1 pint Brussels sprouts, tough outer leaves removed and halved from top to bottom
1 pound baby carrots
1 tablespoon olive oil
1 tablespoon unsalted butter
2 shallots, sliced
2 cloves garlic, gently crushed with the side of a knife and minced
1 pint (about 6 ounces) white mushrooms, brushed clean, trimmed, and halved if medium or sliced, if large (leave whole if small)
1 cup white wine
5 or 6 small pattypan squash, quartered (choose those that are light green but heavy for their size)
1/3 cup hoisin sauce, at room temperature

Steps:

  • Steam Brussels sprouts until they just begin to get tender, but are still bright green. Remove from heat and set aside.
  • Boil baby carrots in salted water until just tender. Do not over cook. Remove from heat, drain and set aside.
  • In a large skillet or saute pan, heat the olive oil and butter over medium-high heat. Add the shallots and garlic and cook until the shallots are translucent. Add the mushrooms and cook until they begin to become tender and release their juices. Let cook for a few minutes to allow flavors to blend. Deglaze the pan with the white wine and add the pattypan squash. reduce heat to low, cover and let cook until squash becomes tender but not mushy (about 15 minutes). Remove cover and increase heat back up to medium or medium-high and allow most of wine to evaporate. When most of the wine is gone, stir in the Brussels sprouts and carrots and gently stir to coat with the remaining pan juices. Remove from heat and stir in hoisin sauce.

1 1/2 cups melted butter
1 1/4 pounds flour
3/4 ounces baking soda
1 teaspoon baking powder

1/2 tablespoon ground nutmeg
1/2 cup minced shallots
1/2 ounce salt
1-ounce ground black peppercorns
16 ounces hot water
2 boniato, diced into 1-inch squares
3 quarts salted water
8 ounces whole butter
Sea salt and freshly ground white pepper

6 ounces ground cardamom
2 ounces ground white pepper
3 ounces garlic powder
5 bay leaves
2 ounces ground coriander
2 ounces ground juniper
6 ounces brown sugar
3 ounces kosher salt
3-pound caribou loin
2 ounces whole butter
1/4 cup whole butter
1 large carrot, diced
1 celery stalk, diced
1/4 cup minced shallot
1 tablespoon black peppercorns
2 sprigs thyme
1 1/2 quarts port wine
1 quart cranberry juice
2 oranges, zested
2 cloves garlic
1 quart veal stock
2 ounces sugar
2 ounces orange juice
6 ounces whole cranberries
1 baking potato, like russets
1/2 cup clarified butter
6 sprigs tarragon

Steps:

  • Gingerbread: Preheat oven to 350 degrees F.
  • Mix eggs to smooth. Add sugar, molasses, and melted butter. Mix well. Blend in all dry ingredients, including the shallots until smooth. Add water and incorporate completely. Butter individual bundt or cupcake molds and fill half way. Bake until a toothpick comes out semi-dry. Reserve at room temperature.
  • Boniato Puree: Place the boniato in water and bring to a boil. Simmer until tender, approximately 30 minutes. Process through food mill and blend in whole butter. Season with sea salt and ground white pepper. Reserve hot in pastry bag with plain piping tip.
  • Caribou: Grind the cardamom, white pepper, garlic powder, bay leaves, ground coriander, ground juniper berry, brown sugar, and kosher salt together in coffee grinder. Evenly coat caribou with mixture and sear in whole butter to light golden brown. Cook to rare and reserve.
  • Sauce: Heat butter in saucepan to golden brown, add carrot, celery, and shallot. Cook on medium heat to golden brown. Add peppercorns and thyme. Next add port wine and reduce by half. Add cranberry juice and reduce again by half. Add orange zest, garlic, and veal stock. Cook on medium, simmer until sauce reduces by at least half and is desired consistency. Strain and reserve hot. Place sugar, orange juice, and cranberries in a small pot and cook on low until all the liquid has evaporated. Reserve.
  • Garnish: Preheat oven to 300 degrees F.
  • Slice potato paper-thin and stamp out into 1 1/4-inch circles. Brush butter onto parchment paper and form a "galette" by alternating potatoes with tarragon to form a complete ring. Bake for 1 to 1 1/2 hours between buttered parchment paper. Cook to golden brown. Reserve.
  • Presentation: Place gingerbread in center of plate and pipe a semi-circle of boniato puree around. Next, slice caribou 1/6 of an inch thick and fan around puree. Ladle sauce over meat and dollop cranberries throughout. Accent plate with potato "galette" and serve.

