A creamy cilantro-lime yoghurt dressing makes everything come together in this southwestern chicken salad.

Ingredients

5 cups shredded romaine lettuce
2 cups shredded deli rotisserie chicken
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (11 oz) whole kernel corn with red and green peppers, drained and rinsed
1 cup chopped tomato
1/2 cup sliced green onions
1/3 cup olive oil or canola oil
1 1/2 cups finely chopped fresh cilantro leaves
1 clove garlic, finely chopped (1 teaspoon)
3 tablespoons lime juice
1/4 teaspoon salt
1/2 cup Mountain High™ whole milk plain yoghurt

Steps:

In large bowl, mix Salad ingredients.
In blender, place olive oil, cilantro, garlic, lime juice and salt. Cover and blend on high speed until smooth. If necessary, stop blender and scrape down mixture. Transfer to small bowl; beat in yoghurt with whisk until smooth.
Before serving, add dressing to salad mixture; toss until mixed well. Serve immediately, or refrigerate up to 1 hour before serving.

I have been preparing this salad for the past 6 or 7 years and I still love it just as much as the first time I made it. These ingredients just come together so beautifully in this dish you'll be amazed at the reactions each time you serve it. And unlike many salads, it is even great the next day as leftovers!

Ingredients

3 romaine lettuce hearts, shredded
1/2 cup red onion, diced
4 roma tomatoes, chopped
1 (15 ounce) can black beans, rinsed and drained
2 cups four-cheese Mexican blend cheese
1 (15 ounce) can whole kernel corn, drained
3 cups tortilla chips, broken and simply crushed between your hands
1/3 cup fresh cilantro leaves
1/2 cup fresh lime juice, usually about 4 limes
1/2 cup canola oil
1/2 cup sour cream
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

Prepare dressing first by combining in food processor or blender fresh cilantro, lime juice, sour cream, sugar, salt and pepper.
Then slowly drizzle in oil until fully combined.
Pour dressing into container and chill in fridge for several hours for flavors to meld.
In large glass/acrylic bowl layer lettuce, then tomatoes, onion, black bean, cheese, and corn.
(At this point the salad can wait for up to 8 hours before serving if you wish to be a step ahead later on.).
Before serving sprinkle broken chips over corn layer. Then pour dressing over chips and toss completely.

An excellent cool salad. It is make ahead and easy to make. The colors are very attractive, and the dressing is tart and tangy. You may also use the dressing on pasta or beans. Add grilled chicken strips for a complete meal, or Garbanzo beans, or try adding torn Romain lettuce just before serving.

Ingredients

2 cans black beans, rinsed and drained
1 can whole kernel corn, drained
1 green pepper, chopped
1 fresh tomato, chopped
1 onion, chopped (I like a purple onion)
monterey jack cheese, cubed (optional)
1/4 cup fresh lime juice
1/4 cup olive oil
3 tablespoons chopped cilantro
1 fresh jalapeno, chopped
1 clove garlic, minced
1/2 teaspoon chili powder (prefrences New Mexico)
1/2 teaspoon ground cumin

Steps:

Combine all ingredients, except the tomato, add dressing, and chill several hours or overnight.
Add tomato just before serving.
Dressing: Mix dressing ingredients in a jar.
Shake to mix, or whisk very, very well.
Store in a glass jar in refrigerator.
