2 1/2 cups water
2 cups frozen mixed vegetables
1 (7.25-ounce) package macaroni & cheese mix
1 teaspoon salt
1/2 teaspoon black pepper
3 cups milk
2 cups shredded sharp Cheddar cheese

Steps:

  • In a soup pot over medium-high heat, bring water to a boil. Stir in mixed vegetables, macaroni from package (reserving cheese packet), salt, and pepper. Return to a boil and cook 5 minutes, stirring occasionally.
  • Add remaining ingredients, including reserved cheese packet. Reduce heat to low and simmer 8 to 10 minutes, or until slightly thickened and creamy, stirring occasionally.

3 Tbsp unsalted butter
3 leeks, chopped (white parts only)
3 clove garlic, minced
1 tsp mustard powder
2 tsp Worcestershire sauce
4 Tbsp flour
4 cup vegetable stock
3 cup cooked macaroni and cheese
½ cup 35% cream
salt and pepper, to taste
¼ cup breadcrumbs, toasted
1 cup white Cheddar, grated

Steps:

  • Melt butter in pot over medium heat. Add leeks and garlic. Cook until softened. Add mustard powder, Worcestershire sauce, and flour, stir to incorporate.
  • Add vegetable stock in slow steady stream stirring vigorously. Add macaroni and cheese. Cook on medium low for 20 minutes stirring occasionally. Remove from heat and add cream and adjust seasonings.
  • To serve, ladle into bowls and top with toasted bread crumbs and grated cheddar.

This mac and cheese soup recipe is the soup version of the comfort food classic! It's quick and easy to make with everyday ingredients.

1/4 cup butter
1/2 medium onion (chopped)
2 sticks celery (chopped)
2 cloves garlic (minced)
6 tablespoons flour
4 cups chicken broth (or veggie broth)
1 cup heavy/whipping cream
1 teaspoon Worcestershire sauce
1/4 teaspoon salt (or to taste)
1 cup uncooked elbow macaroni
1/2 cup water (if needed)
2 cups sharp cheddar cheese (shredded )
Pepper (optional, to taste)

Steps:

  • Add the butter, onion, and celery to a pot and sauté for 4-5 minutes.
  • Stir in the garlic and flour. Cook for about 2 minutes, breaking it up with your spoon/stirring it as you go along to cook the raw flour taste out.
  • Slowly whisk in the chicken broth until all the flour has dissolved/there's no lumps.
  • Stir in the cream, Worcestershire sauce, and salt. Increase the heat to high and bring the soup to a boil.
  • Stir in the pasta, then reduce the heat so it's simmering but not boiling rapidly (medium-low heat works with my cast iron pot & gas stove). Cover the pot with the lid slightly ajar.
  • Let the soup simmer for about 15-20 minutes or until the pasta has cooked, stirring fairly often so it doesn't stick to the bottom of the pot. If the soup looks like it's becoming too thick, add the 1/2 cup of water (or even more if needed).
  • Turn the stove off, and stir in the cheddar gradually.
  • Season with pepper and extra salt if needed.

3 quarts water
1 pound shrimp shells
2 teaspoons salt
1/4 cup chive oil, recipe follows
1 lemon, quartered
4 bay leaves
1 tablespoon black peppercorns
2 teaspoons crushed red peppercorns
1 teaspoon paprika
1 teaspoon smoked paprika
6 cloves garlic
6 sprigs thyme
1 bunch flat-leaf parsley
1/2 pound chives, chopped, plus more for garnish
1 cup white wine
1 cup heavy cream
1 teaspoon crushed red pepper
1/2 cup grated Kentucky tomme cheese
1/2 pint sweet 100 tomatoes
1 cup oil
1/3 pound fresh chives

Steps:

  • For the stock: Fill a large stockpot with 3 quarts of water and boil on high, adding all of your ingredients. Once it is boiling, continue to boil on medium high and add your white wine. Once your stock has melded flavors and is successfully permeated, it is ready, approximately 25 to 30 minutes. You can cook it longer for more distinct flavor.
  • Once your stock is ready transfer through a fine meshed sieve. Use about 4 cups for the soup. Add 1 cup of heavy cream and some crushed red pepper flakes. Simmer gently for about 10 minutes and add salt and pepper, to taste.
  • To serve: put some grated tomme cheese in a soup bowl, along with a few sweet 100 tomatoes. Ladle soup over the cheese and tomatoes to melt. Garnish with chives and serve.
  • Simply blend 1 cup of oil and 1/3 pound chives in a blender until smooth.

FRENCH ONION MACARONI AND CHEESE SOUP

During our first test in the Kitchens, our tasters thought this mash-up soup was just a big bowl of macaroni and cheese but the French onion soup hidden underneath the golden cheesy topping was a warm and welcome surprise. Make your soup ahead; once cooled, it can be frozen for up to 1 month.

