Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.
- Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips.
- Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.
CHEWY CHOCOLATE CHIP OATMEAL COOKIES
I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
- Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Beat butter or margarine, sugars and vanilla until light and fluffy. Add flour and salt, mix well.
- Dissolve baking soda in boiling water and add to mixture. Stir in rolled oats, raisins and chocolate chips.

OATMEAL CHOCOLATE CHIP COOKIES
This recipe is from my aunt Becca who gets requests all of the time from family to make these. She mixes them by hand, so I do too. They'd probably turn out just as well using a mixer though. The butter in the recipe really makes them good. This recipe makes quite a few so feel free to halve the recipe or make it all and freeze the cookies for another day.

- Cream together butter and sugars by hand with a wooden spoon.
- Add eggs, one at a time, beating after each addition.
- Stir in vanilla.

OUTRAGEOUS OATMEAL (FLOUR) CHOCOLATE CHIP COOKIES
In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

- Before starting, grind enough oatmeal in the food processor to make the necessary 1 3/4 cups you will need to make these cookies! Or, if you're lucky enough to find Oat Flour, use that!
- With electric mixer, blend butter with both sugars, egg and vanilla extract.
- Add dry ingredients to mixture- blend well.
- Stir in chocolate chips.
- Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).
- Bake at 265 degrees for 23 minutes (yes, I know this sounds strange, but trust me, it works!).

- mix first four ingredients until combined, MIX BY HAND (its the trick to this recipe!). add the dry ingredients, then the oats, then the chocolate chips, mixing each time.
- refrigerate dough for taller/chunkier cookies for 1 hr or more. drop them on a greased pan in Tablespoonfuls.
- 350 for 10 mins (i usually find that 12 is good- though recipe said 10. it's a little too gooey for me. just start checking them after 10.

SOY FLOUR OATMEAL CHOCOLATE CHIP COOKIES
I had gotten some Bob's Red Mill Soy Flour for my daughter and was experimenting with it having never used Soy flour before. The cookies turned out very well and my kids had them almost gone in a few minutes! Just a note that the cookie dough will have a terrible after taste (I love to eat the dough), but the cookies will taste great! The cinnamon is optional because we love cinnamon, but you can leave it out.

- In a large bowl, combine the butter and the sugars and cream them well together.
- Add the eggs and the vanilla and continue to mix well.
- In a separate bowl, mix the flours together and add the baking soda, salt and the cinnamon to the flour. Stir the flour well.

These taste distinctly homemade: much smaller than giant, thick bakery-style disks and more delicate, with just enough buttery dough to bind the chocolate and oats. Mixing by hand turns out cookies that are crisp at the edges and tender in the centers. These can be mixed and baked in under an hour, but the dough balls also can be packed in an airtight container and refrigerated for up to 3 days, or frozen for up to a month. You can bake them from ice-cold, though they'll need a few more minutes to turn golden brown.

- Heat oven to 350 degrees. Line 2 large baking sheets with parchment paper.
- Whisk the flour, baking soda and salt in a small bowl. Mix the butter and both sugars in a large bowl with a wooden spoon until creamy. Beat in the egg until incorporated, then stir in the cream and vanilla.
- Add the flour mixture and gently stir until no traces of flour remain. Add the oats, chocolate chips and nuts (if using), and fold until evenly distributed. HARVEST OATMEAL CHOCOLATE CHIP COOKIES
This is a copycat of Great Harvest's Oatmeal Chocolate Chip Cookies. They don't taste exactly the same, but I imagine that's because I don't have a flour mill to grind fresh flour! They do taste very similar though, and whether they're the real deal or not they are my very favorite chocolate chip cookies, with a rich caramel flavor to the dough. YUM!

- Preheat oven to 350 degrees F.
- Combine flour, baking powder, baking soda and salt in a small bowl and mix well. Set aside.
- Cream together the brown sugar and butter until well combined.
- Add the eggs one at a time, beating well after each.
- Mix in the molasses, milk and vanilla.
- Take one cup of the rolled oats and grind them in a blender or food processor until it is the consistency of coarse flour.
- Add the ground oats and the remaining cup of rolled oats to the butter mixture and mix well.
- Now add the flour mixture and mix until combined.
- Stir in the chocolate chips until evenly distributed throughout the dough.
- Using a 1/4 cup scoop (my standard size ice cream scoop works well for this) or a measuring cup, scoop the dough onto ungreased cookie sheets 3 inches apart.
- Bake for 12-13 minutes until the edges are just starting to brown.
- Remove from oven and cool two minutes on cookie sheets.
- Remove from cookie sheets to cool completely on racks.
