- Preheat the oven to 400 degrees F. Spray a baking sheet with cooking spray.
- Put the flour, chives, baking powder and salt in a mixing bowl and stir to combine. Whisk together the sour cream, evaporated milk and butter in a small mixing bowl. Pour the wet into the dry and mix using a light hand just until combined.
- Lightly flour a bread board, turn the dough out onto the board and knead 6 to 8 times. Pat into a 3/4-inch-thick round. Dip a 2-inch biscuit cutter in flour and cut out rounds from the dough. Place on the prepared baking sheet and brush the tops with more melted butter. Bake until golden brown, 20 to 22 minutes. Serve with fresh butter and sliced ham.

- 1. In medium-sized bowl, whisk first 4 ingredients til well mixed.
- 2. Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
- 3. Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
- 4. Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.

- Place a rack in middle of oven; preheat to 425°F. Whisk salt, pepper, baking powder, baking soda, sugar, and 2½ cups flour in a large bowl to combine. Add chilled butter and toss to coat. Using your hands, work butter into dry ingredients until there are lots of flat pieces and pea-size bits. Add scallions and toss to evenly distribute.
- Create a well in the center of mixture and add 1¼ cups sour cream into the center. Using a fork and working in circles, mix until large shaggy clumps form. Turn dough out onto a lightly floured surface and knead once or twice until it comes together (flour your hands if needed). If there are any loose bits, add them to center of dough and knead once more to incorporate. Pat dough into an 8x4" rectangle about 1" thick.
- Working from a short side, fold dough in thirds as you would a letter. It doesn't need to overlap perfectly. Pat dough into another 8x4" rectangle, then fold dough in thirds like a letter one more time. Pat dough back into an 8x4" rectangle and cut in half lengthwise. Cut each half crosswise into 4 squares for a total of 8 biscuits.
- Transfer biscuits to a parchment-lined baking sheet. Brush tops gently with melted butter; sprinkle with sea salt. Bake biscuits until golden brown, 18-22 minutes. Serve warm with sour cream (or more butter!) for slathering.

- Gather the ingredients.
- Grease a 9 x 9-inch square pan with nonstick cooking spray or softened butter. Line the bottom with parchment paper
- In the bowl of a food processor fitted with a metal blade, process the all-purpose flour, baking powder, baking soda, salt, and pepper.
- Add the cold butter and chives to the bowl, then pulse until the mixture resembles coarse meal.
- Transfer the mixture to a large bowl. Add the sour cream, then use a wooden spoon to combine until a shaggy dough forms. (This will take awhile. You can use your hands to knead the dough together in the bowl, if desired.)
- Transfer the dough to a work surface (no need to flour it, but if you find the dough is too sticky, a little flour will help). Knead the dough a few times until it is no longer crumbly and the dry bits are fully integrated. It may seem like this will never happen, but it will. Be patient!
- Gently pat or roll the dough into a rectangle at least 1 1/2 inches thick to ensure a tall biscuit.
- Using a 3-inch biscuit or cookie cutter dipped in flour, cut out the biscuits from the dough. Place in the prepared pan so they are touching (this helps them rise).
- Collect any scraps and re-roll, then cut as needed. (Note, the biscuits made from scraps will not be as flaky and tender.)
- Tightly wrap the pan in plastic wrap and freeze the biscuits for at least 2 hours. Preheat the oven to 400 F.
- To make the egg wash, whisk the egg and salt in a small bowl
- Once the biscuits are frozen, brush the wash over the tops of each.
- Bake for about 30 to 35 minutes or until the biscuits are golden brown on top and lightly browned on the bottom, rotating the pan halfway through. Let the biscuits sit 1 or 2 minutes in the pan until they are easy to handle.
- Biscuits are best eaten the day they are made (slathered in salted butter), but can be stored, tightly wrapped in plastic wrap, at room temperature for up to three days.

SOUR CREAM BISCUITS

- Preheat Oven to 425 degrees.
- Cut butter into 6-8 slices and place in a glass 9×13 baking dish. Melt Butter in Microwave for 30-60 seconds. Set pan aside.
- In a large mixing bowl measure out 4 cups Bisquick Mix
- Add 1 cup Sour Cream. I find it easiest to measure out the sour cream and then dollop small spoonfuls into the Bisquick. This helps with evenly distributing the sour cream.
- Add 1 cup Lemon Lime Soda. I prefer Sprite because of the flavor but choose what you wish.
- With a large spoon, sitr the mixture. Stir until all ingredients are combined. Dough will be very sticky and might seem clumpy too. It's PERFECT.
- Sprinkle about 1/4 cup flour on clean surface and place dough on top.
- Using your hands and fingers "Pat" out the dough. Some extra flour on top will help if the dough is too sticky. Pat dough to 1 inch thick
- Use a Circle Cutter and cut out biscuits. You can also use a knife and cut into squares. They all taste the same.
- Place biscuits into 9×13 pan with melted butter. I typically can get 15-18 biscuits depending on size.
- Bake at 425 for 12-15 minutes

SOUTHERN SOUR CREAM BISCUITS

- Gather the ingredients. Pre-heat oven to 425 F.
- In a mixing bowl, whisk together the flour(s), salt, baking powder, and baking soda.
- Cut in the pieces of butter and shortening with a pastry blender, or two forks, until pieces of fat are small and mixture resembles coarse crumbs.
- Make a well in the center of the dry mixture and add the sour cream and 1/4 cup of milk.
- Stir with a wooden spoon or hands until mixture begins to hold together.
- If it seems too dry, add a little more milk, about 1 teaspoon at a time.
- When it is holding together but still looking somewhat crumbly, turn out onto a floured surface.
- Knead gently about 8 to 10 times, then pat out to form a circle about 3/4- to 1-inch thick.
- Cut out biscuits with a round 2- to 3-inch biscuit cutter and arrange on an ungreased cookie sheet.
- Bake for 12 to 15 minutes, until nicely browned on top and bottom.
