1 cup sour cream
1/2 cup vegetable oil
2 eggs
2 tablespoons poppy seeds
2 tablespoons milk
1 teaspoon vanilla
1/2 teaspoon lemon extract

Steps:

  • Mix flour in bowl with next 4 ingredients.
  • Mix remaining ingredients in another bowl.
  • Stir the wet into the dry just until moistened well.
  • Fill greased muffin cups 1/3 full.
  • Bake at 375* for 15-20 minutes, or until muffins test done.

3/4 cup biscuit/baking mix
1/4 cup sugar
1-1/2 teaspoons poppy seeds
1 large egg
1/3 cup sour cream
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the biscuit mix, sugar and poppy seeds. In another bowl, whisk the egg, sour cream and vanilla; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. , Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

4 egg yolks
1/2 cup sugar
1/2 teaspoon vanilla extract
1 lemon, zested
1/2 lemon, zested
1/4 cup sour cream
1 cup heavy cream
2 tablespoons black poppy seeds
Special equipment: a 24-cup mini muffin tin, 24 mini muffin paper liners

Steps:

  • In a double-boiler or a heatproof bowl set over a saucepan of simmering water, whisk together egg yolks, sugar, vanilla, half the lemon zest, and the lemon juice until well combined. Continue to whisk constantly over very low heat, until the yolk mixture has thickened and becomes pale yellow, about 3 to 4 minutes. Remove from heat. Add the sour cream, mix until just combined, and set aside.
  • In a large bowl, whip the heavy cream with a whisk until soft peaks form. Gently fold whipped cream into egg mixture. Gently stir in poppy seeds. Divide mixture evenly between lined mini muffin cups. If you don't have mini muffin cups, you can use regular sized to get half as many. Freeze for at least 2 hours or until firm.
  • To serve, peel away the paper liners and garnish with remaining lemon zest.

I make these muffins every Christmas and this year I made them for Thanksgiving too - they smell and taste amazing, lots of different flavors going on with a pretty poppy seed streusel on top! Always a big hit! Recipe comes from the Cooking Light 2005 Holiday magazine (the ultimate resource for holiday cooking!!) and I can't believe no one has posted them yet!

3 tablespoons sugar
2 tablespoons flour
1 tablespoon butter, melted
1 teaspoon poppy seed
2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt (optional)
3/4 cup fat-free buttermilk
1/4 cup butter, melted
1 -2 tablespoon orange zest (I use zest of one orange)
1 teaspoon vanilla
1 egg, lightly beaten
1 (8 ounce) container reduced-fat sour cream (don't use fat-free, they don't turn out as well)

Steps:

  • Preheat oven to 375 and prepare muffin tins.
  • Prepare Struesel - combine all ingredients. Set aside.
  • For the muffins, in a large bowl, combine flour, sugar, baking powder, baking soda and salt, if using, until combined. Make a well in the center.
  • In a separate medium bowl, combine buttermilk and remaining muffin ingredients.
  • Pour mixture into well of flour mixture.
  • Stir with a wooden spoon until just combined - will be lumpy.
  • Spoon batter into muffin cups and sprinkle evenly with poppy seed struesel.
  • Bake for 18-20 minutes until golden brown.
  • Remove to wire racks to cool immediately.
  • These freeze well. Place on counter several hours until thawed or, if eating directly from freezer, reheat in microwave for 15 seconds until warm (not hot).

These are some of our favorites, and I like to make them and take them to my friends as gifts, early on a Saturday or Sunday morning. These are among my friend's and family's favorites. I usually double the recipe, as when I am taking some to someone else, my family gets more than a little excited to see them ALL go out the door. I may get lynched~! Enjoy!

Steps:

  • Preheat oven to 400 degrees. Combine first 5 ingredients in a bowl. Make a well in the center of the mixture.
  • In a separate bowl, combine sour cream and remaining 3 ingredients. Add to the dry ingredients, stirring just until moistened. Spoon batter into greased muffin tins; filling 2/3 to 3/4 full (depending on whether you want them to raise barely to the top or to have a dome on top.
  • Bake for 18-20 minutes or until lightly browned. Remove from pans immediately. Cool on wire rack.

3 eggs
2 ½ cups white sugar
1 ⅛ cups vegetable oil
1 ½ cups milk
1 ½ teaspoons salt
1 ½ teaspoons baking powder
1 ½ tablespoons poppy seeds
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
3 cups all-purpose flour
¾ cup white sugar
¼ cup orange juice
½ teaspoon vanilla extract
½ teaspoon almond extract
2 teaspoons butter, melted

Steps:

  • Beat together the eggs, 2 1/2 cups white sugar and vegetable oil. Add in milk, salt, baking powder, poppy seeds, vanilla, almond flavoring, and flour. Mix well.
  • Bake in paper lined muffin cups (filled 3/4 full or 3 small greased loaf pans) at 350 degrees F (175 degrees C) for 15-20 minutes for muffins and 50-60 minutes for loaves. The tops should be browned and a toothpick inserted in the center should come out clean.
  • Remove muffins as soon as you can while still warm/hot and dunk tops into glaze. Turn right side up and cool on a cookie rack. With loaves just pour the glaze evenly over the three loaves while still in pans. Let cool to a warm temp. and remove from pans. Yes, it is a little messy but it is really good.
  • To Make Glaze: In a saucepan over low heat, combine 3/4 cup sugar, orange juice, 1/2 teaspoon vanilla, 1/2 teaspoon almond flavoring and 2 teaspoons melted butter. Warm in pan until the sugar is dissolved. Pour over loaf pans or dunk muffin tops into glaze when cooled to room temperature. (Omit the glaze altogether if you don't like the mess.)

2 teaspoons poppy seeds
½ teaspoon baking powder

⅔ cup sour cream
¾ teaspoon vanilla extract
½ teaspoon lemon peel
¼ teaspoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • Stir flour, poppy seeds, baking powder, and baking soda together in a bowl.
  • Cream the sugar and butter together in a large bowl. Add the whole egg, then the egg yolk, allowing each to blend into the butter mixture before adding the next.
  • Stir sour cream, vanilla, lemon peel, and lemon extract into the sugar mixture until well combined. Add flour mixture to sour cream mixture and stir until just moistened. Spoon batter into prepared muffin cups, filling each cup about 3/4 full.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 15 minutes. Cool for 5 minutes before removing to wire racks.

  • Preheat oven to 350°F. Butter twenty-four 1/3-cup muffin cups. Dust with flour. Sift cake flour, baking soda and baking powder into medium bowl. Beat 2/3 cup sugar and butter in large bowl to blend. Beat in vanilla extract. Add egg yolks 1 at a time, beating well after each addition. Beat mixture until light, fluffy and pale yellow, about 3 minutes. Beat in sour cream and poppy seeds. Mix in dry ingredients.
