OUTRAGEOUS MUFFINS WITH SOY FLOUR FROM BOB'S RED MILL
This recipe was on the front of the soy flour package - and now that my package is empty I want to make sure I don't lose the recipe. These are fantastic muffins. I've played around with the quantities of dry ingredients a few times based on what I had on hand, and they still turned out really well. But the best batch was the one that followed the recipe to a "T". If you decide to try them, enjoy!

Steps:
- Preheat your oven to 350 degrees. Line or lightly oil a muffin tin.
- Mix the dry ingredients together, from the soy flour down to the baking soda. Mix in the raisins and dried apricot if you are using.
- In a separate bowl, mix together the wet ingredients, from the eggs to the orange zest.
- Fold the wet ingredients into the dry until just moistened. The batter should be lumpy.
- Fill the muffin tins, 2/3 full. Bake for approximately 25 minutes, test with a toothpick to be sure.
BANANA BRAN SOY MUFFINS
These are very moist and good-don't let the soy or bran scare you off! I had the neighborhood kids eat a whole batch in one day.

Steps:
- Preheat oven to 375 degrees.
- Combine the first 3 ingredients in a medium bowl.
- Let it stand for 5 minutes.
- Add brown sugar, baby food, and egg-stir well.
- Combine flours and next 4 ingredients in a large bowl and make a well in the center of the mixture.
- Add the bran mixture to the four mixture.
- Stir until just moist.
- Spray 12 muffin cups with cooking spray.
- Spoon batter evenly into the 12 muffin cups.
- Bake for 20 minutes or until done.
- Remove muffins immediately from the pan and cool on wire rack.

- Preheat oven to 425F and grease muffin pan.
- Mix and sift first five ingredients together.
- Combine milk, beaten egg and shortening; add to dry ingredients stirring only enough to moisten.
- Do not beat; batter should not be smooth.
- Fill prepared muffin pan 2/3 full and bake for 15 to 20 minutes, depending on the muffin size.

- Preheat the oven to 375 degrees F (180 degrees C). Grease or line a 12-cup muffin tin with paper liners.
- Use a blender or food processor to blend oats into oat flour. Mix in cinnamon, nutmeg, baking powder, and salt.
- Mix apples, applesauce, almond milk, oil, and vanilla together in a large bowl until combined. Slowly add the oat mixture, mixing until thick like cookie dough. Add even spoonfuls of the mixture to the muffin tins.
- Bake in the preheated oven until tops spring back to the touch, 14 to 18 minutes. Let cool at least 5 minutes before serving.
