Steps:
- Preheat oven to 350 degrees F. Grease and flour 9 x 13 inch pan.
- Cook first six ingredients over low heat until well blended. Set aside to cool.
- In a separate bowl, mix together brown sugar, oatmeal, baking soda, butter, flour and salt until crumbly. Press half of mixture into pan.
- Pour cooked mixture over crust and crumble the other half of crust over the top.
- Bake for 20 minutes.

- Preheat oven to 350°. In a large bowl, combine the flour, sugar, caraway seeds, baking powder, salt and baking soda. In a small bowl, whisk eggs and sour cream. Stir into dry ingredients just until moistened. Fold in raisins. , Spoon into a greased 9-in. springform pan. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool on a wire rack for 10 minutes before removing sides of pan. Cut into wedges; serve warm.

MARGARET'S RAISIN BREAD

- Preheat the oven to 350 degrees F. Heavily grease and flour the insides of three empty 15-ounce cans. In a medium heatproof mixing bowl, pour the boiling water over the raisins and baking soda. Set aside to cool. In a medium mixing bowl, sift together the flour, sugar and salt. Stir in the bran flake crumbs. Lightly beat together the egg and oil, and stir into the flour mixture. Stir in the cooled raisins and water. Divide the batter evenly among the 3 cans, filling about three-quarters of the way up. Bake on the lowest rack until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Cool for about 10 minutes and run a knife along the sides of the can to remove. If packing as gifts, just wrap in the can!

Steps:
- Sift together flour, baking powder, and salt in a large bowl.
- Add brown sugar and raisins. Stir well.
- Now add the eggs, milk, sour cream and melted butter. Stir well, but don't overmix.
- Pour batter into a well greased 8x4 laof pan.
- Bake at 350* for 1 hour.
- Cool 20-30 minutes in the pan. Turn out onto wire rack to completely cool.
- This is wonderful served with butter.

IRISH SOUR CREAM BREAD
This is a delicious twist on the traditional Irish Soda Bread, that omits the "soda" entirely and substitutes sour cream for the traditional buttermilk. I think it makes the loaf more moist, sweet and delicious. It has become my favorite version. My husband got it from a colleague, whose great-grandmother (Mary Moriarty, born in Killarney, County Kerry, Ireland in 1902) handed it down to her. Bravo Mary Moriarty!

Steps:
- Sift first 3 ingredients together in Large bowl (#1).
- Mix next 5 ingredients in Smaller bowl (#2).
- Slowly mix Bowl #2 ingredients into Bowl #1 until well blended.
- Mix in 2 cups of Raisins (and 1 tablespoons Caraway Seeds, if desired).
- Pour into 9" greased and floured round cake pan and shape into round loaf. (Note: Batter will be sticky.).
- Sprinkle the top with Cinnamon and/or Sugar, if desired.
- With a sharp knife, make an "X" in the top of loaf.
- Bake for 50-55 minutes at 350 degrees.
- When toothpick comes out clean, the bread is done.

- Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in raisins. Combine cinnamon and remaining sugar; set aside. , Spoon half the batter into 2 greased 8x4-in. loaf pans. Sprinkle with half of the reserved cinnamon sugar; repeat layers. - In a small saucepan, place raisins and enough water to cover; bring to a boil. Remove from the heat; set aside. , In a large saucepan, combine the sugar, cornstarch, salt, cloves and cinnamon. Stir in sour cream and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat., Drain raisins, reserving 1/2 cup liquid. Gently stir liquid into filling. Add raisins, and nuts if desired. Pour into pie shell. , For meringue, in a small bowl, beat egg whites and salt on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edge to crust. , Bake at 350° for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving. Refrigerate leftovers.

I got this when I attended a bible school in Rocky Mount, VA. One of my fellow students passed it on to me, after I begged her for it. I have made these numerous times, and they are always great. Beware, if you don't like raisins, you won't like this. It has TONS of raisins in it. Also, I had to guess at how many servings this made, I can't remember.

- Raisins Cover raisins with water.
- Boil, drain& set aside.
- Cream brown sugar,& margarine.
- Add oatmeal, flour,& baking soda.
- Do not add raisins.
- Place half of mixture in a 9 x 13 inch pan, sprayed with cooking spray.
- Bake at 350 for 7 minutes.
- In a heavy saucepan, combine eggs, sour cream, cornstarch, salt,& sugar.
- Cook, stirring constantly, till thick.
- Add drained raisins.
- Pour this whole mixture over the crust previously baked.
- Sprinkle remaining half of crust mixture over the top, for a crumb topping.
- Bake at 375 for 30 minutes.

SOUR CREAM BREAD (BREAD MACHINE)
After trying a lot of really bland white bread recipes for bread makers, I found this one in the original Black and Decker book that came with my machine. It's by far the best recipe I've tried. The bread tastes like a fresh bakery loaf and is almost impossible to resist hot out of the machine with butter. Enjoy!

- 2. I use "Regular Light Crust" setting but recipe calls for "French Bread" setting.

SOUR CREAM PUMPKIN BREAD
I used to make this for a Bread and Breakfast Inn in Highlands, N.C. This is a variation on my Sour Cream Banana Bread, which turned out to be a duplicate recipe here on Zaar. So, in loving memory of my dear banana bread, here is one of the variations! You will love this! You may use flavored yogurt to kick this up a notch! Try vanilla! This also makes a great gift!

- Cream the butter and sugar together. Stir in the eggs and vanilla. Stir flour, baking soda, and salt together and add to the butter and sugar. Add the pumpkin, sour cream, cinnamon and nutmeg. Stir.
- Bake in a greased loaf pan at 350*F. for 1 hour. If using mini loaf pans, bake for about 45 minutes. This makes 3 mini loaves for me.
- Variation:.
- Substitute banana for the pumpkin, add 1/2 cup nuts, if desired, and leave out the cinnamon and nutmeg.
- You may also substitute applesauce for the pumpkin, adding apple pie spice. Have fun!