Hazelnut Crusted Menemsha Sole with Marsala Wine Sauce, Shallot Mashed Potatoes and Baby Vegetables image

1 cup raw-blackened hazelnuts
2 cups panko (Japanese bread crumbs)
6 to 7 ounces skinless/boneless Menemsha sole fillet
Salt and freshly ground black pepper
Flour, for dusting
8 large egg whites
4 ounces canola oil, divided
4 large baking potatoes, skinned, cut into 2 pieces
6 ounces half-and-half
6 roasted shallots, pureed
Salt and freshly ground black pepper
3/4 pound baby yellow pattipan squash, cut in 1/2
3/4 pound baby green zucchini, cut in 1/2
3/4 pound pen asparagus
Salt and freshly ground black pepper
4 tablespoons butter, optional
2 cups Marsala wine
2 tablespoons chopped shallots
1 cup heavy cream
1 tablespoon cornstarch mixed smooth with 1 tablespoon water
8 ounces softened butter
Salt and freshly ground black pepper
1 dash hot sauce
1 dash Worcestershire sauce
Freshly chopped chives, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • In a food processor add hazelnuts and pulse 4 times at 5-second intervals. Add panko to the hazelnuts and pulse again for 10 seconds. Season the sole with salt and pepper, to taste, and lightly dust the sole with flour, shaking off the excess. Dip the sole into egg whites coating entirely, shaking off excess, press into hazelnut breading. Refrigerate for 10 minutes or up to 24 hours. Heat a large saute pan on medium heat. Add 2 ounces canola oil and the sole. Cook for approximately 1 minute, checking carefully with a spatula to make sure they are golden brown. Flip and continue cooking for 1 minute longer and then transfer to sheet pan. Repeat the process with the remaining oil and sole.
  • Place the baking sheet in the preheated oven for 8 to 10 minutes (depending on thickness of fillet) or until fish is cooked through but still moist.
  • Mashed Potatoes: Cook the potatoes through in a 6-quart stock pot with 4 quarts of salted water for approximately 30 minutes. Drain potatoes well. Beat with an electric mixer on low speed. Add half-and-half, shallot puree and salt and pepper, to taste. Cover and keep warm.
  • Vegetables: In a pot big enough to hold all the vegetables, bring salted water to a boil. Drop in vegetables and cook until al dente, approximately 2 minutes, drain well. Toss back in pot, season with salt and pepper and add butter, if using. Keep warm until ready to serve.
  • Marsala Wine Buerre Blanc: Reduce the Marsala wine and shallots in a heavy bottom pan over medium-high heat and reduce to 1/2 cup. Add heavy cream and bring back to simmer. Whisk in the cornstarch and water mixture, also known as a slurry. Reduce heat to low, whisk occasionally for 1 minute longer. Remove from heat. Add softened butter, 1-ounce at a time, whisking until smooth. Season with salt, pepper, hot sauce and Worcestershire sauce. Serve immediately.
  • For assembly: Divide potatoes among 6 to 8-inch plates, placing them in the center. Place the Menemsha sole on top. Top 1 corner of the sole with 2 ounces of Marsala Wine Buerre Blanc. Arrange the vegetables around the plate, garnish with chives.

