My family loves pasta, so I decided to get in the kitchen and come up with my own chicken pasta bake. This recipe is quick and simple to make, and it tastes so good, they all go back for seconds. I serve it with a tossed salad and garlic bread. -Kim Weishuhn, Pensacola, Florida

2 packages (12 ounces each) bow tie pasta
2 pounds boneless skinless chicken breasts, cut into 1-inch strips
2 tablespoons olive oil, divided
2 bunches green onions, chopped
2 medium green peppers, chopped
2 medium sweet red peppers, chopped
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
2-1/2 teaspoons Cajun seasoning
1-1/2 teaspoons garlic powder
2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions to al dente., Meanwhile, in a Dutch oven, saute chicken in 1 tablespoon oil until juices run clear. Remove with a slotted spoon and set aside. In same pan, saute onions and peppers in remaining oil until tender. Add broth, soups, milk, Cajun seasoning and garlic powder. Bring to a boil; remove from heat., Drain pasta. Add pasta and chicken to soup mixture; toss to coat. Divide between two greased 13x9-in. baking dishes. Sprinkle with cheese. Cover and bake casseroles 20-25 minutes or until bubbly. Freeze option: Cool unbaked casseroles; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casseroles, as directed, increasing time to 55-60 minutes or until heated through and a thermometer in center reads 165°.

1/4 teaspoon garlic powder
1 egg

Steps:

  • Preheat oven to 375°F.
  • In a small mixing bowl, mix thyme, garlic powder, cajun seasoning, onion powder, black pepper, and bread crumbs.
  • In a separate bowl, beat one egg.
  • Spray a 13"x9" baking dish with a nonstick coating.
  • Dip chicken breasts in beaten egg and then in bread crumb/seasoning mixture to coat.
  • Arrange in baking dish leaving a small gap between each chicken breast.

1/2 cup baby carrots (diced)
1 Tablespoon olive oil
4 chicken sausages
1 cup fresh sliced mushrooms
1/3 red onion (cut into pieces)
1/4 teaspoon cajun seasoning
1/2 teaspoon black pepper
1/2 teaspoon garlic salt
1/4 teaspoon onion salt

Steps:

  • Preheat oven to 350 degrees.
  • On a baking sheet, combine the sweet potato pieces, baby carrots, and olive oil.
  • Bake for 30 minutes, or until the sweet potato is soft.
  • In a skillet or pan, add your chicken sausage, fresh sliced mushrooms and red onion.
  • In a small bowl, combine your cajun seasoning, black pepper, garlic salt and onion salt and sprinkle over the ingredients cooking in the pan.
  • Once all the veggies have softened and your chicken sausage is golden, add your sweet potatoes, and carrots. Cook until well combined.
  • Serve warm and enjoy.

6 chicken drumsticks
3 tablespoons butter, melted
½ teaspoon baking powder

¼ teaspoon dried basil
¼ teaspoon ground thyme
¼ teaspoon dried oregano

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking pan with aluminum foil.
  • Pat drumsticks with paper towels until dry.

Another comfort food from my childhood. NOTE: Mom always used bone in chicken legs with skin on, that's all they had back in the 70's! Now I use boneless/skinless chicken breasts and thighs. Since bones add weight, 3 pounds of boneless chicken should be about right.

1 lb bacon
1 (10 ounce) can cream of chicken soup
1 (10 ounce) can cream of mushroom soup
2 cups sour cream
1 lb corkscrew macaroni, cooked and drained

Steps:

  • Arrange chicken pieces in 9x13 pan, skin side up.
  • Cut bacon in 2" lengths and lay over chicken.
  • Bake uncovered at 350 for 45 minutes.
  • Carefully, pour off some grease.
  • Blend soups and sour cream; pour over chicken and continue to bake for another 30 minutes.
  • Transfer chicken to serving dish.
