Speckled Butter Beans are a Southern favorite. These tasty beans are great as a side dish or with a few more ingredients make a wonderful budget friendly meal.

1 tsp Bacon Grease
1 Small Onion, diced
1/2 c Celery, chopped
2 Small Hot Pepper, seeded and diced (optional) or a sweet bell pepper.
28 oz Package of Fresh Frozen Speckled Butter Beans
2 c Chicken or Vegetable Stock
2 c Water
1 Clove of Garlic, crushed
Salt and Cracked Black Pepper, to taste
6.5 oz Smoked Sausage (see notes)

Steps:

  • Add a teaspoon of bacon fat to a soup pot or dutch oven; heat over medium.
  • Once the bacon fat has melted; add the diced celery, onion and peppers. Saute 3 to 5 minutes.
  • Next, add the crushed clove of garlic, frozen speckled butter beans, stock and water. Cover with a lid and bring to a boil. Reduce heat and simmer 45 minutes.
  • Lastly, add the sliced smoked sausage and simmer an additional 15 minutes.

Butter beans the way Mamaw used to make them! Lots of butter, cream, and bacon make these beans true southern comfort food.

Number Of Ingredients 5

1 (16 ounce) package dried lima beans
5 slices bacon, chopped
1 cup heavy whipping cream
½ cup butter
salt and ground black pepper to taste

Steps:

  • Cover lima beans with water in a large pot and soak overnight. Drain and return lima beans to the pot; cover beans with fresh water.
  • Heat a large skillet over medium-high heat; cook and stir bacon until crisp, about 5 minutes. Reserve about 2 teaspoons bacon drippings and drain bacon on paper towels.
  • Bring lima beans, bacon, and reserved bacon drippings to a boil. Reduce heat to medium-low and simmer until beans are just tender, 40 to 60 minutes. Stir heavy cream and butter into bean mixture and cook until thickened, about 15 minutes more. Season with salt and pepper.

One of the South's favorite side dishes is Speckled Butter Beans, sometimes also known as Colored Butterbeans. They are quick and easy to fix and go with just about any meat dish you will serve.

Number Of Ingredients 5

1 bag, frozen Speckled Butter Beans, 24oz.
1/4 pound Fatback
1 teaspoon Salt
1/2 teaspoon Black Pepper
Water as needed for cooking.

Steps:

  • Rinse the frozen beans under cold running water.
  • Add beans to a large stock pot. Cover beans with 2 inches of water.
  • Slice fatback as needed. Add to pot with beans.
  • Place pot over Medium heat on stove top. Bring beans to a boil.
  • Cover pot. REDUCE heat to Medium-Low.
  • Simmer beans about 45 minutes or until they start to get tender.
  • Add salt.
  • Add black pepper.
  • Stir well. Cover again and cook until done.
  • Serve warm.
  • Enjoy!

I love fresh butter beans but wanted easy of prep (no watching the pot in case the beans boiled dry) and found this recipe online and made a slight change to suit my personal preference.

4 cups fresh butter beans
2 tablespoons butter
1 1/2 tablespoons ham soup base (Better than Bouillon) or 1 1/2 tablespoons chicken bouillon
1 1/2 teaspoons salt
water

Steps:

  • Place washed butter beans in slow cooker (I use a 1.5 qt size).
  • Add butter, bouillon, and salt.
  • Add water to cover and stir to mix ingredients.
  • Cook on HIGH for 1.5 hours, then cook on LOW for 2-3 hours or til butter beans are tender.
