8 ounces spaghetti
2 cups mild cheddar cheese, shredded
1 (15 1/4 ounce) can cream-style corn
1 (15 1/4 ounce) can whole kernel corn, drained
2 tablespoons margarine, melted
1 cup milk

Steps:

  • Preheat oven to 350°F.
  • Mix both cans of corn and 1 1/2 cup of cheese in a casserole dish.and the milk
  • Break spaghetti into 1/4's and mix into mixture.
  • Gently pat down so no spaghetti noodles are poking out.
  • Sprinkle the remaining cheese over mixture.
  • Pour margarine over mixture in a circular motion.
  • Put foil over the top and put in oven for 1 hour.
  • Take out of oven and stir.
  • ENJOY!

Yet lutein isn't found in many places: Besides corn, egg yolks and kale are good sources (the yellowness is masked by the green chlorophyll found in kale). Remember that lutein is best absorbed with a little fat present (which the butter, milk and cheese in this healthy pasta provides). Curcumin is found primarily in turmeric, the vibrant yellow pigment found in many curry spice blends. Besides adding a distinct yellow-ish hue to cooked stews and curries, it also has antioxidant and anti-inflammatory properties.

Olive oil, for coating
2 ears corn, shucked
2 tablespoons unsalted butter
2 cloves garlic, thinly sliced
1 yellow pepper, diced
Large pinch ground turmeric
1 1/2 cups 2-percent milk
1/4 cup grated Parmesan
Kosher salt and freshly ground black pepper
1 teaspoon lemon zest (about 1 lemon), plus lemon wedges for serving

Steps:

  • Bring a large pot of water to a boil. Drop the pasta into the water and cook according to package directions, drain, reserving some of the pasta water. Toss the pasta with a splash of oil and set aside.
  • Meanwhile, remove the kernels from the corn with a sharp knife. Hold the shaved cobs over a bowl and scrape with the back of the knife to extract the milk, set aside. Discard the cobs.
  • Melt the butter in a large skillet, add the corn kernels, garlic, peppers and turmeric. Cook, stirring, until the vegetables are tender, about 6 minutes. Add the corn milk, 2-percent milk, 3 tablespoons of the Parmesan, 3/4 teaspoon salt and 1/2 teaspoon pepper. Bring to a gentle simmer, cook until slightly thickened (like the consistency of heavy cream), about 5 minutes.
  • Add the cooked pasta, lemon zest and 1/4 teaspoon salt. Gently toss the pasta in the sauce (thin out with reserved pasta water if desired). Divide among four bowls. Sprinkle each with the remaining 1 tablespoon Parmesan and some black pepper. Serve with lemon wedges.

1/2 cup chorizo, mild or hot, grilled and cut into bite-size pieces
1 tablespoon garlic, minced
1 tablespoon minced shallots
20 littleneck clams, scrubbed and dried
2 to 3 large leaves fresh basil, chopped or chiffonade (small strips), plus more for garnish
Pinch red pepper flakes
1/2 cup clam broth
1/4 cup dry white wine
1/2 package spaghetti
2 tablespoons unsalted butter
15 grape or cherry tomatoes, cut in half
2 ears corn, grilled and then shucked and cut off the cob
Kosher salt and freshly ground black pepper

Steps:

  • Have a pot of boiling salted water ready for cooking the spaghetti.
  • Heat the oil in a large saute pan over medium heat, and then add the chorizo, garlic, shallots, clams, basil and red pepper flakes, being careful to brown but not burn the garlic. Add the clam broth and wine and cover.
  • At this point you can drop the spaghetti and cook until al dente, 6 to 9 minutes. Drain and set aside, keeping a small amount of the cooking water in case you need a little for your sauce.
  • When the clams are all open, add the butter, tomatoes, corn and some salt and black pepper and simmer for another minute. Turn off the heat and cover for another minute. Add the pasta and a small amount of hot pasta water if needed and toss. Add some fresh basil to garnish and serve immediately.

