Steps:
- Preheat oven to 400°F. Grease a 9x13-inch baking dish and set aside.
- Mix the sour cream, Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet, crumbled bacon, scallions and cheese together in a large bowl until well combined. Add the shredded hash browns and stir until everything is evenly coated.
- Pour into the baking dish, and cook, uncovered, for 40-45 minutes, until crisp and golden.
- Serve warm.

- Brown and drain 1 lb hot Italian sausage.
- Saute red peppers and onions until tender.
- Place thawed hash browns in a greased 13x9 baking dish.
- Cover Hash browns evenly with sausage, red peppers and onions.
- Cover all with the entire jar of Ragu Roasted Garlic Parmesan sauce.
- Bake for 45 minutes at 375 degrees.

- Combine potatoes, salt, and chives together in a bowl.
- Place 1/4 of potato mixture on each of the fish filets, packing mixture onto fish tightly and fully.
- Heat oven to 350 degrees.
- Heat olive oil in a large, oven proof skillet over medium high heat. Cast iron would be ideal.
- When oil begins to shimmer, place fish filet, potato side down, into the skillet. Continue to cook potato side down until hash browns become golden brown. Place skillet in oven and continue to cook until fish is cooked though, about 12 minutes.
- Remove from oven. Serve fish potato side up.

- Preheat oven to 400 degrees.
- Pour enchilada sauce into a blender. Remove 1/2 cup of the hash browns from bag and place in blender. Blend until very smooth, to thicken up the enchilada sauce. (The sauce will get warm from the heat of the blender.).
- Heat a waffle iron to medium high heat. Brush both top and bottom of waffle iron with a little oil. Scoop a scant 1/2 cup of hash browns, and place in waffle iron. Repeat 5 times, making sure the potatoes are in separate areas. (You may need to cook in batches, depending on the size of your waffle iron.) Close the waffle iron and cook until the hash brown discs are browned and cooked through. Repeat until you have 6 hash brown discs.
- While potatoes are cooking, break the eggs into six muffin tins that have been filled halfway with hot water. (The water is not an ingredient, just a way of cooking the eggs.) Bake for 6 minutes for eggs that have a runny yolk, longer if you desire more cooked yolks.
- To assemble, place a hot hash brown disc on a serving plate. Top with a generous spoonful of enchilada sauce. Top with a poached egg. Sprinkle with 1.4 cup of pico-de-gallo fresh salsa.

- Combine first 3 ingredients in a bowl and mix until thoroughly combined.
- Spray a 8X10 baking dish with nonstick cooking spray.

Are you looking for a great Thanksgiving or Christmas morning meal? This awesome-tasting one-dish breakfast can be made in advance and refrigerated until needed. It uses Simply Potatoes® brand hash browns. They are refrigerated, not frozen, and come in a green bag.

Steps:
- Cut bacon into 1/2" pieces; fry in large skillet until crisp; remove and drain on absorbent paper; discard all but a very small amount of bacon fat from skillet.
- Add vegetable oil to lightly cover bottom of skillet; heat to medium-high; add hash browns and fry (spread them out and fry without disturbing for about 5 minutes, then turn them and fry for another 5 minutes) until brown.
- Remove hash browns from skillet, spreading them into a 9x13 baking dish that has been lightly sprayed with no-stick cooking spray; spread half the bacon and half the cheese over the hash browns.
- Beat eggs, milk, onions, salt, pepper, and hot pepper sauce together then pour over the hash browns, bacon, and cheese; press the bacon and cheese evenly down into the hash browns and egg mixture with the edge of a spoon or clean fingertips; top with remaining bacon and cheese.
- Bake at 450 for 8 minutes; reduce oven temperature to 350 and continue baking for an additional 12-15 minutes.
- NOTE: I often use Simply Potatoes® "Southwest Style Hash Browns" for a spicier breakfast casserole.
