SOUR CREAM POUND CAKE
The original pound cake appeared in America's first cookbook and was made with one pound each of butter, sugar, eggs and flour. Now that's a lot of cake! Vintage recipes also suggest separating egg yolks from whites and whipping the whites to stiff peaks before folding them into the cake batter. We tested and didn't feel this extra effort was worth the pay-off. We've scaled down the ingredients and the work involved to make a showpiece cake that is perfect for your next family gathering. The key is the sour cream, which balances the sweetness and ensures your cake remains soft for days! This pound cake is moist, dense and dangerously buttery.

- Preheat the oven to 325 degrees F. Spray a coated 10- to 14-cup Bundt pan with nonstick cooking spray and dust with flour, making sure to coat all the details of the pan. Invert the pan and shake out any excess.
- Add the butter to a stand mixer fitted with the paddle attachment. Beat on medium speed until fluffy, about 1 minute. Add the granulated sugar and beat on medium-high speed until very light and fluffy, about 4 minutes more. Add the eggs one at a time, mixing after each addition. Add the sour cream and vanilla and mix on medium speed until incorporated.
- Whisk together the flour, baking powder and salt in a medium bowl. Add to the butter mixture in 2 parts and mix on low speed until just incorporated, scraping down the sides of the bowl. Scrape the batter into the prepared pan, using a rubber spatula to smooth the top into an even layer.
- Bake until golden brown and crackly on the surface and a toothpick inserted into the center of the cake comes out almost clean with just a few crumbs, about 1 hour 30 minutes. Allow the cake to cool in the pan for 20 minutes. Invert onto a cooling rack and cool completely before removing the pan. The cake will contract while it cools, making it easier to remove.
- Sprinkle the cake with confectioners' sugar. Top each slice with fresh berries if using.

- For the crumb topping: Combine the flour, brown sugar, cinnamon and salt in a small bowl and mix to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
- For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
- Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the strawberry jam on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.

- 350F. Coat a tube pan with cooking spray, dust with breadcrumbs. Combine flour, baking powder, baking soda and salt. Place butter and sugar in a large bowl, beat with mixer until light and fluffy. - Preheat oven to 350°; butter an 8- or 9-inch flat-bottomed tube pan; dust with all-purpose flour, invert over the kitchen sink, and tap to remove excess.
- To soften the raisins--place in a steam basket in a medium saucepan and steam for 1 minute over boiling water (do not submerge the raisins or they will absorb too much water).
- Spread them out over several layers of paper towels and dry thoroughly.
- Using a triple sifter, sift together the flour, baking powder, salt, and cinnamon; set aside.
- Cut the butter into 1-inch pieces and place it along with the rinds in the bowl of an electric stand mixer fitted with paddle attachment.
- Soften on low speed.
- Increase speed to med-high and cream until smooth and light in color, about 1 1/2 to 2 minutes.
- Add in sugar, 1 tablespoon at a time, taking 6-8 minutes to blend it in well; scrape the sides of the bowl occasionally.
- Add in eggs, 1 at a time at 1-minute intervals, scraping the sides of the bowl again.
- Blend in the vanilla.
- Decrease mixer speed to low; add the dry ingredients in three additions alternately with the rum in two additions, mixing until incorporated after each addition; mix the batter for 15 seconds longer.
- Remove bowl from mixer and fold in raisins with a rubber spatula.
- Spoon batter into prepared pan; smooth the surface with the back of a tablespoon.
- Center the pan on the rack and bake for 45-50 minutes, or until the cake is golden brown on top and begins to come away from the sides of the pan; or toothpick inserted into the center comes out dry.
- Remove cake from oven; set on a cake rack for 10-15 minutes; invert cake onto a rack and remove the pan.
- Turn cake top side up onto a second cake rack to cool at room temperature.
- Cut a double thickness of cheesecloth to measure approximately 18 x 24 inches.
- Saturate in 1/4 cup dark Jamaican rum; open the rum soaked cheesecloth and stretch flat on an 18-inch square of heavy-duty foil; arrange cake in the center of the cheesecloth.
- Wrap the cloth over the cake by lifting the ends and bringing them to the center.
- Then wrap tightly in foil; place the cake in a plastic bag and seal; let stand at room temperature overnight.
- The following day, remove the foil and unwrap the cake; remoisten the cheesecloth with an additional 1/4 cup rum; rewrap the cake in the cheesecloth and foil and return to the plastic bag to age for 2-3 days or up to 10 days.
- It is not necessary to remoisten the cheesecloth after the second day.
- Wrap leftover cake in the cheesecloth; store in plastic wrap or foil at room temperature for up to 10 days.

- Double Vanilla Pound Cake Instructions: Preheat oven to 350 degrees.
- Pour milk into a saucepan, add the vanilla bean, and scald the milk.
- Let mixture cool to room temperature.
- Remove vanilla bean and set aside.
- Resift the flour with the baking powder and the salt onto a sheet of waxed paper; set aside.
- In a large bowl, cream the butter with an electric mixer on moderately high speed until light, about 3 minutes.
- Add the vanilla sugar in two portions, beating thoroughly after each portion is added.
- Beat in eggs, one at a time, periodically scraping down the sides of the bowl to ensure an even mixture.

RUM POUND CAKE
This recipe is from Paula Deen's magazine called Holiday Baking. This cake looked so good I couldn't wait until the holidays to make it. It was amazing! If you want to try a really nice rum for this cake, if it's available in your area (also good in eggnog) try Captain Morgan's Private Stock. It is a rum with added spices, very nice. I made the glaze with this also. I halved that recipe and it was plenty. The serving size of this depends on how big a slice you cut :) Salt is not listed as an ingredient because I use salted butter but if you use unsalted butter or just want this cake saltier add 1/2 tsp salt.

- Preheat oven to 325 Grease and flour a 10" tube pan Cream butter and sugars until very light and fluffy.
- Add eggs one at a time, beating well after each.

- Rum Glaze Put all in a small heavy pan.
- Let it cook, stirring occasionally til mixed well.
- I let it cook a couple more minutes until it was thickened.
- Pour over top of cake.
