Spaghetti Squash (1) widthwise into 2-inch segments, making sure to remove the seedy inside.
- Set on parchment paper-lined baking sheet and drizzle both sides with Olive Oil (1 tablespoon) and sprinkle with Salt and Pepper (1 dash). Bake about 40 minutes at 400 degrees F (200 degrees C), or until tender.
- Cook Bacon (6 slice) at medium heat on stove until crispy, then remove from pan. Remove most of the grease, leaving about 1 tablespoon in the pan.
- Increase heat to medium-high, and slowly pour in the White Wine (1/2 cup) Scrape and stir with a wooden spoon, adding more wine as it reduces down. Cook about 1 minute, then reduce heat to low.

- About halfway through cooking the squash, start preparing the bacon. In a large skillet over medium heat add the bacon slices. Stirring frequently, cook the bacon over medium heat until the edges just start to turn brown, approximately 2 minutes. Turn heat to low and continue to cook for an additional 3 minutes.
- When the bacon is done cooking, turn up the heat to high and add the apple cider vinegar to the pan while scraping the bottom with a spatula to remove any brown bits stuck to the bottom. Turn heat back down to low medium-low and add the chopped onion along with a dash of salt, pepper and red pepper flakes. Stir it all together and allow it to saute until onions turn soft and translucent, stirring occasionally. Add in the minced garlic and stir again. Allow the garlic and onions to saute for an additional minute or two and then add the spinach to the skillet, one handful at a time (it shrinks to nothing). Stir after each addition, making room for more for more spinach.
- When spinach is finished cooking, turn off heat and set aside. Meanwhile, check on the squash. As soon as the squash is fully cooked, remove from the oven. Use a fork to peel flesh away from the skin (this should be easy). Add to the skillet with the bacon and spinach and gently mix everything together.

- Prep: Preheat oven to 400°F (204°C). Cut* spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with 1 Tbsp of olive oil, then rub to evenly coat. Place cut-side down on a baking sheet and prick the outside with a fork.
- Roast: Roast for about 30 minutes, or until fork tender but still a little firm. When finished, flip over and allow to cool enough to touch.
- Mushrooms: Meanwhile clean and slice mushrooms into ¼ inch thick slices. In a large bowl, stir together remaining oil, soy, maple, and liquid smoke. Stir in the mushrooms, tossing to evenly coat. Transfer to a large saute pan and cook over high until soft and lightly browned, about 10 minutes (drain excess water while cooking if needed to help them brown).
- Wine + Spinach: With the heat still on, add the wine to the pan of mushrooms, stirring until it evaporates. Add the spinach, stirring until it wilts down. Remove from heat.