4 tablespoons (1/2 stick) unsalted butter
4 medium yellow onions, thinly sliced (about 14 cups)
Kosher salt and freshly ground black pepper
2 bay leaves
2 to 3 sprigs fresh thyme
1 cup dry white wine
4 cups low-sodium beef broth
4 ounces elbow macaroni (1 cup)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
3/4 cup milk
Kosher salt and freshly ground black pepper
1 3/4 cups shredded gruyere
1 3/4 cups shredded sharp yellow Cheddar
2 tablespoons panko breadcrumbs

Steps:

  • For the soup: Melt the butter in a large Dutch oven or pot over medium heat. Add half of the onions and season with 1/4 teaspoon salt and a few grinds of pepper. Top with the remaining onions and season with 1/4 teaspoon salt and a few more grinds of pepper. Add the bay leaves and thyme. Cook, stirring occasionally, until all of the liquid evaporates the onions are very soft and just begin to turn golden, 45 minutes to 1 hour.
  • Add the white wine, bring to a simmer and cook, stirring, until almost completely evaporated, about 6 minutes. Pour in the beef broth and 1 cup water, bring to a high simmer and cook until the soup has reduced to 5 cups, 30 to 40 minutes. Season with salt and a few grinds of pepper. Remove the bay leaves and thyme. Either keep warm on a low burner or cool completely, refrigerate and reheat later. (The soup can be made and refrigerated up to 2 days in advance or frozen for up to 1 month).
  • For the mac 'n' cheese: Bring a medium pot of water to a boil, add the macaroni and cook according to package instructions. Drain, reserving 1/2 cup of the cooking liquid.
  • Melt the butter in a medium saucepan over medium heat. Whisk in the flour until smooth, about 2 minutes. Gradually whisk in the milk and reserved pasta water and stir until thick, about 4 minutes. Stir in 1 cup each of the cheeses, 1/2 teaspoon salt and a few grinds of pepper; stir until melted and smooth. Remove from the heat and stir in the cooked pasta until coated. Let cool slightly, stirring frequently.
  • Preheat the oven to broil. Place the soup crocks on a rimmed baking sheet and divide the hot soup among the crocks, filling about three-quarters of the way. Top each with a quarter of the mac 'n' cheese (some will sink into the soup, which is fine). Evenly sprinkle with the remaining cheeses and the panko. Broil until the cheese is melted and golden brown in spots, 2 to 3 minutes (the soup will bubble and some may spill out). Serve hot.

2 plum tomatoes, sliced 1/2 inch thick
4 1/2-inch-thick slices baguette
Freshly ground pepper
3 shallots
1 carrot, cut into 1-inch pieces
1 stalk celery, cut into 1-inch pieces
1/4 cup all-purpose flour
3 3/4 cups fat-free low-sodium chicken broth
1 1/4 cups 2% milk
6 ounces shredded cheddar cheese (about 1 1/2 cups)
1/4 cup grated parmesan cheese

Steps:

  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Bring a medium saucepan of salted water to a boil. Add the macaroni and cook as the label directs; drain.
  • Mist a baking sheet with cooking spray and arrange the tomato and baguette slices on it in a single layer; season with salt and pepper. Bake until the bread is golden brown, about 7 minutes.
  • Mince the shallots, carrot and celery in a food processor. Mist a saucepan with cooking spray. Add the vegetables and cook over medium-high heat until softened, 4 to 5 minutes. Add the flour and cook, stirring, 2 minutes. Gradually stir in the broth and bring to a boil; cook, stirring, until thickened, 6 to 7 minutes. Remove from the heat.
  • Add the milk, cheeses and macaroni and stir until the cheeses melt. Season with pepper. Top the toasts with tomatoes; serve on the soup.

1 onion, diced

2 cups chicken stock or 2 cups vegetable broth

1 pinch nutmeg

3 cups cheddar cheese, shredded
cayenne

Steps:

  • Cook the bacon in a pan over medium heat and set aside on paper towels to drain, reserving 2 tablespoons of the grease in the pan.
  • Add the onion, carrot, celery and jalapeno and cook until tender, about 10-15 minutes.
  • Add the garlic and cook until fragrant, about a minute.
  • Mix in the flour and let it cook for 2-3 minutes.
  • Add the broth, beer, nutmeg, bacon and macaroni and let cook until the macaroni is al-dente, about 7-8 minutes.

1-1/2 cups sliced celery
2 large carrots, shredded

A friend brought a big pan of this to a potluck and I HAD to have the recipe to make for my family. It is so yummy and creamy that it's hard to stop eating. We like it as a main dish with a salad, but you could serve it as a scrumptious side dish. These are directions for the full batch which will serve a crowd. It halves easily.

1 lb elbow macaroni
2 (10 3/4 ounce) cans cheddar cheese soup
2 (12 ounce) cans evaporated milk
5/8 cup butter (1 1/4 sticks)
1 teaspoon salt
1 teaspoon pepper
6 cups shredded cheddar cheese (medium or sharp, or a combination)
dried parsley (for sprinkling on top)

Steps:

  • Preheat oven to 350.
  • Cook pasta according to pasta directions just until done - you don't want it mushy, because it will absorb a little of the cheesy liquid in the oven.
  • Combine soup, evaporated milk, butter, salt, and pepper in a large microwaveable bowl. Cover with plastic wrap, leaving a small vent, and cook for 6-7 minutes until the butter is melted and the mixture is warm-to-hot throughout. (If making a half batch, 4 minutes in the microwave should do it).
  • In a large baking dish (minimum 9x13, smaller if halving the recipe), spread 1/3 of the cooked noodles. Top with 1/3 of the sauce. Sprinkle with 1/3 of the cheddar.
  • Repeat layers twice, ending with the cheese.
  • Bake for 40-45 minutes.
  • When it comes out of the oven, sprinkle with a little dried parsley if desired. This gives it visual interest, and you can also pretend it's healthier.
  • Let stand for 5 minutes before serving.