Herb Crusted Veal Tenderloin and Celery Root and Pear Sformato with Cherry Sauce image

Mixed herbs (sage, rosemary and thyme) finely chopped
1 tablespoon Dijon mustard
Butter
1/2 cup fresh bread crumbs (made from day old white sandwich loaf, discarding the crust)
1 pound celery root, peeled, diced into 1/4-inch pieces
Salt
2 cloves garlic, minced
1 sprig thyme
2 tablespoons extra-virgin olive oil
Freshly ground black pepper
1/2 Maui onion, minced
2 large eggs
1 Forell pear, peeled, cored and cut into 1/4-inch pieces
2 tablespoons finely chopped Italian parsley leaves
1 cup mashed potatoes
Four 3/4-inch cubes fontina
1 medium shallot, finely minced
3/4 cup fresh cherries, pitted and quartered
2 tablespoons molasses
1/2 cup port wine
3 cups veal stock
2 tablespoons unsalted butter
2 (3/4 pound) veal tenderloin

Steps:

  • Preheat oven to 375 degrees F.
  • To make Sformato: Brush 4 (3-inch) ramekins with butter and coat with fresh bread crumbs, tapping out and reserving excess. In a large pot of boiling water, blanch celery root with pinch of salt, garlic and thyme for 5 minutes. Remove from water using slotted spoon.
  • In a large skillet, on medium-high heat, heat 1 tablespoon of olive oil. Add the minced onions and celery root, season with salt and pepper and cook, stirring, until onions are golden. Remove from heat. In a medium bowl, beat eggs and whisk in the pear, chopped parsley, mashed potatoes, celery root mixture and salt and pepper. Fill ramekin half way with celery root mixture. Place 1 fontina cube in the middle, then finish filling ramekin with celery root mixture and cover with reserved bread crumbs. Bake in the oven for 15 minutes.
  • To make the cherry sauce: In a medium skillet, heat remaining olive oil on low heat. Add shallots and cook until golden. Add 1/2 cup of the cherries, molasses, port wine, and veal stock. Reduce the sauce to 1 cup. Strain sauce through a chinois or fine meshed sieve into a clean bowl and whisk in the butter to finish. Season, to taste. Add remaining cherries to sauce. Set aside and keep warm.
  • To make the Veal. Brush veal with Dijon mustard. Season with salt and pepper and roll in mixed herbs. In a large skillet, heated on medium-high, add olive oil and sear the veal on all sides. Finish to cool in the preheated oven until medium rare, about 5 to 10 minutes. Remove meat from skillet and allow to rest. Slice veal right before serving
  • On a large serving platter, arrange celery root sformato on bottom of platter, place sliced veal on top and drizzle with cherries and sauce.

4 cups beef stock or broth
About 4 cups water, enough to cover the beef
2 onions, peeled and quartered
4 celery stalks, cut in 1/2
1 bay leaf
4 carrots, peeled and cut into thirds
1 pound small boiling potatoes
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Gorgonzola Sauce, recipe follows
Spicy Salsa Verde, recipe follows
4 ounces Gorgonzola
2 cups mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup chopped parsley leaves, about 1 bunch
2 shallots, chopped
2 tablespoons chopped capers
2 cloves garlic, minced
2 teaspoons hot sauce, or 1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons sherry vinegar
1 1/2 cups extra-virgin olive oil

Steps:

  • Heat a large braising pot over medium-high heat. Season the beef with salt and pepper. Sear the beef, browning it on both sides, about 5 minutes a side. Carefully add the stock and enough water to just cover the meat. Add the onion, celery, and bay leaf. Bring the liquid to a boil. Lower the heat to a simmer, cover, and cook for 1 hour. Add the carrots and potatoes and cook until the meat is tender, about another hour. Carefully lift out the meat, place on a cutting board, and cover with foil. Strain the vegetables from the stock. Discard the celery, onion, and bay leaf. Arrange the carrots and potatoes on a platter and cover with foil to keep warm. Continue cooking the stock uncovered over medium heat until reduced by half, about 20 minutes. Meanwhile, slice the meat against the grain, on an angle. Arrange the meat alongside the carrots and potatoes on the platter. When the stock has reduced, season with salt and pepper, to taste, and transfer to a gravy dish. Serve the Bollito Misto with the gravy and bowls of the Gorgonzola Sauce and the Salsa Verde.
  • Put all the ingredients in a food processor and combine until smooth. Serve in a side dish.
  • In a bowl, stir all the ingredients together until combined. Serve in a side dish.
