Dough for single-crust pie
2 large eggs
1 cup sour cream
1 cup sugar
6 tablespoons all-purpose flour, divided
1 teaspoon vanilla extract
1/4 teaspoon salt
3 cups chopped peeled tart apples
1/4 cup packed brown sugar
3 tablespoons cold butter

Steps:

  • Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., In a large bowl, beat eggs. Add sour cream. Stir in sugar, 2 tablespoons flour, vanilla and salt; mix well. Gently stir in apples. Pour into crust. Bake 15 minutes. , Meanwhile, combine brown sugar and remaining 4 tablespoons flour; cut in butter until crumbly. Sprinkle over pie. Bake until filling is set, 20-25 minutes. Cool completely on a wire rack. Refrigerate leftovers.

crisp cooking apples, like Braeburn or Granny Smith, peeled and sliced
sugar
tablespoons, plus 1/2 cup all-purpose flour
ground cinnamon
salt
ground nutmeg
rolled oats
packed brown sugar
baking soda
butter, melted
Daisy Sour Cream

Steps:

  • Heat the oven to 375 degrees. Spray a 2-quart shallow baking dish or casserole with cooking spray.
  • In large bowl, toss the apples with sugar, 2 tablespoons of flour, cinnamon, salt, and nutmeg. Spoon the mixture into the baking dish.
  • In a medium bowl, combine rolled oats, ½ cup flour, brown sugar, baking soda, butter, and sour cream. Mix until the dry ingredients are moistened. Crumble over the apples.
  • Bake for 30 to 40 minutes or until the topping is deep golden brown and the apples are tender.
  • Serve warm with whipping cream or ice cream.

1 1/4 cups sour cream
3/4 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
2 teaspoons vanilla
1 egg
6 cups apples
1/2 cup all-purpose flour
1/2 cup walnuts
1/4 cup granulated sugar
1/4 cup light brown sugar
1/2 teaspoon ground cinnamon
1 dash salt
3 tablespoons butter or 3 tablespoons margarine

Steps:

  • eat oven to 400 degrees F. Unroll pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie. In large bowl, beat sour cream, granulated sugar, flour, salt, vanilla and egg with wire whisk until well blended; stir in apples. Pour into crust-lined pie plate.
  • Bake 15 minutes. Reduce oven temperature to 350 degrees F; bake 30 minutes longer.
  • Meanwhile, in medium bowl, mix all topping ingredients except butter. With pastry blender or fork, cut in butter until mixture looks like coarse crumbs; refrigerate until ready to use.
  • Sprinkle topping over pie. Bake 20 to 25 minutes longer or until topping is golden brown. Cool completely on cooling rack, about 2 hours. Cover and refrigerate any remaining pie.

2 Tablespoons flour

3/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/4 cup apple cider
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
2 pounds Granny Smith apples
2 pounds Honeycrisp apples
1 1/2 cups all-purpose flour (see Cook's Note)
1 cup old-fashioned rolled oats
2/3 cup firmly packed light brown sugar
1/2 cup pecans, coarsely chopped
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cubed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.
