Chicken and Andouille Sausage With Peppers (Ww 5 Points) image

My personal rendition of a WW recipe that I love because it packs all the flavors of NOLA while managing to be both fast and light. The level of heat here varies so much based on your brand of Cajun spice and sausage - so taste and adjust accordingly. For those who *do* count points, try finding the lowfat chicken andouille sausage. Half the points of the regular so you can add more to the dish. (Points confirmed on WW Recipe Builder.)

cooking spray
1 lb boneless skinless chicken breasts or 1 lb chicken breast tenders, 1 inch pieces
1/4-1/2 teaspoon cajun spices (try Cajun Spice Rub Mix Recipe)
1/4 teaspoon garlic powder
1/4 lb andouille sausage, thinly sliced
1 red pepper, cut into 1/4 inch slices
1 onion, cut into 1/4 inch slices
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon tomato paste or 1 tablespoon ketchup

Steps:

  • Cut chicken into 1 inch or slightly smaller cubes. Season with garlic powder and Cajun spice mix.
  • Place nonstick over medium high heat. Give a quick shot of cooking spray and add the seasoned chicken. Cook for a minute and add the andouille sausage. Continue to cook for three to four minutes until the chicken is opaque.
  • Remove chicken and sausage from pan and cover to keep warm. Gently wipe the pan to remove the excess oil. Add the onions and peppers to the pan and cook for four to five minutes.
  • Stir the canned tomatoes and tomato paste into the skillet. Return the chicken and sausage and simmer for six to eight minutes.
  • Serve with hot cooked rice for additional points.

1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon thyme

Steps:

  • Preheat oven to 375.
  • Prepare the spice blend by combining the ingredients in a small bowl.
  • Place the chicken pieces onto a baking sheet, skin side up. Bake for 20 minute Remove the chicken from the oven and cool for 5-10 minute.
  • When you can handle the chicken, remove the skin, sprinkle the entire surface with a light coating of the spice blend and replace on the baking sheet. Bake 10 min more or until done.
  • 5 Points per serving (6 ounces).

3 tsp(s) Tabasco pepper sauce or Frank's brand, (1-2 tablespoons), mild
1 tsp(s) Garlic powder
0.75 tsp(s) Poultry seasoning
1.25 pound(s) Uncooked boneless skinless chicken breast 4 (5-ounce) breasts
0.333 cup(s) All-purpose flour
1 tsp(s) Paprika
1 tsp(s) Onion powder
1 tsp(s) Kosher salt
1 pound(s) Egg(s)
1 cup(s) Cornflake crumbs
4 spray(s) Cooking spray

Steps:

  • Stir together buttermilk, pepper sauce, garlic powder, and poultry seasoning in 2-cup glass measure until blended. Put chicken in large zip-close plastic bag; add buttermilk mixture. Squeeze out air and seal bag; turn to coat chicken. Refrigerate at least 2 hours or up to overnight.
  • Mix together flour, paprika, onion powder, and 1/2 teaspoon salt on sheet of wax paper. Beat egg in small bowl. Place crushed cornflakes on separate sheet of wax paper. Drain chicken in colander, discarding buttermilk; sprinkle chicken with remaining 1/2 teaspoon salt. Dredge chicken in flour mixture, then dip in egg, allowing excess to drip off. Coat chicken with cornflakes, lightly pressing so they adhere. Spray nonstick spray all over chicken.
  • Depending on air fryer settings, preheat 6- to 8-quart air fryer to 350°F or 360°F for 3 minutes. Spray bottom and side of basket with nonstick spray. Arrange chicken in basket, leaning pieces against side of basket as needed to fit. Air fry 5 minutes. Turn breasts being careful not to disturb coating. Air fry until crust is golden and crispy and instant-read thermometer inserted into chicken registers 165°F, 5 minutes longer. Serve with hot sauce.
  • Per serving: 2 pieces chicken

3 ounces buttermilk
1/2 cup corn flake crumbs
1 lb boneless skinless chicken breast, uncooked

Steps:

  • Preheat oven to 365ºF. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.
  • Combine flour, salt and cayenne pepper together in a bowl. In 2 separate bowls, place the buttermilk and corn flakes crumbs .
  • Evenly coat each side of the chicken breast halves in the flour mixture. Next, dip the chicken into the buttermilk and then corn flakes crumbs.