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large pot or Dutch oven over medium heat. Add the garlic and cook, stirring occasionally, until golden, about 3 minutes. Add the clams, wine, corn kernels and cobs, red pepper flakes and 1/2 teaspoon salt; cover, increase the heat to high and cook until the clams open, about 7 minutes. Discard the corn cobs and any unopened clams.
  • Add the butter, lemon zest and pasta to the pot with the clams; toss to coat, about 1 minute. Add some of the reserved pasta cooking water to loosen the sauce if the pasta seems dry. Stir in the parsley and season with salt and pepper. Serve drizzled with olive oil.

There's no cream in this wonderfully summery pasta dish, just a luscious sauce made from puréed fresh corn and sweet sautéed scallions, along with Parmesan for depth and red chile flakes for a contrasting bite. Be sure to add the lemon juice and fresh herbs at the end; the rich pasta really benefits from their bright, fresh flavors. And while this is best made at the height of corn season, it's still quite good even with out-of-season supermarket ears, or with frozen corn.

12 ounces dry orecchiette or farfalle
1 tablespoon olive oil, plus more for drizzling
1 bunch scallions (about 8), trimmed and thinly sliced (keep the whites and greens separate)
2 large ears corn, shucked and kernels removed (2 cups kernels)
1/2 teaspoon ground black pepper, more for serving
3 tablespoons unsalted butter

Steps:

  • Bring a large pot of well-salted water to a boil. Cook pasta until 1 minute shy of al dente, according to the package directions. Drain, reserving 1/2 cup of pasta water.
  • Meanwhile, heat oil in large sauté pan over medium heat; add scallion whites and a pinch of salt and cook until soft, 3 minutes. Add 1/4 cup water and all but 1/4 cup corn; simmer until corn is heated through and almost tender, 3 to 5 minutes. Add 1/4 teaspoon salt and 1/4 teaspoon pepper, transfer to a blender, and purée mixture until smooth, adding a little extra water if needed to get a thick but pourable texture.
  • Heat the same skillet over high heat. Add butter and let melt. Add reserved 1/4 cup corn and cook until tender, 1 to 2 minutes. (It's O.K. if the butter browns; that deepens the flavor.) Add the corn purée and cook for 30 seconds to heat and combine the flavors.
  • Reduce heat to medium. Add pasta and half the reserved pasta cooking water, tossing to coat. Cook for 1 minute, then add a little more of the pasta cooking water if the mixture seems too thick. Stir in 1/4 cup of the scallion greens, the Parmesan, the herbs, the red pepper flakes, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle with fresh lemon juice to taste. Transfer to warm pasta bowls and garnish with more scallions, herbs, a drizzle of olive oil and black pepper.

1 onion, chopped
⅓ cup vegetable oil
½ teaspoon salt

⅔ cup water

Steps:

  • Heat oil in a medium skillet. Add chopped onions, and cook until tender. Add ground beef, and brown. Stir in salt and turmeric. Dilute tomato paste in water, and add to the beef mixture. Cook for 30 minutes over medium heat.
  • Cook spaghetti in a large kettle of boiling salted water according to package directions. Drain well.
  • Combine beef mixture and noodles in a large kettle. Cover, and cook over medium heat for 30 to 40 minutes.

6 slices thick-cut bacon (about 6 ounces), cut into 1/4" strips
4 ears of corn, kernels cut off (about 3 cups), cobs reserved
1/2 cup heavy cream
Freshly ground black pepper
1/2 cup grated Parmesan (about 2 ounces), plus more to serve
1/2 cup fresh basil leaves, coarsely chopped, divided

Steps:

  • Cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente; drain.
  • Meanwhile, fry bacon in a large skillet over medium-high heat, stirring occasionally, until crisp. Using a slotted spoon, transfer bacon to paper towels to drain (reserve fat). This is so easy to make it's insane! My mother used to get me to throw this together at her house by just telling me what to put in the pan, mix it and put it in the oven. You can add meat if you like, but we keep it simple. I use no salt added canned corns and light/fat free cheeses but you can use regular if you wish. You can add garlic or herbs...whatever is to your liking...it's that versatile! Great for potlucks!

1 (15 ounce) can whole kernel corn, Low Salt, do not drain
1 (15 ounce) can creamed corn, Low Salt
