SOUTHERN GREEN BEANS AND POTATOES

Steps:
- Wash the potatoes under cool running water. Set aside.
- Place a couple inches of cold water in your sink. Add the green beans.
- Swish the beans around to wash them, removing any leaves or debris.
- Lift the beans out of the wash water. Place in a colander to drain.
- One at a time, snap the ends off the beans, removing any strings as you go.
- Discard the end pieces.
- Snap each bean into bite sized pieces.
- Place the beans in a large stock pot and cover with water by about 3 inches.
- Add the red potatoes. Cut them into quarters if preferred.
- Add the bacon grease.
- Add the sugar.
- Place on stove top over Medium High heat and bring to a boil.
- Reduce the heat to Medium and let cook for one hour.
- Add the black pepper.
- Add the salt. Stir well.
- Continue to cook the beans and potatoes until done as desired.
- Enjoy!
SOUTHERN GREEN BEANS AND NEW POTATOES

- In a medium sized saucepan, place the red potatoes and cover with water. Boil over medium high heat until a fork can pierce the potatoes easily. (about 15 minutes)
- Drain the potatoes and set them aside.
- In the same saucepan, place 4 slices of bacon and allow to fry until crispy.
- When crispy, remove the bacon and set aside.
- Add the butter to the bacon drippings and heat over medium heat till melted. Add the chopped onions and cook till translucent.
- Cut the bacon into pieces and add back to the saucepan.
- Drain the cans of green beans and pour into the saucepan.
- Add the potatoes back to the saucepan. Add water to come about halfway up the level of the green beans in the saucepan (about a cup of water) (read step 9 before you add the water).
- Add 1 Tbs sugar and Add 1 heaping tsp of chicken broth concentrate (if you do not have broth concentrate, then add chicken broth instead of water in step number 8). Add the vinegar and cayenne.
- Stir well and when beans start to steam and boil, they are done. Taste and add salt and pepper to taste.

- Wash and trim beans then cut into 2-inch pieces; set aside.
- Cut bacon into 1/2-inch pieces then sauté over medium heat in a large pot or Dutch oven until browned.
- Add onion and beans to the bacon then continue to sauté for 2-3 minutes. Remove from heat.
- Cut potatoes into large cubes then add to pot. Add chicken broth (enough to cover potatoes), butter, salt and pepper to the pot then bring to a boil.
- Cover pot, reduce heat to medium-low then cook for 30-45 minutes, stirring occasionally. Let rest 15 minutes before serving.

Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

Steps:
- Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
- Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

- Place the water in a large pot, and mix in the green beans, ham hock, onion, garlic, and vinegar. Season with salt and pepper. Bring to a boil, and cook 10 minutes.
- Reduce heat to low, and simmer 4 hours. Remove the ham hock, and slice the meat into small pieces. Return meat to the beans, and serve.
