This recipe is adapted from the Central Market in Fort Worth, Texas. Posted for the Summer '09 Comfort Cafe.

5 cups apple cider
1/4 cup fresh lemon juice
1/2 teaspoon salt
1 2/3 cups tequila
1/3 cup orange-flavored liqueur
8 lemon slices (to garnish)

Steps:

  • In a saucepan, combine the cider, lemon juice and salt. Bring the mixture to a simmer and skim it.
  • Add the tequila and liqueur and heat over moderate heat, stirring until it is hot.
  • Divide the mixture among 8 heated mugs and garnish each drink with a lemon slice.

This should be made with the cone-shaped raw sugar called piloncillo, but you may substitute dark brown sugar.

8 cups water
3 small piloncillo cones (panocha)
1/2 ounce baking chocolate, chopped
2 whole cloves
cinnamon
1/4-1/2 cup regular grind coffee
1 teaspoon vanilla extract

Steps:

  • Heat water.
  • Add piloncillo, chocolate, cloves and cinnamon stick.
  • Bring to a full boil; reduce heat and simmer, uncovered, for 15 minutes.
  • Stir in coffee or add coffee in a bouquet garni bag for easy removal.
  • Remove from heat and let stand for 5 minutes.
  • Stir in vanilla extract.
  • Strain through a double thickness of cheesecloth or, better yet, use a bouquet garni bag for the coffee, then just remove the bag of grounds.
  • Serve immediately.

3 red apples, unpeeled, cored, cut into matchsticks
1 medium jicama, cut into matchsticks
1 small red onion, diced
1/2 cup orange juice
2 tablespoons lime juice
2 tablespoons cider vinegar
2 tablespoons brown sugar
1/4 cup chopped of fresh mint
lettuce leaf

Steps:

  • Combine apples, jicama, and onions.
  • For dressing whisk o.j, lime juice, vinegar and brown sugar untill sugar dissolves.
  • Pour dressing over apple mixture; toss to coat.
  • Add mint, toss to mix. Serve in lettuce lined bowl and garnish with fresh mint leaves and lemon and lime slices if desired.

1 (20 ounce) can tomato sauce
1 (20 ounce) can of sweet tomatoes, chopped
1 (20 ounce) can chili beans
1 onion, diced
1 (16 ounce) can corn
1 (1 1/4 ounce) package taco seasoning

Steps:

  • Brown beef, add onion, saute. Add all the other ingredients and salt and pepper to taste. Cook until heated all the way through. Serve in bowl top with cheddar cheese, onions and guacamole.

1 (1 1/4 ounce) package taco seasoning
1 tablespoon Worcestershire sauce
1/2 teaspoon chipotle hot sauce
1 tablespoon brown sugar
1 teaspoon garlic powder
1 cup spicy cheese crackers
1 1/2 cups hot spicy peanuts
2 cups chow mein noodles
2 cups pretzels
2 cups Corn Chex
2 cups Rice Chex
2 cups Wheat Chex
1 1/2 cups French-fried onions

Steps:

  • Preheat oven to 250 degrees.
  • Melt butter in saucepan.
  • Stir in taco seasoning, worcestershire, hot sauce, sugar, and garlic.
  • In large roasting pan, combine cheese crackers, nuts, chow mein noodles, pretzels, cereals, and onions.
  • Slowly pour butter mixture over, stirring until pieces are well coated.
  • Bake for 30 minutes, stirring every 10 minutes.
  • Cool to room temperature, and store in airtight container.

1/2 cup chopped onion
4 bacon strips, diced
2 tablespoons all-purpose flour
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/8 teaspoon garlic powder
1 package (32 ounces) frozen cubed hash brown potatoes
2 cans (14-1/2 ounces each) chicken broth
1 can (14-3/4 ounces) cream-style corn
1 can (11 ounces) Mexicorn, drained
1 can (4 ounces) chopped green chilies
1/4 cup pearl onions
Sour cream and minced fresh cilantro, optional

Steps:

  • In a Dutch oven, saute onion and bacon until onion is tender and bacon is crisp. Stir in the flour, cumin, chili powder and garlic powder. Bring to a boil; cook and stir for 1 minute or until thickened. , Stir in the hash browns, broth, cream corn, Mexicorn, chilies and pearl onions. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through. Garnish with sour cream and cilantro if desired.
