Number Of Ingredients 12

1/4 cup finely chopped sweet onion
4 tablespoons cold butter, divided
1/4 cup white balsamic vinegar
1 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 cup shredded cheddar cheese
2 green onions, chopped
1/4 cup buttermilk

Steps:

  • In a small skillet, saute sweet onion in 1 tablespoon butter until tender. Add vinegar; cook and stir until liquid is evaporated. Cool., In a small bowl, combine the flour, sugar, baking powder and seasonings. Cut in remaining butter until mixture resembles coarse crumbs. Add the onion mixture, cheese and green onions. Stir in buttermilk just until moistened., Turn onto a lightly floured surface; knead 3-4 times. Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place in a greased cast-iron or other ovenproof skillet. Bake at 400° until golden brown, 12-15 minutes. Serve warm.

Green Onion and Cheddar Biscuits are easy to make with just 20 minutes of active preparation time. These biscuits are the ideal combination of buttery and cheesy, with a nice fresh flavor from the green onion.

Number Of Ingredients 10

2 cups All Purpose Flour, plus more for your work surface
1 teaspoon Granulated Sugar
1 tablespoon plus 1 teaspoon Baking Powder
1 teaspoon Salt
8 tablespoons chilled Butter, cut into small cubes
1 1/4 cup shredded Cheddar Cheese
1/2 cup chopped Green Onion
about 1/3 cup Whole Milk
1/2 cup Buttermilk
1 tablespoon melted Butter

Steps:

  • In large bowl, whisk the flour, sugar, baking powder, and salt together. Then add the butter and mix with your hands until the mixture resembles cornmeal. You can pulse the mixture together with a food processor if you prefer. Add 1 cup of the cheese and all of the green onion. Gently stir in the buttermilk, and the milk starting by adding 1/4 cup and adding more as necessary. You want the dough to be sticky, but not overly wet. I found that adding 1/3 cup of milk was just right, but you might need slightly more or less. Cover the dough and let it sit for 30 minutes. After 30 minutes, move an oven rack so it is at the level where it is on the top third of your oven. Heat your oven to 425 degrees. Pour the dough onto a floured surface and roll it out until it is about 1/2 inch thick. Fold the dough up into thirds and roll it out again. Repeat this two more times, this gives the biscuits flaky layers. Use a biscuit cutter to divide the dough into about 12 biscuits. Or just a knife to cut the biscuits into squares. Place the biscuits on a silicone mat or parchment lined baking sheet. Do not place the biscuits in the oven until the temperature reaches 425 degrees. Place the biscuits on a rack on the top third of the oven - not just in the middle. Bake the biscuits for 12 minutes. Then remove from the oven and brush melted butter and sprinkle the remaining cheese over the top of the biscuits. Let cook for another 3 minutes, until the biscuits are just starting to brown. Then turn on the broiler for about a minute to get the cheese nice and crispy.

2 cups self-rising flour, plus more for kneading
¼ teaspoon baking soda
7 tablespoons very cold butter, cut into pieces
¾ cup buttermilk, plus additional for brushing
½ cup shredded Irish Cheddar cheese, divided, plus more for topping
¼ cup sliced green onions, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk self-rising flour and baking soda together in a mixing bowl. Add cold butter and cut it into flour with a pastry blender until texture resembles coarse crumbs, 5 to 7 minutes. Make a well in the center of the flour mixture and pour in the buttermilk. Stir with a fork just until mixture starts to come together to form a shaggy dough.
  • Transfer dough to a floured work surface. Press into a roughly shaped rectangle. Fold into thirds using a bench scraper. Press again into a rectangle. Flour surface if the dough seems sticky. Roll dough with a rolling pin to 1/2-inch thickness. Sprinkle with half of the shredded cheese and half of the green onions. Fold dough into thirds. Dust with flour, if necessary, and roll out again to about 1/2-inch thickness. Top with remaining cheese and green onions. Fold into thirds and roll out again to about 1/2 inch thickness. Cut biscuits with a 2- or 3-inch biscuit cutter.
  • Transfer biscuits to prepared baking sheet. Brush lightly with buttermilk. Sprinkle tops with about a teaspoon of grated cheese.
  • Bake in preheated oven until cooked through and golden brown, about 20 minutes. Transfer to a rack to cool.

1 cup Gold Medal™ all-purpose flour

1 1/2 cups shredded Cheddar cheese (6 oz)
1/2 cup chopped green onions (8 medium)
1 cup milk

Steps:

  • Heat oven to 450°F. In large bowl, mix flours, baking powder, sugar and salt. Using pastry blender or fork, cut in butter until mixture is crumbly. Stir in cheese, green onions and milk just until dry ingredients are moistened.
  • On ungreased cookie sheet, drop dough by 12 spoonfuls about 2 inches apart.
  • Bake 12 to 15 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

2 strips bacon
1 small onion, chopped
3 cups all-purpose flour, plus more for dusting
1/3 cup powdered milk
5 teaspoons baking powder
1 tablespoon sugar
2 teaspoons cream of tartar
2 teaspoons kosher salt
1 stick (8 tablespoons) cold butter, cut into bits, plus 4 tablespoons butter, melted
1/2 cup shortening
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes. Remove and drain on paper towels until cool, then chop into small pieces. Add the onion to the skillet with the bacon grease and cook over medium-low heat until light golden, about 5 minutes. Drain on paper towels.
  • Stir together the flour, powdered milk, baking powder, sugar, cream of tartar and salt in a medium bowl. Using a pastry cutter, cut the chilled butter bits and shortening into the dry mixture until blended thoroughly. Stir in the bacon and onion. Fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and use your hands to press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, about 15 minutes.

600g baking potato , peeled and chopped into chunks
300g mature cheddar , 200g grated, 100g cubed
pinch cayenne pepper
large bunch spring onions , finely sliced
1 egg , beaten
500g pack all-butter puff pastry
jar caramelised red onions (we used English Provender Company), to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Boil potatoes for 15 mins until tender, then drain well and smash a little. Cool slightly.
  • Mix the cheese, cayenne and onions with the smashed potatoes and stir to make a mouldable filling. Roll out the pastry to a rectangle about 25 x 35cm. Carefully lift onto a baking sheet and brush all over with beaten egg.
  • Press the cheese mix along one of the long sides of the pastry, leaving 2cm pastry free on one side for sealing, and half of the pastry empty on the other side for folding over later. Fold the pastry over the filling and press the edges together, before trimming with a knife and sealing well by pressing the edges with a fork.
  • Brush with egg and bake for 30 mins. Cool, then slice and serve with caramelised red onions. Can be made 1 day ahead
