- Cook pasta as directed on package, omitting salt; drain. Cool.
- Combine beans, vegetables and cheese in large bowl.
- Add pasta and dressing; mix lightly.

- Drain the cooked pasta, and combine with corn, beans, salsa, and salad dressing.

SPICY SOUTHWEST PASTA SALAD
While browsing for a pasta salad recipe, I found Inez Willenborg's Homestyle Macaroni Salad. It sounded good, but I didn't have all the ingredients, so I improvised and came up with this one. We absolutely loved it. Thank you, Inez, for the recipe that was the inspiration for this winner.

- Cook pasta in salted boiling water until tender.
- Drain pasta and rinse with cold water.
- Combine all remaining ingredients in a large bowl.

MARINATED FETA CHEESE SALAD

- Remove the feta cheese from the pack and pat as dry as possible with kitchen towel. Press the flavors into it. Pack the cheese tightly into a jar and cover with olive oil. It will keep in the fridge for up to two months.
- Tips: Don't use bought dried herbs, instead make your own by drying leftover fresh herbs on a baking sheet. Leave them somewhere warm; e.g. on top of your boiler, washing machine, or oven and they will dry within a week. Or put them in the oven at 200 to 225 degrees for 1 hour.
- Uses: On a big plate, covered in fresh basil -- served with lots of other salads. As a cheese course, with crusty bread and fruit Don't throw away the oil -- use it in your dressing

- Cook pasta according to package directions.
- Meanwhile, in a large skillet, saute pepper and onions in oil until tender. Stir in the flour, chili powder, cumin, salt, and chipotle pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in 1/4 cup cheese until melted.
- Drain pasta; toss with sauce. Stir in bacon and cilantro. Transfer to a 2 quart baking dish coated with cooking spray. Sprinkle with remaining cheese. Bake, uncovered, at 400 degrees for 20-25 minutes or until bubbly.
MARINATED CHEESE APPETIZER PASTA SALAD

Steps:
- Cut cream cheese into 1/4 inch cubes.
- Make the marinade by combining sugar, basil, salt, pepper, oil, vinegar, pimento, parsley, onion and garlic in a mason jar with a tight lid.
- Add cubed cream cheese to the jar - shake well - place in refrigerator overnight.
- Fix pasta according to direction on package the day you wish to serve it. Drain well and lightly coat with Extra Virgin oil. Refrigerate until completely chilled.
- Shake marinade up, and pour into chilled pasta. Add package of crumbled cheddar cheese - mix gently, but well.
- Refrigerate unused portion - if it seems to have dried out later, use just a little white wine vinegar to moisten it up.

- Whisk together first 3 ingredients until mixture is blended; stir in diced red peppers and next 6 ingredients.
- Set marinade aside.
- Cut block of cheddar cheese in half lengthwise.
- Cut halves crosswise into ¼-inch thick slices.
- Repeat procedure with Monterey jack cheese and cream cheese.
- Arrange cheese slices alternatively in a shallow baking dish, standing slices on edge.
- Pour marinade over cheeses.
- Cover and chill at least 8 hours.
- Transfer cheese to a serving plate, and spoon remaining marinade over top.
- Serve with assorted crackers or even tortilla chips.

SUPERB!! I love this salad! I am submitting this on behalf of my friend Christa......she is a fantastic cook and came up with this wonderful salad. I thought I would share it with all of you, enjoy! Note: Use a little more mayo than what you think looks right, it is absorbed into the pasta overnight. If it's too dry at first then it will be way too dry the next day. Salad is to be slightly moist after chilling. Cooking time is chilling time. It is best if chilled overnight to get all the flavors soaked in well.

- Season the chicken strips with cayenne red pepper (to taste) or Mrs. Dash Southwest Chipotle seasoning (to taste) - set aside.
- Cook pasta 'al dente' - drain and rinse well with cold water.
