1 teaspoon salt
1 1/2 sticks (6oz, 168g) cold unsalted butter, cut into 1" chunks

SOURDOUGH SCONES

Sourdough Scones image

While trying to use up some excess sourdough starter, I developed this recipe. The scones come out really tender and moist and my kids love the cinnamon-y taste from the apple pie spice.

Provided by HARDINGAGGIES

Categories     Bread     Yeast Bread Recipes     Sourdough Bread Recipes

Time 40m

Yield 16

Number Of Ingredients 10

2 ½ cups bread flour
½ teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
½ cup white sugar
1 teaspoon apple pie spice
⅓ cup cold butter
1 ¼ cups sourdough starter
2 tablespoons milk
2 tablespoons coarse sugar, for garnish

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk together the flour, salt, cream of tartar, baking soda, sugar, and apple pie spice in a mixing bowl. Cut in the butter with a knife or pastry blender until the mixture resembles coarse crumbs. Add the sourdough starter and mix by hand to form a soft dough.
  • Turn the dough out onto a lightly floured surface and divide it into 4 pieces. Pat or roll one piece of dough into a 1/2-inch thick round. Cut it into 4 wedge-shaped pieces and place the scones on the prepared baking sheet about 1 inch apart. Repeat with remaining pieces of dough. Brush the tops of the scones with milk and sprinkle with coarse sugar, if desired.
  • Bake until the scones just start to turn golden, 12 to 15 minutes.

SOURDOUGH SCONES

Sourdough Scones image

Need to use up some starter? This recipe is perfect! Recently, I was looking for some way to use up excess sourdough starter rather than my usual go-tos for pizza crust and pancakes. I came up with this cinnamon-y recipe. My kids went nuts over it. I like it because it is not too sweet. You don't taste the sourdough. I think the next time I make these I'm going to use them for Strawberry Shortcakes - yum!

Provided by Wendy H

Categories     Scones

Time 25m

Yield 16 scone, 1 serving(s)

Number Of Ingredients 10

2 1/2 cups white bread flour
1/2 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 cup sugar
1 teaspoon apple pie spice
1/3 cup cold butter
1 1/4 cups sourdough starter
2 tablespoons heavy cream (optional)
coarse sugar, for sprinkling on top (optional)

Steps:

  • Preheat oven to 400°F Mix together all dry ingredients. Cut butter into small-ish pieces and cut into flour mixture until crumbly. Add starter. Mix by hand until it all clings together. Divide into 4 pieces. Press each piece into a round shape, roughly ½ inches thick. Cut each circle into 4 pieces. Separate and place cut wedges, about 1 inch apart, onto a parchment paper lined baking sheet. After forming the rest of the wedges, I brushed the tops with heavy cream and sprinkled with coarse sugar.
  • Bake for approximately 15 minutes, or until they just start to turn golden.
  • Enjoy!

  • Preheat the oven to 200c and line a baking tray with baking parchment. Place the flour, salt and butter in a large bowl and rub together with your fingertips until most of the butter lumps have gone. Add the sugar and dried fruit and give it a quick mix.
  • In a separate bowl, mix the starter, milk and vanilla extract. Pour 3/4 of the starter mixture into the flour mixture and use a round ended knife to work the mixture together. Add more of the starter mixture and work in gently until you have a soft, slightly sticky dough. Don't overwork, or you'll get tough scones.
  • Tip out the dough onto a floured surface and flatten it out with your hands so that it's about 3cm thick. Use a round cutter dipped in flour (to prevent it sticking) and cut out your scones. Make sure you just press the cutter down rather than twist it - otherwise you'll get scones that rise a bit wonky. Gather the leftover dough, gently rework and cut out the rest of the scones until all the dough is used.
  • Place on the prepared baking tray, brush with a little milk and place in the oven for 12-15 minutes until golden brown.

  • Crumpets. Add your sourdough starter to crumpet batter for a super light and airy texture. Try using our crumpet recipe for a fluffy, golden brown result.
  • Crackers. Mix starter excess with seeds and toasted, raw quinoa then pour onto a non-stick sheet. The mix should be the consistency of porridge. Spread evenly, sprinkle with salt and then bake at 200C/180C fan/gas 6 for 10-15 mins until browned and crisp.
  • Pancakes. Add your starter leftovers into pancake batter for a tangy flavour and added fluffiness. Try our simple sourdough pancakes recipe to use up your discard and make a delicious breakfast treat.
  • Sourdough pizza. Take your pizza to the next level by incorporating sourdough starter into the dough base. When pan-fried or baked, this results in a wonderfully crispy and chewy crust.
  • Scones. Mix your sourdough starter into a batch of scones for some added texture and flavour. It goes well with our easy fluffy scones or these savoury classic cheese scones.
  • Sourdough focaccia. The act of making focaccia is often every bit as joyful as the eating, and comes as no exception to this sourdough version. The delightfully soft and squidgy dough is given its characteristic dimpled appearance by softly poking the surface with your fingers before baking.
  • Toad-in-the-hole. Take a classic childhood favourite to the next level with the addition of sourdough starter. The starter will ensure it rises and becomes super light.
  • Sourdough hot cross buns. Give this classic Easter bake a tangy flavour twist with your leftover starter. Although these sourdough hot cross buns take a little more effort in terms of stretching and proving the dough, they are well worth it for the end result.
  • Dusting powder. Use up your sourdough starter with this versatile dusting powder. Dry out the starter in a thin layer, then grind into a powder using a pestle and mortar.
  • Sourdough cinnamon buns. These sourdough cinnamon buns are utterly irresistibly drizzled with a layer of soft creamy cheese icing. The subtle tang of sourdough starter forms a perfect balance to the characteristically sweet and sticky flavours in this Nordic bake.
