Our peach cobbler can easily be made with either fresh or frozen peaches. Great dessert for most any meal and a real old Southern favorite.

4 cups sliced Peaches, fresh or frozen (thawed)
1 cup sugar, divided
1/2 teaspoon Vanilla Extract
1 teaspoon Lemon Juice
1 stick butter, melted
1 cup All-Purpose Flour
2 teaspoons Baking Powder
Dash of salt
3/4 cup Milk

Steps:

  • Place peaches in a large mixing bowl.
  • Add ½ cup of the sugar.
  • Add extract.
  • Add lemon juice.
  • Toss gently to coat peaches. Set aside.
  • Place flour in a separate small bowl.
  • Add baking powder.
  • Add the other ½ cup sugar.
  • Add dash of salt.
  • Stir dry ingredients together.
  • Gradually stir in the milk until batter is smooth.
  • Pour melted butter into baking dish (3qt)
  • Pour flour mixture on top of butter. Do not stir.
  • Pour peaches over top of flour mixture. Do not stir.
  • Bake at 350F degrees for 50-60 minutes until golden brown on top.
  • Enjoy!

In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

1/4 cup fresh lemon juice

1 cup all-purpose flour
1 1⁄2 tsp. baking powder
1 cup whole milk
1 tsp. vanilla extract
Vanilla ice cream or whipped cream (for serving; optional)

Steps:

  • Toss peaches, lemon zest, lemon juice, 1/4 cup sugar, and 1/4 tsp. salt in a large bowl. Let sit, stirring occasionally, until saucy, about 15 minutes.
  • Preheat oven to 350°F. Place butter in a 13x9" glass or ceramic baking dish and heat in oven until melted, 8-10 minutes. Remove pan from oven.
  • Meanwhile, whisk flour, baking powder, and remaining 3/4 cup sugar and 1/2 tsp. salt in another large bowl. Add milk and vanilla and whisk until batter is smooth with no lumps. Pour evenly over melted butter in baking dish (do not mix). Spoon fruit mixture and 3 Tbsp. of the accumulated juices evenly over batter.
  • Bake cobbler, rotating pan halfway through, until batter is puffed and lightly golden across the surface and browned around the edges, 40-45 minutes. Let cool 10 minutes.
  • Serve with ice cream or whipped cream if desired.

  • In a medium bowl, add flour, baking powder, sugar and salt; whisk until mixed. Add ¾ cup butter and with a dough blender, cut butter in until mixture is crumbly; set aside.
  • In a large saucepan over medium-low heat, add the remaining 2 tablespoons butter and when melted, add peach mixture. Stir well and simmer gently for 5 minutes. Transfer the mixture to a 2-quart casserole.
  • Pour in ½ cup heavy cream in the dough and stir just enough so the liquid is absorbed - don't overdo it. Spoon dough over the peach mixture and gently spread it out with a spatula. Pour 2 tablespoons heavy cream over and brush on evenly.
  • In a small bowl, combine sugar and ground cinnamon; sprinkle over the cobbler. Place small pieces of butter all over the top. Place casserole on a baking sheet in case it overflows and transfer to the preheated oven; bake for 40 to 45 minutes or until the fruit is bubbling and the top is nice and golden brown.
  • Remove from the heat and let it sit for 5 minutes before serving with vanilla ice cream. Serves 8.

Steps:

  • Preheat oven to 400 degrees. In a large bowl, toss peaches with 1/4 cup sugar and 1/2 teaspoon cinnamon; set aside. In a medium bowl, whisk together flour, baking powder, salt, remaining 3/4 cup sugar, and remaining 1/2 teaspoon cinnamon. In another bowl, whisk 4 tablespoons melted butter with milk and egg. Whisk butter mixture into flour mixture.
  • Melt 1 teaspoon butter in a 6-inch ovenproof skillet over medium heat. Once skillet is hot, remove from heat. Pour one-quarter of batter into skillet. Spread batter evenly over bottom. Spoon one-quarter of peach mixture over batter. Repeat with remaining three skillets. Transfer to oven, and bake until cobblers set, 25 to 30 minutes. Remove from oven; let cool slightly.
